Grilled chicken souvlaki recipe is paired with a dairy-free tzatziki that’s out-of-this-world delicious.&nbsp;

Grilled Chicken Souvlaki with Dairy-Free Tzatziki

chicken breasts

olive oil

lemon juice

garlic (minced)

oregano

parsley

tsp sea salt

tsp pepper

raw cashews (soaked 4-6 hours (or overnight))

water

cucumber

dill (chopped)

Chop each chicken breast into approx 1.5 inch chunks and place in a bowl. Add all remaining chicken souvlaki ingredients and stir together. Place the bowl in the refrigerator and marinate for at least 30 minutes.

To make the tzatziki sauce, drain and rinse the cashews and place in a high-powered blender. Add the water and lemon juice and blend on high for 2-3 minutes, or until creamy. Add the remaining tzatziki ingredients to the blender and pulse a few times, just until combined. Store in a sealed container in the refrigerator (Note: the tzatziki sauce can be stored for 3-4 days in the refrigerator).

Heat the grill on medium-high.

Place the marinated chicken pieces on skewers (approx 8-9 pieces per skewer makes 6 skewers) and cook on the grill for 3-4 minutes each side.

Served the grilled chicken souvlaki with the tzatziki sauce.

Grilled Chicken Souvlaki is always a favorite grilled chicken at my house. The marinade makes the most tender, moist and flavorful chicken. This chicken is gluten-free and easy to prepare.

Grilled Chicken Souvlaki

lemons (juiced)

avocado oil (or olive oil)

red pepper flakes

For sauce:

plain no sugar full-fat yogurt

garlic

tsp dill

salt and pepper

Place chicken breasts between two sheets of plastic wrap and pound to an even thickness. Trim off fat.

Make the marinade by whisking together lemon juice through red pepper flakes. Place chicken in a plastic bag and pour over marinade. Massage so all chicken is covered in marinade. Place in refrigerator for a few hours or overnight.

Mix together all tzatziki sauce ingredients and set aside.

Grill chicken about 6-8 minutes per side or until a meat thermometer reads 160º. Remove from grill and place under foil to rest.

Greek chicken souvlaki makes for an easy and flavorful recipe. Marinate the chicken, thread the pieces on skewers, and grill them up!

Heat the grill on medium-high heat. Then thread the marinated chicken pieces onto skewers (about 8 to 9 pieces per skewer makes 6 skewers).

Grill chicken

Cook the skewers on the grill for 3 to 4 minutes on each side.

Serve chicken
