salmon

dill, coarsely chopped (1 cup)

(130 grams) coarse sea salt

(75 grams) white sugar

tbsp (15 grams) white peppercorns, crushed

Crusty bread, to serve

dill sprigs (1 bunch)

torn flat-leaf parsley leaves (1 bunch)

chives,

chervil sprigs (1 bunch)

French or Russian tarragon sprigs (1 bunch)

salad burnet leaves (1 punnet)

coriander seeds, crushed

(60 milliliters) lemon juice

(60 milliliters) extra virgin olive oil

Russian tarragon flowers, optional, to serve

Gravlax de saumon, sauce à l'aneth

Filet de saumon de 1,2 kg

400 g Sucre en poudre

cuil. à soupe Moutarde

cuil. à soupe Miel

cl Crème liquide

cuil. à soupe Huile de pépins de raisin

cuil. à soupe Vinaigre blanc

Bouquets d’aneth

Poivre du moulin

0.5 cuil. à café Grains de coriandre

Deux jours avant, retirez la peau et les arêtes du saumon à la pince à épiler. Dans une jatte, mélangez le sucre et 20 g de sel. Placez le saumon dans un plat creux et recouvrezle du mélange sucre-sel en massant bien le poisson sur toute sa surface. Filmez au contact et placez au réfrigérateur pour 48 h, en prenant soin de retourner le saumon et de le masser toutes les 8 h : au cours de la macération, le saumon va rendre beaucoup d’eau.

Préparez la sauce : dans un bol, émulsionnez au fouet la moutarde, le miel, l’huile, le vinaigre, une pincée de sel, 2 tours de moulin à poivre et l’aneth ciselé. Incorporez la crème et versez dans un récipient hermétique. Placez au réfrigérateur jusqu’au service.

La jour même, égouttez le saumon et tranchez-le de biais. Parsemez de graines de coriandre, poivrez au moulin et décorez de pluches d’aneth. Servez avec la sauce émulsionnée.

lb Salmon filet (Skin on)

Bunch Dill (Coarsely, Chopped)

Salt

Vegetable oil

Sugar

Tablespoon White wine vinegar

White pepper

Tablespoon Mustard

Tablespoons Dill (finely chopped)

For the Salmon Scrape the skin well and remove all bones (If any)Mix together the salt, sugar and pepper. Sprinkle half the mixture in the bottom of a roasting pan lined with plastic wrap (enough to tightly wrap the fish) Then sprinkle half the lemon zest and 1/2 the chopped dill.&nbsp; Place fish skin side down in pan. Repeat the process on the flesh side of the fish.&nbsp; Wrap up the fish,&nbsp; place a brick or heavy cans on top of the fish.Place in refrigerator for 3 days.&nbsp; Flip the fish over once each day. There will be a lot of liquid in the pan this is normal.After three days, scrape the seasoning off both sides of the fish.Cut the salmon into very thin slices and serve with the mustard sauce

In a blender or processor, add salt to the egg yolk and blend.&nbsp; Slowly pour in the oil while slowly blending until the sauce is a consistency like mayonnaise. Add in the sugar, vinegar, pepper and mustard and blend well.Remove and place in air tight container after stirring in the freshly chopped dill. The sauce will keep for about a week in the refrigerator. Serve alongside gravlax.

For the Mustard Sauce

Gravlax de saumon

600 g de saumon (coeur de filet)

d'aneth

graines de Dill et de coriandre ou poivre de Sichuan

200 g de gros sel

200 g de sucre

mélange de poivre noir, coriandre et baies roses

Commencer par préparer les ingrédients et le matériel. Écaillez la peau du saumon et rincer à l'eau claire.

Théoriquement le coeur de filet de saumon est épais et ne présente pas ou peu d'arêtes. Vérifier, on ne sait jamais et ôter les arêtes du filet de saumon si besoin.

Mélangez à parts égales gros sel et sucre.

Ajoutez les épices et l'aneth grossièrement coupée.

Posez quelques tiges d'aneth sur le coté chair du saumon.

Placez le filet côté chair directement sur le mélange en veillant à ce que les côtés soient aussi au contact.

Posez une 2ème plaque sur le poisson avec un poids quelconque (ici des boites de conserve) pour maintenir le filet bien plaqué dans le mélange.

Oubliez le filet de saumon au froid positif pendant 24h00. L'idéal est le dessus du bac à légumes de votre réfrigérateur.

Le lendemain, extraire le filet du mélange, ôtez les tiges d'aneth et rincez sous l'eau claire sans tremper puis éponger avec du papier absorbant.

Poivrez, épicez, selon vos goûts. Ici poivre 5 baies et aneth ciselé. A ce stade vous pouvez le consommer tout de suite ou le laisser sécher à l'air, protégé d'un torchon, au froid pendant une semaine.

Tranchez fin juste avant le service et servez tel quel avec citron ou marinade citron / huile. Pour ma part, je l'ai servi nature sur pain de seigle beurré avec une goutte de citron.

These gravlax &amp; dill yogurt crostini’s are so delicious! Homemade gravlax (it’s easier than you’d think!), on toasted crostini’s with a dill yogurt spread is just epic!

Gravlax and Dill Yogurt Crostini

sushi grade salmon

salt

sugar

peppercorns

fennel seeds

orange

lemon

bundle of dill ((about 1 cup))

yogurt (I love skyr yogurt

dill,

garlic cloves, grated

salt and pepper

olive oil

Serve on toasted rye bread/bread/baguette

Make your gravlax. In a bowl, mix your salt, sugar, Himalayan salt, peppercorns, fennel seeds, orange and lemon zest with your dill (roughly broken apart), mix well.

In a pan or tray, place 1/2 of your curing salt mixture on the bottom, then place your salmon (skin side down) on the mixture, top the other 1/2 of the mixture over the top of the salmon, covering entirely.

Cover the gravlax with plastic wrap and weigh down with cans/bottles. Place in the fridge overnight and up to 3 days.

Remove from the plastic wrap and rinse everything off of the salmon. Thinly slice.

Make your dill yogurt spread. In a bowl, mix yogurt, minced dill, lemon juice, garlic, olive oil and salt and pepper.

Slice and toast your bread of choice into bite sized crostini’s.

Assemble! Spread on your dill yogurt, then your sliced gravlax, top with freshly cracked pepper and a sprig of dill. Serve!
