Grilled shrimp, corn, peppers and zucchini topped with fresh avocado and lime juice – an easy light salad you'll want to make all summer long.

Grilled Shrimp and Vegetable Bowl

shrimp (12 oz)

olive oil

onion powder

garlic powder

½ teaspoon smoked paprika

brown sugar

salt

black pepper (to taste)

cayenne pepper (or more, to taste)

Olive oil spray

7 oz zucchini, quartered lengthwise

red bell pepper (halved, seeds and membrane removed)

corn cobs (husks removed)

Hass avocado (1 small, diced)

lime

Gently pat shrimp dry with a paper towel and place them in a medium bowl. Add the olive oil and toss to evenly coat. Add the onion powder, garlic powder, smoked paprika, brown sugar, ½ teaspoon salt, pepper and cayenne. Toss again and carefully skewer shrimp onto pre-soaked wood or metal skewers. Set aside.

Lightly spray the bell pepper, zucchini and corn with olive oil spray and use your hands to evenly coat. Season with 1/4 tsp salt and pepper.

Over medium-high heat, grill the corn cobs, bell pepper halves and zucchini for 4 minutes. Using long metal tongs, carefully turn the corn cobs, peppers and zucchini then place the shrimp on the grill. Cook for an additional 4 minutes, flipping the shrimp after 2 minutes. Remove everything from the grill at the same time.

Place corn cobs on a cutting board and carefully cut off the kernels from the cob. Dice the peppers and zucchini. Place the kernels in a medium bowl with the peppers, zucchini, avocado and lime juice. Add ¼ teaspoon salt and pepper, to taste. Toss to evenly coat. Divide shrimp and salad among 4 plates and serve.

Grilled Shrimp Cocktail with Sriracha Cocktail Sauce

16/20 count shrimp, peeled and deveined

ultimate dry rub

lime,

ketchup

sriracha

horseradish

½ grilled lime (from above), juiced

Prep Grill

Preheat Grill: Prepare grill for direct cooking using lump charcoal.

Clean Shrimp

Prep Shrimp: Rinse and dry peeled and deveined shrimp and place them onto skewers. If wood skewers, be sure to soak them first for at least an hour in water. Season shrimp with dry rub on both sides.

Grill Direct

Grill Shrimp: Place shrimp on the grill over direct heat when the charcoal is ready, and cook for four minutes per side or until the internal temperature of the shrimp reads 120 degrees Fahrenheit using an instant-read thermometer. Concurrently place lime over direct heat, flesh side down, for 8 - 10 minutes or until grill marks appear. Use half of the lime to squeeze over the grilled shrimp when they are finished. Use the other half for the sriracha cocktail sauce.

Combine

In a small bowl mix ketchup, sriracha, horseradish, and the juice of half of a grilled lime. Adjust flavors to your preferences.

Grilled Pesto Shrimp Skewers

basil leaves (chopped)

lbs jumbo shrimp (peeled and deveined (weight after peeled))

kosher salt and fresh pepper

In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth.

Slowly add the olive oil while pulsing.

Combine raw shrimp with pesto and marinate a few hours in a bowl.

Soak wooden skewers in water at least 20 minutes (or use metal ones to avoid this step). Thread shrimp onto 7 skewers.

Heat an outdoor grill or indoor grill pan over medium-low heat until hot. Be sure the grates are clean and spray lightly with oil.

Place the shrimp on the hot grill and cook until shrimp turns pink on the bottom, about 3-4 minutes; turn and continue cooking until shrimp is opaque and cooked through, about 3-4 minutes.

I am 61 yo and just started trying seafood because it's so healthy for you.  I have tried before and it all tasted like fish sticks.  Well, I made this recipe with some palmin pesto noodles and it was the BOMB!

So light and delicious! I served these alongside your Orzo with Zucchini and Tomato recipe and it was great!

could I use frozen precooked shrimp somehow?

Tasty!  I had some basil that NEEDED to be used.  These tasted great right off the grill.

1-1/2 Pounds Large Shrimp (peeled and deveined (tail-on))

Parsley (optional garnish)

Lemon Wedges (optional garnish)

Add the olive oil, salt, lemon juice, oregano, black pepper, garlic powder and paprika to a large mixing bowl. Stir well to combine.

Add the peeled and deveined shrimp and make sure they&#x27;re all coated. Cover and place in the refrigerator for 30 minutes (no more than 1 hour).

Thread the shrimp onto skewers and cook over medium-high heat for about 3 minutes each side. This can be on the barbecue or in a grill pan.

Remove from the heat and serve over seasoned rice with lemon wedges and sprinkle with chopped parsley.
