A delicious recipe for juicy Mediterranean grilled vegetables. Summer vegetables and button mushrooms are seasoned and grilled to perfection! This recipe can be easily adjusted to your liking.

Mediterranean Grilled Vegetables

Yellow Bell Pepper

Green Bell Pepper

oz Button Mushrooms ((120 grams))

Zucchini ((260 grams))

Large Red Onion

Cherry Tomatoes ((140 grams))

Salt

Black Pepper

tbsp Oregano

tbsp Olive Oil

Rinse all the vegetables and cut them into chunks (cut button mushrooms in half; cut onion into quarters and separate the layers; cherry tomatoes can be cut in half or left as whole)

Place all the veggies apart from cherry tomatoes onto a baking tray/sheet or disposable aluminum tray. Season them with salt, pepper, oregano and olive oil and mix everything well, making sure all the veggies are coated with the seasoning.

Grill for 10 minutes, stirring from time to time. Then add cherry tomatoes and grill for a further 10 minutes or until the vegetables are to your liking.

Heat a grill to medium-high and spray with nonstick cooking spray. Cut the vegetables into similar sized chunks and thread onto 4 metal skewers. Drizzle with olive oil and season with salt and pepper. Grill the skewers for 8 minutes per side or until the vegetables are tender and lightly charred. Remove from the grill, season to taste, and serve with desired sauce or dressing.

Grilled Vegetables Recipe

In a large mixing bowl, combine the sliced vegetables with the chopped parsley and the olive oil.

Allow the flavors to marinate at room temperature for 1 hour.

Heat a ridged grill pan over medium high heat for about 3-5 minutes. 

Place the vegetables in a single layer and grill for 3 minutes per side or until lightly charred. Season with salt and pepper to taste. Repeat until all vegetables are grilled.

Transfer vegetables to a large serving dish and garnish with fresh herbs, sea salt and a drizzle of olive oil, if desired.

Can be served hot or at room temperature.

Preheat the grill for medium-high direct heat grilling, about 450-500 degrees F. While the grill preheats, prep the cauliflower. If needed, trim the stem of the cauliflower, so the head lies flat on the cutting board. Carefully remove any excess leaves, taking care to leave the stem completely intact. Slice the cauliflower lengthwise, through the stem, into 1/2-inch thick ‘steaks’. Place the cauliflower steaks on a small baking sheet or in a large bowl. Drizzle the oil over top, brushing to coat the cauliflower ‘steaks’ with oil. Season with 1/2 teaspoon kosher salt, ground black pepper, &amp; any other fresh herbs or spice blends as desired.

Easy Grilled Vegetables with Burrata Cheese Platter

Here is an easy Mediterranean grilled vegetables recipe with so much flavor! These grilled vegetables are served with a zesty dressing and make a delicious side dish.

zucchinis

roma tomatoes

mini peppers

oz brussel sprouts

lemons

lemon (juice of)

sumac

tsp salt

tsp black pepper

Prepare the grill

Preheat the grill to medium - medium high.

Prepare the vegetables

Wash and dry all the vegetables. Slice the zucchini and eggplants into strips no thicker than 1/2 inch. Cut the tomatoes in half. Trim the bottom of brussel sprouts and if they&#039;re large, cut them in half. Slice the lemon and leave the mini peppers as they are.

Place all the vegetables on a baking sheet and drizzle with olive oil. Using your hands, mix the vegetables well to make sure they&#039;re all coated.

Grill the vegetables

Place the vegetables on the hot grill grates and grill for 4 minutes. Flip and grill for another 4 to 5 minutes until they are grilled on the outside and tender on the inside.

Make the vinaigrette

Meanwhile, make the vinaigrette by mixing the olive oil, lemon juice, sumac, salt and pepper in a small jar.

Serve

Transfer the grilled vegetables to a platter and drizzle the vinaigrette on them. Serve immediately.
