grilled chicken panini

There's only one word to describe this hot grilled chicken panini with arugula, melted provolone and chipotle mayonnaise... dee-licious! Perfect for when you have leftover grilled chicken cutlets.

Chicken Arugula Provolone Panini with Chipotle Mayo

tbsp Hellman's light mayonnaise

tsp chipotle in adobo sauce (or to taste)

oz ciabatta (sliced open)

1.75 oz 1 thin grilled chicken cutlet

Sargento reduced fat provolone

0.5 oz about 1/2 cup baby arugula

Smart Balance cooking spray

Combine mayonnaise and chipotle pepper sauce in a small bowl.

You can use any hot sauce, sriracha or chipotle tabasco would also work; season to your taste.

Spread the spicy mayonnaise inside the ciabatta.

Lay the provolone cheese, grilled chicken and arugula in the bread; close and lightly spray the top with cooking spray.

Place on a panini press and close until the cheese melts and the bread is toasted.

Cut in half and eat immediately.

This delicious Grilled Chicken Panini with Zucchini, Tomato, and Mozzarella highlights end-of-summer vegetables on sour dough bread.

Grilled Chicken Panini with Zucchini, Tomato, and Mozzarella  

zucchini (1/4 inch thick)

salt

pepper (to taste)

chicken

mozzarella cheese

tomato

basil

sour dough bread (cut 1/4 inch thick (4 oz total))

olive oil spray

Season zucchini with salt and pepper. Heat a grill pan over medium-high heat.

Spray with oil and add the zucchini, grill on each side about 2 minutes each, until grill marks form. Set aside.

Spray one side of each slice of bread.

Heat a large non-stick skillet over medium-low heat. Place 2 slices of bread oiled side down on the skillet.

Top each piece of bread with 1 ounce of cheese, divide the zucchini on top, grilled chicken, tomato slices and basil and the remaining cheese.

Top with the remaining bread oil side up. Use a heavy pot or skillet to press it down and cook until the bottom piece of bread is golden, about 4 to 5 minutes.

Use a spatula to carefully flip the sandwich over. Cook until the other slice of bread is golden brown, about 3 to 4 minutes.

Cut in half diagonally and serve with your favorite soup.

This is the perfect dish for Summer!  No heating up the kitchen heating the oven. Just my George Forman and a stovetop grill for the zucchini. I didn’t change one thing!  This will be on a weekly rotation.

This is such an easy recipe that comes together quickly and is absolutely delish!  I always do basil pesto instead of fresh basil because of the extra pizazz it adds.  Anybody I have made this for raves about it.

Made this for dinner; with a side salad. It was delicious. Used ciabatta bread instead of sourdough. Only problem was the bottoms of both sandwiches burned in less than half the time and the sandwich fell apart. But it was still delicious!

This is a very flavorful and satisfying sandwich. It surpassed my expectations.  I will make it again and again.

This recipe was soooo good!  Saving to make the next time we have people over for lunch or brunch!

My favourite sandwich. So easy and fairly quick for weeknight dinner.

This dish was a homerun at our house.  I went off the path a bit and used the tomato reduction from the Chicken Caprese Skillet recipe as a spread on the bread instead of using the sliced tomatoes.

Made this sandwich today and my family loved it!

I made this tonight for Meatless Monday without the chicken, served with your roasted red pepper soup.  Delicious!  I used a ripe heirloom tomato and used the soup for dipping, so I did not think it needed any sauce.  My husband said it reminded him of margherita pizza, so I feel like a little balsamic glaze would be a good addition for the future.

Made this panini for a light dinner tonight. Will definitely make it again but I’ll add a little garlic mayo sauce.  It seemed a little dry,
