BBQ Meatloaf Meal Prep Bowls are an easy lunch idea that you are going to be so excited to eat! With cajun mashed sweet potatoes, steamed green beans and mini BBQ meatloaves.

BBQ Meatloaf Meal Prep Bowls

potatoes (medium; scrubbed)

salt

cajun seasoning (see note 1)

butter

lb beef

breadcrumbs

worcestershire sauce

barbecue sauce (divided)

oz green beans (washed, ends trimmed if you prefer)

Cook sweet potatoes

Cook sweet potatoes- you can cook your sweet potatoes using your favorite method. To steam, add 2 cups of water to a pot, place a steamer basket on top, and place the sweet potatoes into the steamer basket. Cover and cook for 20-30 minutes, until the sweet potatoes are fork-tender.

Mash

Mash sweet potatoes- When cooked through, remove skins and mash the sweet potatoes with salt, cajun seasoning and butter.

Prepare

Prepare BBQ meatloaves- Heat oven to 350°F and spray 8 cavities of a standard-sized muffin pan with oil. In a large bowl, mix together the ground beef, egg, breadcrumbs, worcestershire sauce, salt and ¼ cup of the BBQ sauce

Bake

Bake- Press the mixture into the 8 cavities, pressing into a meatloaf shape. Bake for 20 minutes, then brush tops with ¼ cup more BBQ sauce. Return to the oven for an additional 5 minutes.

Steam

Steam green beans- Steam in a covered dish in the microwave or on the stove top for 5 minutes or until tender crisp.

Assemble

Portion- Divide the meatloaves, mashed sweet potatoes and steamed green beans between four meal prep containers. Cool completely, then refrigerate.

This ground beef spin on Philly Cheesesteak is a quick and limited ingredient dish that will have you ditching the traditional style Philly Cheesesteak sandwich this week, and make this super quick and simple version for dinner or your lunch meal preps this week!

Ground Beef Philly Cheesesteak Meal Prep

lbs beef

green pepper, diced

mushrooms

Worcestershire

beef broth

colby jack cheese (or traditional provalone!)

basmati rice

Cook your rice according to the package.

While the rice cooks, in a large frying pan, on medium heat, saute the beef until half way cooked. 

Add the green pepper, onion, and mushrooms to the pan. Let simmer until beef cooked throughout. Drain excess fat if needed.&nbsp;

Add the Worcestershire and beef broth to the pan. Allow to simmer for 2-3 minutes until the broth is mostly absorbed.&nbsp;

Add the cheese to the mixture, and remove from heat. Residual heat will make the cheese all melty.

Divide the Philly cheesesteak mixture into 3-4 meal prep containers (depending on preferred portions) and add 1/2 cup cooked rice (or cauli rice) to each container.&nbsp;

Allow to cool, then refrigerate for up to 4 days.&nbsp;

Learn how to make Savoury Beef Mince base from 1 kilo of ground beef that can be turned into multiple dinners or lunches, such as Bolognese, Shepherd's Pie, Mexican Casserole, tacos, burritos, stews and more.

Ground Beef Recipes For Dinner: Savoury Mince Base

olive oil

2 small to medium onions, finely diced (about 2 cups chopped)

celery

ground beef mince (2.2 lb)

onion powder

garlic powder

soy sauce

white or black pepper

Add 3 tablespoons olive oil to a large frying pan. Add onions, carrots and celery and season with 1 teaspoon of salt. Cook over medium heat for 10-12 minutes, stirring every couple of minutes, until soft and slightly caramelised.

Now add another tablespoon of oil and garlic. Cook for an additional 2-3 minutes, then remove the vegetables to a bowl.

Place the frying pan back on the heat and increase to high. Add another tablespoon of oil and all of the ground beef mince. Cook over high medium-high heat for 10 minutes, stirring frequently and breaking the meat apart with a spatula.

After about 10 minutes, use a potato masher to break down the meat further. Then add the garlic and onion powders, soy sauce, and another teaspoon of salt and pepper. Stir and return the vegetables to the meat. Stir and cook everything together for 2-3 more minutes.

Transfer to containers and cool before placing in the fridge or freezer. I recommend 2 larger portions and 1 smaller one for the dinners outlined below but it doesn&#8217;t matter too much.

Beef Bulgogi Meal Prep Recipe

white rice

white button mushrooms, about 2.5 oz (70 grams) in total

green chili (optional)

red chili (optional)

2.2 lb (1kg) ground beef

broccoli (or asparagus, string beans, etc.)

Kosher salt, to season

tbsp neutral-tasting oil

sesame oil

Generous pinch of toasted sesame seeds, to garnish

tbsp sugar

mirin

tbsp oyster sauce

tbsp minced garlic

tbsp toasted sesame oil

Black pepper,

MSG (optional)

Wash the rice to remove any dust and debris. Drain and repeat two or three times. Add the same amount of water to the bowl and pop it into a rice cooker. Press the u0022pressure cooku0022 button.

Cook Rice

Prepare the vegetables: Finely dice the onion. Thinly slice the green onions and save some for garnish. Finely chop the mushrooms. Finely chop the chili peppers (if using).

Make the bulgogi marinade: In a small container, mix together the soy sauce, sugar, mirin, oyster sauce, minced garlic, sesame oil, black pepper, and MSG (if using).

To a large mixing bowl, add the ground beef, mushrooms, and marinade. Mix well. Cover and marinate in the fridge for at least 15 minutes or overnight.

Marinate Beef

Cut off the florets. Cut them into smaller bite-sized pieces.

Bring a pot of water to a boil. Once it comes to a boil, lightly season with salt and add the broccoli. Blanch for 1 to 2 minutes. Shock them in some ice water. Drain well.

Prepare Broccoli

In a large wok (or pan), heat the oil over medium-high heat. Once it’s heated, add the white parts of the green onions and onion. Saute for 5 minutes or until the onion becomes translucent.

Add the beef mixture. Spread it out and give it some time to caramelize. Once you’ve got some sear on the bottom, flip and break it into small pieces. Keep stirring it around until the beef is cooked through. This will take about 12 minutes.

Turn the heat off. Add the chili peppers (if using), the rest of the green onions, and the sesame oil. Give it a final mix.

Make Ground Beef Bulgogi

Divide the rice into microwave-safe containers. (Because I’m more into muscle gain, I divided it into 5 servings, but if this is too many calories (884 Calories per serving) for you, you can divide it into 6 or 7 .)

Make a barrier with broccoli. (Make sure the broccoli is really well drained.) Add the ground beef bulgogi. Sprinkle with sesame seeds. Optionally, serve with kimchi on the side.
