Fast &amp; Easy Chicken Tacos with Poblanos

corn tortillas

avocado oil oil

limes, salsa, lettuce, cabbage and avocado

Preheat oven to 325 degrees F. Wrap tortillas in foil stacked in two packages of four. Place tortillas in hot oven to warm.

Meanwhile, heat oil in a large skillet over medium-high heat. Add poblano, onion and garlic, and cook, stirring often until the vegetables are softened and beginning to brown, 5 to 8 minutes. Add chicken, and cook, breaking up into small pieces as it becomes opaque, until the chicken is completely cooked, 4 to 6 minutes.

Sprinkle with chili powder, cumin, salt and chipotle, and stir to coat until fragrant, 30 to 90 seconds. Add tomato paste and water and stir until the tomato paste is dissolved into the water and it forms a sauce to coat the chicken mixture.

Serve the chicken in the warm tortillas and top with desired toppings.

Very good. Didn't use the tomato paste but did use chicken broth to simmer instead of water. Didn't miss it at all.

20 Minute Ground Chicken Tacos with Poblanos

Recipe video above. The chicken version of the beloved Aussie beef rissoles! You&#39;ll love the oozy little pockets of cheese.Makes 14 to 16 rissoles. Serves 4 to 5 as a meal, or one Dozer.

Chicken Rissoles

Colby cheese, shredded ((or cheddar, tasty, Monterey Jack

panko breadcrumbs ((Note 4))

tbsp finely chopped parsley (, optional)

tsp cooking/kosher salt

tsp black pepper

canola oil

Ketchup -

Pre-heat oven to 100°C/210°F (all oven types), to keep cooked rissoles warm. Place a rack over a tray.

Rissole mixture: Mix all ingredients together in a bowl using a wooden spoon.

Form patties: Wet your hands (stops the mixture form sticking). Measure out just shy of 1/4 cup and shape into a 6 cm wide x 1.5cm thick pattie (2.4&quot; x 0.6&quot; thick). See Note 1 if your mixture is too loose.

Cook: Heat 1 tablespoon oil in a large non-stick pan over medium high heat. Cook 5 - 6 rissoles at the time, 3 to 4 minutes on each side, until beautifully golden (as pictured). (Note 5 for baking)

Keep warm: Transfer to the rack on the tray and keep warm in the oven. Add more oil as needed and cook remaining rissoles.

Serve straight away with ketchup for dipping!

Ground Chicken Caprese is our take on Caprese Chicken, but with ground chicken instead of chicken breasts. Easy enough for everyday dinners but also fancy enough to serve on date night or at parties!

Ground Chicken Caprese

olive oil

mozzarella pearls

cherry tomatoes, halved

balsamic cheese

Start by adding the olive oil to a large skillet over medium heat. Add the diced onion and cook for 5 minutes until softened. Add the garlic, stir and cook 1 minute longer.

Add the ground chicken to the skillet, breaking up as it cooks until completely cooked through. Drain any drippings from the pan if needed.

Season the chicken with salt, oregano, basil and dried parsley. Pour in the tomato sauce and balsamic vinegar and stir to combine.

Add the mozzarella balls and the cherry tomatoes to the skillet, scattered around the pan. Bake for 7-8 minutes until the cheese is melted and the tomatoes are slightly blistered.

Garnish with fresh chopped basil, grated parmesan cheese and drizzled balsamic glaze.

AMAZING! so easy, but looked like I spent all day preparing. Whole family enjoyed it. Some of my kids added truffle oil which was yummy as well.

Fragrant and savory this Thai Basil Chicken recipe is simple, fast and flavorful!  Perfect for weeknight dinners or an easy delicious lunch.  Ready to serve in under 30 minutes.

Thai Basil Chicken 

shallots,

Fresno chilies chilies

coconut sugar or honey, or sugar

soy sauce or GF Liquid Aminos

fish sauce

red bell pepper

Thai basil leaves

ground anise seeds basil (optional)

Heat up a pan or wok to med-high heat.  Add 1 tablespoon of oil and the shallots, stir for 2 minutes.

Add garlic and hot peppers stir for 2 minutes more until shallots are lightly brown on the edges.  Scoop out into a bowl and set aside.

Without cleaning out the pan, add 1 tablespoon of oil, turn the heat to high, add ground chicken, black pepper, and salt.  Stir fry a couple of minutes until the chicken is cooked and starting to brown.  Sprinkle coconut sugar, soy sauce, fish sauce over the chicken and stir until incorporated.  

Add the red bell pepper strips and the shallot mixture.  Cook for about a minute, just enough to warm, keeping the peppers tender crisp.  Add basil leaves and turn the heat off.

Serve over jasmine rice.  Season with more soy sauce if desired.

Loved how simple but flavourful this was. I has asparagus so added that and it was a nice addition.

This dish turned out delish!!  I didn't have the exact chilis nor did I have Thai Basil, but I just went with what was at the store.  I was pleasantly surprised by the taste!  Easy to make and honestly tasted yum!

So quick and tasty - this is going in our regular weeknight rotation. I might add another pepper to increase the veg content, but it really doesn’t need any changes. I did use a few Serrano peppers instead of Fresnos because that’s what I could find…

Another stellar recipe from Feasting at Home!  I tried subbing ground super firm tofu for ground chicken and the flavor was outstanding but the tofu texture was a bit dry/fluffy.  Next time I will try dicing up the tofu quite mall and oven roasting with a little evoo before adding it to the pan.  Really loved the combination of flavors and gave me a chance to use that bottle of fish sauce in the fridge 😄

Add the oil to a skillet over medium heat. Place the ground chicken in the skillet and break up while browning until almost cooked through. Add the onions and garlic and stir to combine with the chicken. Drain any drippings from the pan.

Season the chicken with salt, pepper, garlic powder and oregano and then pour in the marinara sauce and parmesan cheese. Stir to combine and gently simmer for 5 minutes.

Add the mozzarella cheese to the top of the chicken, cover and let cook for another 3-4 minutes until the cheese has melted. Serve over spaghetti or your pasta of choice.

SO quick and easy to make and it is DELICIOUS!
