Quick and easy Greek lemon roasted baby potatoes are crispy on the outside and tender inside, packed with a Greek flavour blend of lemon, garlic and herbs.

Greek Lemon Roasted Baby Potatoes

lb. baby potatoes, halved

olive oil

garlic,

tablespoons freshly squeezed lemon juice (from 1 lemon), divided

Italian seasoning

salt

black pepper

In a large mixing bowl, add potatoes, olive oil, garlic, 2 tablespoons lemon juice, Italian seasoning, salt and pepper, and toss to combine until evenly coated.

Transfer to a quarter baking sheet and spread the potatoes out evenly into a single layer.

Roast for 35-40 minutes, until golden brown and fork tender (fork inserted easily comes out).

Remove from oven and serve immediately on a plate. Drizzle with the remaining 1 tablespoon lemon juice over top and toss to combine.

Easy Greek Roasted Potatoes

Preheat oven to 400 degrees. Spray a baking sheet lightly with nonstick spray.

Combine everything except potatoes in a large bowl and whisk until blended. Coat potatoes in mixture in either a large plastic bag or large bowl.

Spread potatoes in a single layer on the prepared baking sheet.

Roast uncovered for 25 minutes, stir and roast another 25 minutes or until golden brown.

Preheat oven to 400 degrees. Place the potatoes in  a 13&quot;x9&quot; baking dish and pour the olive oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil. Arrange the wedges in a single layer.

Bake the potatoes for 15 minutes. Add the stock, then toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through.&nbsp;

If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.&nbsp;Sprinkle with the fresh oregano and serve at once.

Authentic Greek Lemon Potatoes- Patates Fournou Lemonates

Place the cut potatoes in cold water for a ½ hour.

Preheat oven with the fan at 400 degrees Fahrenheit (200 degrees Celsius).

Drain the potatoes and dry with a towel.

Place potatoes in a bowl with all the ingredients except the water and mix well (with hands preferable, until olive oil has coated all the potatoes).

Spread potatoes in a pan (they should all be one layer, not piled on top of each other) along with the olive oil that is left in the bowl.

Pour some warm water in the corner of the pan, tilting the pan so that the water spread throughout the whole pan. You want the liquids to come up halfway (covering the potatoes halfway). Do not pour the water directly above the potatoes as this will wash out the olive oil.

Roast (with the fan) for about 10 minutes until the liquids start to boil. Reduce heat to 320 degrees Fahrenheit (160 Celsius) and continue roasting for about 45 minutes. Test the potatoes with a fork, they should be soft, but not falling apart.

We had a Greek night recently and my wife, who made spinach pie, challenged me to make lemon potatoes. These were really delicious. We served them with a slow roasted lamb shoulder, Greek salad, zucchini  and bread. Baklava for dessert. We were celebrating my father’s 87th birthday. He was very happy with this delicious Greek meal!
