This grilled Mexican pizza has a spicy kick from zesty tomatoes, chorizo and poblano pepper. The heat is balanced with sweet grilled corn and melted cheese.

Grilled Mexican Pizza with Chorizo

Spray cold grates of gas grill with grilling spray. Preheat grill for medium-low heat. Meahwhile, heat medium skillet over medium-high heat. Add chorizo; cook 5 minutes or until finely crumbled and browned, stirring occasionally. Drain and set aside. 

Spray rimless baking sheet or pizza pan with grilling spray. Roll dough in a 12-inch circle on lightly floured surface.  Carefully transfer dough to baking sheet and then directly onto grill grates. Grill dough until lightly charred, about 2 minutes per side. Grill poblano pepper and corn until charred, about 10 minutes, turning frequently.  

Cut corn off cobs; chop pepper in small strips. Top grilled crust with chorizo, cheese, drained tomatoes, corn and pepper. Grill pizza until cheese is melted, about 5 minutes, rotating pizza if needed for even heating. Sprinkle with cilantro. Cut into 6 slices. Serve with crema, if desired.

Preheat gas grill for medium-high heat. Whisk together beer, Worcestershire sauce, cornstarch, garlic, mustard and pepper in medium bowl; set aside.

Place five 18x12-inch pieces of heavy aluminum foil on counter.  Spray each with cooking spray.  Evenly place onion and potatoes on each piece of foil.  Pierce bratwursts with fork and place on top of vegetables.  Carefully fold edges of foil upward; pour about 1/4 cup beer mixture into each packet.  Double fold top and ends of each piece of foil, leaving space for steam to gather.

Place packets on grate; cover grill.  Grill 20 to 25 minutes or until bratswurst is cooked through (160°F) and potatoes are tender.  Carefully open packets.  Serve with additional mustard and parsley, if desired.

Place chicken breast in a resealable food storage bag and pour in fajita sauce. Refrigerate at least 30 minutes or up to 4 hours. Spray cold grates of grill with grilling spray and heat to medium. Grill chicken until charred and no longer pink in the center (165°F). Cool 5 to 10 minutes before slicing.

Top lettuce with sliced chicken, avocado, tomatoes, black beans, cheese, cilantro and tortilla strips. Toss your Santa Fe salad with avocado ranch and serve!

Place peppers in large aluminum-foil-lined baking pan or on broiler rack. Broil, turning occasionally, 20 minutes or until peppers turn almost completely black. Immediately place in paper bag; close bag and let cool about 30 minutes. Peel off skin under cold running water, then remove stems and seeds; slice into long thick strips.


Combine bell peppers with Italian dressing, basil and black pepper in large bowl. Cover and marinate in refrigerator, stirring occasionally, at least 2 hours.


For best flavor, serve peppers at room temperature.
