Spring Leek and Mushroom Gratin is the ultimate spring comfort food dish. Serve alongside your protein of choice for a lovely brunch or dinner.

Spring Leek and Mushroom Gratin

leeks

Tbsp. olive oil

shiitake mushrooms

kosher salt (divided)

unsalted butter

garlic

Tbsp. flour

½ cups Horizon Organic Grass Fed Vitamin D Milk

thyme leaves (plus more for garnish)

tsp. black pepper

lemon juice

breadcrumbs

Parmesan cheese

Preheat oven to 375°F. Bring a large pot of water to a boil and fill a bowl with ice water. Add leeks to boiling water and cook for 3 minutes. Shock the leeks by transferring to the ice-water bath. Drain and slice leeks in half lengthwise.

Heat oil in an oven-safe cast-iron skillet or cocotte over medium heat. Add mushrooms and cook 3 to 5 minutes, stirring occasionally, until golden and slightly tender. Season with 1/4 tsp. salt and transfer mushrooms to a bowl.

Add butter and garlic to pan; cook 1 minute. Sprinkle in flour and whisk continuously for 30 seconds. Gradually stream in milk, whisking constantly, until combined. Increase heat to bring mixture to a simmer; cook 2 to 3 minutes, until slightly thickened. Add mushrooms back to skillet, along with thyme, remaining 3/4 tsp. salt, black pepper, and 1 tsp. lemon juice. Lay sliced leeks across the top of gratin, gently pressing to slightly submerge in milk mixture. Sprinkle breadcrumbs and Parmesan cheese overtop. Transfer to oven and bake for 35 to 40 minutes, until golden and bubbly.

Squeeze remaining 1 tsp. lemon juice overtop and garnish with additional fresh thyme before serving.

Tomato Zucchini Gratin

(3 oz) bread

olive oil, divided

thyme,

oregano,

salt

pepper

red pepper flakes (optional)

½ oz (3/4 cup) Parmigiano Reggiano, grated

lbs tomatoes, sliced ½ inch thick (4-5 medium tomatoes)

lb zucchini, sliced ¼ inch thick (2 medium zucchini)

salt and pepper

red wine vinegar

garlic, minced

shallot, diced

Basil leaves

Hand tear bread to form coarse crumbs (or quickly pulse in food processor).  Place on a sheet pan and bake at 400 degrees for 3-5 minutes, until dried out.

Toss toasted bread, 2 tablespoons of olive oil,  thyme, oregano, salt, black pepper, red pepper flakes, and parmesan together in a bowl.  Set aside.

Alternate tomato and zucchini slices in a shallow baking pan.

Whisk together remaining olive oil, red wine vinegar, minced garlic and shallot.  Pour over tomatoes and squash.

Bake at 400 for 15-20 minutes or until bread crumbs are toasty.   

Tear basil leaves on top and serve warm or at room temperature.

Cheesy Broccoli and Cauliflower Gratin Recipe

whole wheat

butter (softened)

black pepper

cauliflower (about 1½ pounds (**SEE NOTE))

broccoli (about 1 pound (**SEE NOTE))

yellow onion (diced (about 2 tablespoons))

garlic (minced)

all-purpose flour

heavy cream

chicken broth

nutmeg

dry mustard

red pepper flakes

Cheddar cheese

Heat oven to 425°F and set the oven rack to middle position.

Spray a 2-quart (11x7) casserole dish with nonstick cooking spray.

Tear each slice of bread into 4 pieces.

Place the bread, butter, salt, pepper and herbs in a food processor fitted with the metal blade. Process until coarse crumbs form, about ten 1-second pulses. Set aside.

For the Bread Topping:

Trim the cauliflower and broccoli into ¾-inch florets. If using broccoli stalks, use only ½-inch of stalk next to the floret.

Fill a Dutch oven or stockpot 2/3rds full with water. Add 1-tablespoon salt and bring the water to a boil. Stir the boiling water and add the cauliflower and broccoli. Cook until the vegetables have a slight bite, 3-4 minutes and drain.

Heat a large skillet over medium heat. Add butter and cook just until foaming subsides.

Add onion and cook until softened and translucent, 2-3 minutes.

Add garlic and cook 30 seconds.

Sprinkle the flour over the onion/garlic mixture; stir and cook about 1 minute.

Reduce the heat to medium-low and whisk in the cream and broth (or wine). While stirring, bring to a boil.

Reduce heat to low and add nutmeg, salt, red pepper flakes, dry mustard, and black pepper. Cook (and stir) just until mixture has thickened a little.

Add both cheeses and stir until cheese is melted.

Remove from the heat and add the cauliflower and broccoli; stir gently to coat the vegetables

Transfer cauliflower/broccoli mixture to the prepared dish and sprinkle with the breadcrumb topping.

Bake at 425°F for 15-20 minutes or until the sauce bubbles around the edges and the top is golden brown. Serve immediately.

Doria is a Japanese-invented gratin. Pour béchamel sauce with prawns over the butter rice, then brown the surface with cheese on top. Prawn Doria (Japanese Rice Gratin)

tbsp grated parmesan cheese

butter

onion ((medium) finely diced)

/ 2.5 ounces mushrooms (thinly sliced (note 2))

tbsp flour

milk

chicken stock ((note 3))

white pepper ((or black pepper))

cooked rice ((loosely packed 2 cups))

/ 1.1 ounces onion (finely diced)

Salt and pepper

Melt the butter in a frying pan over medium heat.

Add carrot and onion, sauté for a minute or two until the onion becomes semi-transparent.

Add the rice and mix, breaking up the lumps. Season with salt and pepper.

When the rice grains are well coated in butter and the vegetables are mixed evenly, transfer the butter rice to two individual gratin baking dishes.

Butter Rice

Heat the frying pan used for the butter rice over medium high heat. Add a small amount of butter if the pan is too dry.

Add prawns and cook for a minute, then turn them over and cook further 1 minute.

Melt the butter in a saucepan over medium heat.

Add onion and mushrooms, sauté until the onion becomes transparent.

Reduce the heat to low, add flour and mix well for a couple of minutes.

Add about 1/3 of milk to the pan and mix well to incorporate until lump free (you may need to whisk it). Add the remaining milk, prawn broth, chicken stock cube, salt and pepper.

Increase the heat to medium. As the sauce heats up, it thickens. Stir regularly at first, then constantly as it thickens.

Once the Sauce is thick enough (note 5), transfer the prawns to the béchamel sauce. Mix and remove from the stove immediately.

Béchamel Sauce

Preheat broiler (note 6).

Pour the béchamel sauce over the butter rice in the baking dishes, covering the rice completely.

Sprinkle parmesan cheese over the sauce.

Place the baking dishes on the rack not too close to the heat (about 10cm / 4” away). Bake for a few minutes or until the sauce starts bubbling around the edges and the top becomes golden. Serve immediately. (note 6)
