This burrata with grilled bread is made with a creamy mozzarella-like cheese and is an easy appetizer for summer entertaining.

Store-bought bread

Extra-virgin olive oil, for drizzling

Remove any wrapping, paper, and twine from the burrata. Place the cheese in a bowl of very warm water and let it rest there 10 minutes. (You want to make sure the burrata sits in the warm water long enough to lose the refrigerator chill at its creamy center.)

Drain it well and set it on a clean towel.

Grill some bread, both sides, to a good char. Stack on a small plate.

Place the whole burrata in a shallow small bowl.

Generously pool some extra-virgin olive oil around the base of the burrata—you want to keep the cheese itself pristine white, so don’t drizzle the oil all over the cheese, just around its base.

Grilled bread comes out perfectly toasted and charred! Use it as a base for appetizers, or make grilled garlic bread as a side dish.

Preheat

Preheat a grill to medium-high heat (375 to 450 degrees).

Grill

Brush each side of the bread lightly with olive oil. Place the slices on a baking sheet and sprinkle with 1 pinch of salt on top of each. Grill 1 to 2 minutes per side, until crispy and just starting to char on the edges.

Serve

Remove from the heat. If desired, rub each slice with the cut side of the garlic and a bit of butter or additional olive oil (we rubbed on a small pat of butter between all the slices). Add another sprinkle of kosher salt if serving plain as garlic bread, and top with chopped herbs if desired.

This grilled bread is served with an herb flavored balsamic and olive oil dip.

Grilled Bread with Rosemary Dipping Oil

baguette loaf (sliced in half horizontally)

Heat your grill on high heat for 5 minutes. Drizzle the cut side of your bread with olive oil. The actual amount you will need will depend on the size of your bread. On the bread I used, it was about 1 tablespoon per side.

Place the bread cut side down on the hot grill and cook for about 4 minutes, or until desired doneness. Flip and grill for another 2 minutes. Remove from heat, and rub with raw garlic clove while still hot. The garlic clove will slowly melt into the bread. You only use about half a clove per side.

Make the dipping oil by combining the olive oil, rosemary, salt and pepper. Stir to combine. Drizzle with balsamic.

Cut the grilled bread into 2" thick slices, serve with the rosemary dipping oil.

Cut the chicken breasts in half so that you have a total of four pieces. Cover with plastic wrap and pound them to an even thickness of about 1/2 inch or less. Place the flour in a bowl with some salt and pepper. Dredge the chicken in the flour mixture and set aside.

Heat 2 tablespoons of butter and the olive oil in a heavy skillet over medium high heat. Add the chicken and fry for a few minutes, flipping once. Both sides should be golden brown. Remove chicken and set aside.

Add the wine to the skillet and let it get all sizzly so you can scrape browned bits off the bottom. Add the broth and lemon slices. Let the mixture reduce to half or less. Add the capers, butter, and any remaining juice you can get out of the lemon nubs. Arrange the chicken pieces back in the pan and sprinkle with fresh parsley. VOILA!

Anything with chicken, lemon, butter or capers makes me very, very happy. So obviously I'm rather excited to try this!

This recipe looks amazing!! Chicken Piccata was one of the very first recipes I ever learned to make in Culinary School!  So very delicious...capers are a great little salty treat!  I agree about butter being the most important part of this meal:)

Wow. I wasn't even hungry then I saw this and I'm ravenous! Love capers :)

And now I know what to do with my 3 day old Chard that was about to get dumped :)
