Fast &amp; Easy Chicken Tacos with Poblanos

corn tortillas

Preheat oven to 325 degrees F. Wrap tortillas in foil stacked in two packages of four. Place tortillas in hot oven to warm.

Meanwhile, heat oil in a large skillet over medium-high heat. Add poblano, onion and garlic, and cook, stirring often until the vegetables are softened and beginning to brown, 5 to 8 minutes. Add chicken, and cook, breaking up into small pieces as it becomes opaque, until the chicken is completely cooked, 4 to 6 minutes.

Sprinkle with chili powder, cumin, salt and chipotle, and stir to coat until fragrant, 30 to 90 seconds. Add tomato paste and water and stir until the tomato paste is dissolved into the water and it forms a sauce to coat the chicken mixture.

Serve the chicken in the warm tortillas and top with desired toppings.

Very good. Didn't use the tomato paste but did use chicken broth to simmer instead of water. Didn't miss it at all.

20 Minute Ground Chicken Tacos with Poblanos

Recipe video above. The chicken version of the beloved Aussie beef rissoles! You&#39;ll love the oozy little pockets of cheese.Makes 14 to 16 rissoles. Serves 4 to 5 as a meal, or one Dozer.

Chicken Rissoles

Colby cheese, shredded ((or cheddar, tasty, Monterey Jack

panko breadcrumbs ((Note 4))

tbsp finely chopped parsley (, optional)

tsp cooking/kosher salt

tsp black pepper

canola oil

Ketchup -

Pre-heat oven to 100°C/210°F (all oven types), to keep cooked rissoles warm. Place a rack over a tray.

Rissole mixture: Mix all ingredients together in a bowl using a wooden spoon.

Form patties: Wet your hands (stops the mixture form sticking). Measure out just shy of 1/4 cup and shape into a 6 cm wide x 1.5cm thick pattie (2.4&quot; x 0.6&quot; thick). See Note 1 if your mixture is too loose.

Cook: Heat 1 tablespoon oil in a large non-stick pan over medium high heat. Cook 5 - 6 rissoles at the time, 3 to 4 minutes on each side, until beautifully golden (as pictured). (Note 5 for baking)

Keep warm: Transfer to the rack on the tray and keep warm in the oven. Add more oil as needed and cook remaining rissoles.

Serve straight away with ketchup for dipping!

Ground Chicken Caprese is our take on Caprese Chicken, but with ground chicken instead of chicken breasts. Easy enough for everyday dinners but also fancy enough to serve on date night or at parties!

Ground Chicken Caprese

balsamic vinegar

mozzarella pearls

cherry tomatoes, halved

balsamic cheese

Start by adding the olive oil to a large skillet over medium heat. Add the diced onion and cook for 5 minutes until softened. Add the garlic, stir and cook 1 minute longer.

Add the ground chicken to the skillet, breaking up as it cooks until completely cooked through. Drain any drippings from the pan if needed.

Season the chicken with salt, oregano, basil and dried parsley. Pour in the tomato sauce and balsamic vinegar and stir to combine.

Add the mozzarella balls and the cherry tomatoes to the skillet, scattered around the pan. Bake for 7-8 minutes until the cheese is melted and the tomatoes are slightly blistered.

Garnish with fresh chopped basil, grated parmesan cheese and drizzled balsamic glaze.

AMAZING! so easy, but looked like I spent all day preparing. Whole family enjoyed it. Some of my kids added truffle oil which was yummy as well.
