These blender Spinach Banana Muffins are an easy, healthy, freezer-friendly breakfast recipe full of fruit and veggies! We call them "hulk" muffins because of their fun, naturally green color! They are gluten-free, dairy-free and have no refined sugar!

Spinach Banana Muffins

oats

flaxseed

tsp baking powder

½ tsp baking soda

salt

cinnamon

coconut sugar (or your favorite granulated sugar)

almond milk

spinach leaves

coconut oil

extra-ripe large bananas

eggs**

vanilla

Preheat oven to 375 degrees F. Grease or line a muffin tin.

Put 2 cups of old-fashioned oats in your blender (Vitamix) and blend until the oats achieve the texture of flour. Transfer to a medium mixing bowl.

Add the rest of the dry ingredients to the oat flour (ground flaxseed, baking powder, baking soda, salt, cinnamon and sugar). Set aside.

Add almond milk to the blender followed by 2 cups of spinach. Blend together until completely smooth and homogenous.

Add bananas and coconut oil and blend until smooth.

Add vanilla and eggs and blend until just combined

Pour wet ingredients to dry mixture and stir to combine (making sure there are no lumps)!

Fill each well in your muffin tin with ¼ cup of batter. Bake for 20-25 minutes or until toothpick comes out clean and the top springs back when touched.

Blender Spinach Banana Muffins

Looking to get some extra veggies in? Sneak some spinach in with these tasty and simple Chocolate Spinach Muffins! 10 minutes to prep, and super kid friendly. Delicious and wholesome, and a green smoothie in every bite but no one will know!

Chocolate Spinach Muffins

bananas

baby spinach

T milk (almond milk

sugar

½ c Greek yogurt (full fat)

T oil

c white whole wheat flour

tsp baking soda

cocoa powder

sea salt

chocolate chips

Preheat oven to 350°F.

Combine milk, bananas and spinach in a high powered blender and blend until mostly smooth. A few lumps is ok. Transfer the mixture to a large mixing bowl.

Add egg and stir to lightly whisk. Add sugar, vanilla, oil and Greek yogurt and stir to combine.

In a small bowl, combine flour, baking soda, sea salt and cocoa powder and stir to combine. Slowly add dry ingredients to wet ingredients and stir to fold in. Stir in the chocolate chips, saving some or adding extra in for topping.

Line a 12 muffin pan with muffin liners and spoon batter into each. Add chocolate chips to the tops of each muffin if desired.

Bake for about 18-22 minutes or until you can put a toothpick in the center and it comes up clean.

Cool for several minutes before serving.

Tastes more like a banana smoothie than a muffin. 😄 Not my favorite, but a nice sweet treat that's a little healthy. I did mini muffins (silicone pan) and it took 18 minutes to cook. The regular size muffins (silicone liners, not filled very full) took a few minutes more.

These are sooo good and you'd never know they had spinach in them. They taste like double chocolate banana bread. Would definitely make again! I made two dozen in a regular muffin tin and cooked them for 19 minutes. They came out perfect.

Very delicious and moist muffin. Would never guess there was spinach in these. I will be making these again! (I used all purpose flour, because it was what I had on hand)

Omg these were amazing! I tried the recipe as is and it was fantastic. Definitely going to try some of these changes some people suggested just to see what I like best, but this was fantastic. I also had to add time for silicone muffin tins.

These are so good! I use Splenda instead of sugar and applesauce instead of oil, and they come out great! No one can believe they have spinach in them! Thanks for the recipe.
