Start by filleting the chicken breasts. Lay each chicken breast flat on a cutting board, use your knife in a sawing motion to cut through the chicken so you are left with two chicken cutlets.

Place the chicken into a ziplock bag or dish and add the chicken marinade ingredients; 1 tbsp olive oil, juice of half a lemon, 1 tsp oregano, 1/2 tsp marjoram, 1/2 tsp greek seasoning, 1/4 tsp dried basil, 1/4 tsp garlic powder and 1/8 tsp pepper. Mix everything together.

To make the tzatziki stir together the greek yogurt with the grated English cucumber (only 1/4 of the cucumber), lemon juice, salt, pepper, minced garlic, dried dill and olive oil. Place in the fridge until the dinner is ready to serve.

Boil the orzo pasta per package instruction, or until the texture is to your preference. Orzo can become a bit sticky once you drain the water and it sits, so you may need to rinse it if this happens.

Heat a sauté pan over medium/high heat. Once the pan is hot, drizzle some olive oil in the pan and lay the chicken down. Flip once the first side is golden then reduce the heat to medium. Continue cooking until the chicken is no longer pink in the center. Remove the chicken from the sauté pan, wait 10 minutes then cut into pieces.

To serve, add the orzo in the bottom of a bowl, top with the chicken, cucumbers, tomatoes and onion. Dollop on some tzatziki and sprinkle on feta cheese. Optionally serve with lemon wedges.

Gyros are one of my favorite Greek foods. Flavor packed meat, sliced thin and pan fried until crispy. Wrapped in a pita loaded with tzatziki, cucumber, red onion and feta cheese! You might think that you need fancy equipment to make them, but trust me you don’t. This beef and lamb gyro meat recipe is aromatic, juicy on the inside, and crispy on the outside. It’s perfect for homemade gyro wraps.

Greek Gyro

ground beef (medium

lbs lamb

onion

garlic

thyme

tsp rosemary (dried, crushed)

tsp marjoram (dried)

tsp cumin

tsp salt

tsp black pepper

Oil (for cooking)

Pitas

Lettuce (sliced)

Tzatziki

Tomatoes (sliced)

Red onions (sliced)

Feta cheese (crumbled)

French Fries (optional)

Place onion and garlic in a food processor or blender. Puree until smooth.

In a stand mixer, mix the ground beef and lamb with the pureed onion, garlic and all the spices. Mix until the meat is a paste like consistency. Or mix by hand in a large bowl.

Optional: refrigerate the meat for 2 hours or up to 24 hours to marinate.

Preheat oven to 325°F

Line a baking tray with foil.

Shape the meat into a log and throw the meat down onto a kitchen counter 2 – 3 times to release any air. This keeps the meat compact while baking so it will not crumble when sliced. Optional: or shape meat into a loaf pan and bake like a regular shaped meatloaf. Cover the loaf pan with foil. Press the meat down to release any air pockets.

Tear a large piece of tin foil and place the meat in the center of the foil. Insert a skewer through the center of the shaped meat. Wrap the tin foil around the meat and squeeze the ends closed around the skewer. Note: be careful not to press or bend the foil into the meat.

Place the foil wrapped gyro onto the prepared baking tray and bake on the middle rack of your oven.

Cook for approximately 1.5 hours, flipping the foil wrapped meat once after 1 hour, until the meat reaches 160°F internal temperature. Note: if baking in a loaf pan just rotate the pan in the oven, do not flip the meat. Remove any excess fat or grease in the loaf pan while cooking.

Remove the meat from the oven and allow to rest 5 minutes before unwrapping the foil. When the skewer is cool enough to handle, stand the meat up using the skewer to hold it up and shave thin slices of meat off the skewer. Optional: if baked in a loaf pan – after baking thinly slice meat.

Heat oil in a skillet over medium high heat. Cook shaved gyro for 2-3 minute per side until slightly crispy.

Assemble your gyro pita with warm pita bread, tzatziki sauce, lettuce, tomato, red onion, feta cheese and some of the gyro meat. Optional: add some French fries for a classic Greek street food!

Roll up the pita tightly, wrap in foil or parchment paper to hold it together and make it easier to eat. Enjoy!

Greek Gryo Recipe

This quick and easy Greek spaghetti recipe is perfect for busy weeknights. Made with grape tomatoes, spinach, feta cheese, and flavorful herbs, you'll have a fresh and flavorful dinner on the table in no time.

Greek Spaghetti

spaghetti

tbsp extra virgin olive oil

tbsp red wine vinegar

lemon juice

tbsp fresh chopped basil

tbsp fresh chopped dill

sea salt

½ tsp fresh cracked pepper

salted butter

grape tomatoes (halved)

½ red onion (diced)

oz frozen spinach

oz crumbled feta cheese

Bring 4 cups of salted water to a boil in a medium to large pot. Cook the noodles in boiling water for 12 minutes, then drain and set aside.

While the noodles are cooking, combine 3 cloves of garlic, basil, dill, oregano, salt, pepper, lemon juice, red wine vinegar, and olive oil in a food processor and pulse for 15-20 seconds to make the sauce.

Melt butter in the pot you cooked the spaghetti in and add tomatoes, onion, and spinach (break apart the frozen spinach so it thaws quicker). Cook for 7 minutes, then add the remaining garlic and stir.

Add noodles and sauce to the pan and toss to coat. Cook for 7-10 minutes.

Top with crumbled feta and fresh dill for garnish.

Greek Feta Potato Salad combines tender baby potatoes with feta cheese and a garlicy lemon salad dressing (and no mayonnaise)! A quick side dish for any day of the week. If you love Greek food as much as I do then you are in for a real treat with this potato salad.

Greek Feta Potato Salad

baby potatoes (1 bag baby potatoes)

garlic (finely minced)

parsley (chopped)

tsp dried Greek oregano (or dried oregano)

feta cheese (crumbled (or vegan feta cheese))

feta

chopped parsley

lemon

Wash and drain the potatoes, slice in half. Add the potatoes to a large pot and cover with water. Add the salt and stir.

Cover and bring to a boil on medium high heat. Reduce the heat to medium and simmer for about 8-10 minutes or until the potatoes are just fork tender.

While the potatoes cook, in a large bowl add the minced garlic, chopped parsley, lemon juice, dried oregano and olive oil. Mix until evenly combined.

When the potatoes are cooked, drain well and add to the bowl with the dressing. Gently toss to combine, being careful not to break the potatoes.

Transfer the potato mixture to the fridge and allow to cool for 5 minutes (this step cools down the potatoes so that the feta cheese will not melt when added to the salad).

Remove from the fridge and pour the crumbled feta over the potatoes. Toss until evenly combined.

Optional: garnish with lemon zest, additional crumbled feta and additional fresh chopped parsley.

Serve chilled or at room temperature and enjoy!

So easy to prepare, skipped the salt, but still tasted great. Gracias!
