<p>Mediterranean Grilled Chicken Wings are so easy to make and fun to eat.  A simple marinade gives the chicken tons of flavor and the tzatziki sauce dip is the perfect accompaniment.  </p>

lemon

red wine vinegar

Homemade Tzatziki Sauce

If you have to cut up the wings into drums, wing, and other weird piece, this is the time to do it.  The easiest way I can say to do this is to bend the pieces at the joint and then cut it next to where the wing bent.  The knife should go through pretty easily and you shouldn&#8217;t have to saw too much.  If you are working hard at it, you&#8217;re not in the right spot.  Cut up the pieces, throw out the weird piece at the end and salt and pepper the wings.  Clean your hands and set aside the cutting board aside.  If you did not need to cut them up, then just take them out of the package, salt and pepper them, and set them aside.

Add all of the marinade ingredients to a large Ziploc bag, saving the olive oil for last.  Squish the marinade around in the bag until the garlic is broken up and the mustard is incorporated into the sauce.  Open the bag again and add the chicken.  Close the bag and shake the chicken around to make sure all the pieces are covered.  The chicken can marinate for 24-48 hours if you are looking to make ahead.  Otherwise it will still be delicious even with just a half hour. 

Heat up the grill.  The wings should take about 15-20 minutes on the grill.  You want to make sure that the wings are crispy and have some charred edges.  In the last few minutes of cooking, add the Naan or Pita bread to the grill to warm up.  Remove everything from the grill to a plate.  Top with parsley, red onion, and/or bits of feta (optional).  Serve with homemade tzatziki sauce.

- 1 1/2 pounds boneless skinless chicken breasts

In a small bowl, combine the salt, pepper, rosemary, oregano, thyme, cayenne, minced garlic, lemon juice, olive oil, and red wine vinegar.

Place the chicken breasts in a large zip top bag. Pour the prepared marinade on top, zip the bag and give it a good shake until the chicken is evenly coated. Allow the chicken to marinate for 10 minutes - 2 hours. I like to stick to a 30 minute marinade if possible.

Preheat an indoor or outdoor grill to medium high heat. Spray the grates with nonstick cooking spray if desired. Place the chicken breasts on the grill, discard any leftover marinade. Cook the chicken breasts for 5-6 minutes per side or until the internal temperature reaches 165ºF.

Serve immediately, garnish with chopped parsley if desired.

To make the marinade, combine olive oil, fresh lemon juice, minced garlic, oregano, salt, and ground black pepper in a zip-top bag and mix thoroughly.

Add the chicken into the bag, ensuring any excess air is removed before sealing. Gently massage the bag to ensure the marinade fully coats each piece of chicken.

Place the bag in the refrigerator and leave it to marinate for a minimum of one hour, up to a maximum of four hours.

Peheat the grill to medium-high heat then clean and oil the grill grates.

Remove the chicken from the marinade, place on the grill, and cook for 3 minutes, then flip and cook for 3 more minutes or until the internal temperature of the chicken reaches 165°F/74°C with an Instant read thermometer.
