Green hummus is creamy, delicious, and packed with herbs and veggies. It&#x27;s a popular hummus recipe variation that&#x27;s tasty as a snack or spread on a wrap.

Green Goddess Hummus

chickpeas

chickpea liquid (or more, as needed)

tahini

olive oil

spinach (moderately packed)

parsley

lemons (juiced)

green onion (roughly chopped)

garlic

cumin

salt

olive oil, chopped herbs, chopped walnuts and sesame seeds

Add all the ingredients to your Vitamix or high-powered blender and secure the lid. Remove the lid cap and insert the tamper.

Turn the blender on high for 30 seconds (or more for a creamier texture) and use the tamper to push the hummus into the blades. Add more chickpea liquid (aquafaba), if desired, for a softer hummus.

Add the hummus to a serving plate and garnish with olive oil, chopped herbs, chopped walnuts and sesame seeds.

Green goddess hummus is creamy, flavorful, and packed with fresh herbs and veggies. It's a spin on my classic hummus recipe, but adds several greens in the form of spinach, parsley, and green onion.

Green Hummus

A bright fresh, healthy spread that's fabulous with crackers, chips, veggies, as a sandwich spread, on pita and so much more! This Green Goddess Hummus is about to become your next obsession!

chickpeas (also called garbanzo beans, undrained)

garlic (peeled)

jalapeño (seeds and ribs removed, roughly chopped)

basil leaves (tightly packed)

cilantro leaves

parsley leaves (tightly packed)

chives (roughly chopped)

fresh lemon juice ((1 juicy lemon will yield 3 tablespoons))

water

extra virgin olive oil (for drizzling)

black pepper

Combine undrained chickpeas and peeled, whole garlic cloves in a medium microwave-safe bowl or measuring cup. Microwave on high power for 6-7 minutes until garlic and chickpeas are soft. Drain then set aside to cool for 15 minutes.

For the prep:

After the chickpeas have cooled, combine the jalapeño, basil, cilantro, parsley, chives, mint, (if using), lemon juice, oil and water in the bowl of a food processor or high-powered blender. Blend on high power for 1-2 minutes until very smooth. If you have to add a bit more ice water to get things going, it’s fine.

Add the tahini, cooled chickpeas and ½ teaspoon kosher salt. Blend again for 2-3 minutes, adding extra ice water, as needed, in 1 tablespoon increments until a thick, smooth, creamy texture is achieved.

Taste and add more salt or lemon juice.

For the hummus:

Serve drizzled with extra virgin olive oil and fresh ground black pepper.

Store in an airtight container in the refrigerator. Keeps well for 3-4 days.

(15-oz.) can chickpeas ((NOT drained))

garlic, peeled

green onion,

basil leaves ((roughly chopped before measuring))

parsley ((roughly chopped before measuring))

Tbsp lemon juice ((1 large lemon yields ~3 Tbsp juice))

Tbsp extra virgin olive oil

tahini ((find our tahini review here))

tsp sea salt

Chili oil

Sliced veggies

Flatbread

Almond flour crackers

Microwave undrained chickpeas and whole garlic cloves in a medium-sized heatproof mixing bowl for 4-5 minutes (there should be ~2 inches of space at the top to prevent it from spilling over). Alternatively, bring to a boil in a small saucepan, then reduce to a simmer for 4-5 minutes.

While the chickpeas microwave/simmer, add the green onion, basil, parsley, lemon juice, olive oil, and water to a high-speed blender. Blend until the herbs have broken down and you have a vibrant green mixture.

Drain the chickpeas and garlic and add them to the blender along with the tahini and the salt. Process until smooth and creamy, scraping down sides as needed. Add more water or oil as needed to blend.

Taste and adjust seasonings as needed, adding more lemon juice for brightness, olive oil for creaminess, or salt for overall balance.

This hummus is delicious garnished with chili oil or chili crunch and served with veggies, crackers, and/or flatbread or gluten-free flatbread. It&#39;s also delicious on sandwiches! Leftovers keep in the refrigerator for up to 4-5 days.

So yummy but DRAIN THE CHICKPEAS!! Unless you want hummus soup. I had to add a half a can of chickpeas afterwards to make it thick. Flavor is great though

OMG! I doubled the recipe and added some kale for good measure. The basil just makes this next level! I've never made a green hummus before! Going to see how the extra holds up to freezing! So good!

I made this a few times and it's great, everyone loved it. 
What do you think of changing parsley with Cillantro?

Wow! This is really good! Will definitely make again but will use my Cuisinart rather than my Vitamix, easier to add more oil and water as needed.
