Do you cook with vegetable or chicken broth?

Very tasty, simple, and quick. Common ingredients that one usually has on hand! I used red onion instead of yellow and it came out great still. Next time I will add a bit extra tomato paste. Tip: drizzle extra yellow mustard over your own bowl before adding the parsley and pickles, super yummy!

I made this tonight and it was good! I cut down the Italian seasoning to just over a half a teaspoon.  I didn't use the mustard, due to sodium.  Excellent recipe. Thanks!

This Cozy Hamburger Soup = Comfort Food To The Max

This hearty hamburger soup is loaded with ground beef, potatoes and  an assortment of vegetables, all in a savory broth. The perfect easy dinner option that the whole family will love!

onion (finely diced)

carrots (peeled, quartered and sliced)

celery (thinly sliced)

beef (I use 90% lean)

garlic

salt and pepper

can diced tomatoes (do not drain)

tomato sauce

beef broth

russet potato

green beans (fresh

parsley

Heat the olive oil in a large pot over medium high heat. Add the onion, carrots and celery to the pot.

Cook for 5-6 minutes or until softened.&nbsp;

Add the ground beef to the pot and season with salt and pepper to taste.

Cook, breaking up the meat with a spoon, until browned and mostly cooked through. Add the garlic and cook for 30 seconds more.

Add the tomatoes, tomato sauce, Italian seasoning, beef broth and potato to the pot; bring to a simmer.

Cook for 25-30 minutes or until potatoes are tender. Taste and add salt and pepper as desired.

Stir in the corn and green beans and cook for 5 minutes more. Sprinkle with parsley and serve.

Beef & Lentil Soup with vegetables

tbsp Moroccan spice mix (store-bought)

tsp allspice ((mixed spice will work too))

cumin powder

paprika

tsp black pepper

lentils ((or 2 cans, drained, Note 3))

carrots (*,

celery

zucchinis (*(small,

/ 4 oz green beans

/ 28 oz crushed canned tomato

stock

water

Yogurt ((plain or Greek))

Coriander/cilantro leaves, onions

Mix spices in a small bowl.

Saute onion &amp; garlic: Heat oil in a large pot over medium high heat. Cook onion and garlic for 3 minutes until golden on the edges.

Brown &amp; spice beef: Turn heat up to high, add beef and cook until it&#039;s no longer red, breaking it up as you go. Add 2 tablespoons of the Spice Mix and cook it for a further 2 minutes - it will smell so good!

Carrot &amp; celery: Add carrot and celery, then stir for 1 minute. (If using your own veg mix, add the veg in this step that will hold up to full 25 min simmer time)

Make broth: Add water, beef stock, canned tomato, lentils and remaining Spice Mix too. Give it a stir, bring to simmer, then place lid on and reduce to medium low so it&#039;s simmering gently. Lentils will take 25 - 30 minutes to cook until soft. Very old lentils can take 5 - 10 minutes longer.

Simmer 15 minutes then add zucchini &amp; green beans.

Simmer 10 minutes longer or until lentils are soft (ie. 25 minutes total).

Serve! Taste and add more salt if desired. Ladle into bowls and serve with yogurt and coriander.

My Grandma’s Hamburger Soup is comforting and delicious whether you make it with or without noodles.  Packed with seasoned lean ground beef, veggies and barley, it’s a hearty “stick to your ribs” kind of meal. Prepared on the stovetop or in a slow cooker, it’s a long time family favorite of ours.

Hamburger Soup With or Without Noodles

onions

carrots (sliced)

celery (sliced)

Tablespoon parsley

barley (I use

ketchup

basil

instant beef bouillon

Salt and Pepper to taste

Egg Noodles (optional)

In a large pot, salt and pepper ground beef to taste, and brown it with your onions.

Drain. Place back in the pot. *at this point you could add ingredients to your crockpot or continue on the stove*

Add the rest of your ingredients and bring to a boil.

Reduce and Simmer for 1 1/2 hours.

Add your prepared noodles before serving if desired.

If you make it in your crockpot, just cook it on low all day.

9-Can Beef Soup {Stovetop or Crock Pot}

½ lbs. ground beef

finely-diced onion (I use frozen pre-diced onion

(28 ounce) can diced tomatoes ((this is the large size, or you can use two smaller cans))

(15.25 corn

(16 ounce) can pinto beans

kidney beans

black beans

(1 ounce) packets dry Ranch salad dressing and seasoning mix

Brown the beef and onion in a large Dutch oven over medium-high heat until the meat is no longer pink. Drain off fat and return beef and onion to the pot.

Add remaining ingredients to the pot (do NOT drain the cans). Bring to a boil, reduce heat to low, and simmer (covered) for 1-2 hours. Taste and season with salt and pepper, if necessary.

Ladle into bowls, add desired toppings, and serve!

STOVETOP METHOD:

Brown the beef and onion in a large Dutch oven over medium-high heat until the meat is no longer pink. Drain off fat and transfer beef and onion to a slow cooker.

Add remaining ingredients to the slow cooker (do NOT drain the cans). Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Taste and season with salt and pepper, if necessary.
