My version of Alton Brown's delicious gyro recipe.

Homemade Greek Gyros with Tzatziki Sauce (Kebabs*)

Tzatziki Sauce (recipe link in directions)

This refreshing and light, easy Greek chicken gyros is packed with tender souvlaki chicken, Greek salad, and homemade tzatziki sauce, all wrapped in a pita.

Greek Chicken Gyros with Tzatziki

olive oil

cloves garlic, crushed

lbs. chicken breast (approximately 3 chicken breasts),

tablespoon olive oil

large cucumber, unpeeled

cup plain Greek yogurt

cloves garlic, pressed

tablespoon extra virgin olive oil

teaspoons freshly squeezed lemon juice (juice of 1/4 lemon)

+ 1/2 tablespoon fresh dill, chopped

teaspoon salt

of ground black pepper

+ 1/2 cup romaine lettuce, chopped

cherry tomatoes, quartered

red onion, chopped (roughly 1 small red onion)

feta cheese, crumbled

salt and pepper,

pita breads

Prepare the marinade

. Add all of the ingredients for the chicken souvlaki marinade into a large ziploc bag. Press the marinade around to combine.  Add in the chopped chicken, and press the air out of the bag and seal tightly. Press the marinade around the chicken to coat. Place in the fridge to marinate at least 1 minutes or overnight.

Prepare the tzatziki sauce

.  Grate the cucumber and drain through a cheesecloth, fine mesh sieve or using your hands. Transfer drained cucumber to a medium bowl. Add the yogurt, garlic, olive oil, lemon juice, dill, salt and pepper. Stir to combine. Refrigerate for at least 1 hour before serving to let the flavours infuse into the yogurt.

Prepare the toppings

. In a medium bowl, combine the toppings and toss together. 

Grill the chicken

. You can thread the chicken onto skewers to grill, or grill the individual pieces. Lightly brush olive oil over grill pan. Heat the grill over medium high heat for about 5 minutes, until sizzling hot. Cook the chicken for 7 minutes on each side, or until its internal temperature reaches 165 F (75 C).

Assemble the gyros

. Warm the pitas on the grill, about 1-2 minutes per side. Then, on the centre each pita bread, add a few spoonfuls of the salad toppings in a line down the middle. Top with grilled souvlaki chicken, and a generous scoop of tzatziki sauce. Fold the pita up and enjoy. You can also wrap it in parchment paper and twist the bottom to keep the ingredients inside.

Vegan Gyros With Grilled Tofu And Tzatziki Sauce

tofu, pressed*

oil, I use grapeseed oil

tamari

balsamic vinegar

brown sugar, packed

tomato paste

pepper

dill

coriander

cumin

cinnamon

recipe 1o Minute Tzatziki Sauce

pitas, naan

-2 tomatoes, sliced

about half English cucumber,

lettuce, romaine or iceberg

red onion, thinly sliced in half moon shapes

hummus

black olives

French fries

herbs cilantro

First press the tofu (see notes) for 15-20 minutes then slice the tofu lengthwise so you have 2 thinner slabs cut each slab in half for a total of four pieces. Lay flat in a large freezer bag and pour over the marinade. Marinade for minimum 1 hour, overnight or up to a couple of days in the fridge.

While the tofu is pressing make the marinade: add ingredients to a bowl and whisk until the sugar has dissolved,

While the tofu is marinading prep the vegetables, set aside

Make one recipe of vegan tzatziki and set aside in the fridge until needed (or prepare a day ahead)

To grill the tofu

remove from marinade, oil both sides of tofu, I use a pastry brush and grill over medium heat on your preheated and oiled grill pan or bbq. (if using bbq make sure the grates are clean and oiled) Cook for 3-4 minutes per side or until you get some good char marks for extra flavour! Remove to plate and drizzle on more marinade (it’s so fabulous) Cut each tofu steak into 4 pieces.

To assemble the gyros

lay a pita on a piece of tin foil or parchment paper. Add some shredded lettuce down the middle followed by some grilled tofu, sliced tomatoes, cucumbers, onions and tzatziki sauce and a twist of cracked black pepper and salt or seasoning salt. Wrap up in the foil, twisting and folding up the end. Enjoy! Makes 4 Gyros. For step by step photos see above post.

This was wonderful, gyros and tzatziki both! We were thinking that we would like to try this marinade on seitan steaks, then cook them on the grill!

Just made these tonight and fell in love! The tofu is top notch on its own, when you add that tzatziki it takes it to the next level. A great flavorful meal I felt great about eating. I didn't have tomato paste and didn't want to add the sugar so I used 1 tbsp ketchup instead. Also cut the tofu into thinner slices, just my preference, they came out crispy and chewy and so flavorful. Definitely making this again. Also thinking the tofu would be awesome in a Greek salad

TZATZIKI: Add the grated cucumbers to a sieve and using a wooden spoon, over the sink, press out as much of the water from the cucumbers as possible. Set cucumbers aside. Combine all of the tzatziki sauce ingredients in a small mixing bowl, and mix until well incorporated.

Next, cover and refrigerate  the tzatziki sauce until ready to serve.

Preheat oven to 425°F. In a large mixing bowl, combine all of the meatball ingredients with your hands or a mixing spoon, and form into meatballs (about 2 tablespoons of the mixture per meatball).

Place the meatballs on a lightly greased baking sheet and bake for 15 minutes.

While the meatballs are cooking, combine the ingredients for the cucumber tomato salad, and place into a serving dish.

Once the meatballs are done cooking,  remove them from the oven, and set to the side.

Now set the oven to broil, and place the flatbread on a baking sheet.

Broil until lightly toasted on both sides.

Place about 4 meatballs down the center of each flatbread.

Spoon a generous amount of Tzatziki sauce down the center on the flatbread next to the meatballs, and top with the tomato and cucumber salad.

Serve, and enjoy!

Make Gyro Meat (Bake in the morning or day before, if possible): Add onion and garlic to a food processor and very finely chop. Add to a bowl along with the ground meat, salt, pepper, bread crumbs, oregano, cumin, and Aleppo pepper. Use clean hands (or wear gloves if desired) to mix and mash the meat together really well, so it holds together densely.

Bake: Press meat mixture into a 9x5 inch loaf pan. Bake at 325 degrees F for about 50-60 minutes, or until the center registers 165 degrees on a thermometer. Set aside to rest for 20 minutes, and then, ideally, if time permits, refrigerate for a few hours or overnight. (Refrigeration will make the meat much easier to slice.)

Slice Meat: Remove meat from pan (reserve the fat drippings) and cut into thin strips, about 1/8 inch thick.

Brown meat: Heat a griddle, cast iron or skillet over medium high heat. Add some of the meat drippings or a little oil to lightly coat the bottom of the pan. Once hot, lay the meat slices flat in the hot pan and cook for just 1-2 minutes on each side, until browned and crisp. (Alternately, you can lay the pieces flat on a lined baking sheet and broil for a few minutes in the oven.)

Assemble Gyros: Serve gyro meat in a warm pita, topped with tomato, onion, lettuce, tzatziki, and feta.
