Guacatillo Sauce Recipe

Tomatillos, husk and core removed

Avocados

Jalapeño, seeded (or Serrano)

cilantro leaves

lime juice

Yellow onion, peeled

avocado oil

Prepare all ingredients as indicated and combine them in a bowl. Reserve the lemon juice on the side.

Transfer all ingredients to a blender and using a tamper, blend starting at a slow speed. Slowly increase the speed as the sauce becomes smooth and velvety. Blend for 1-2 minutes.

Add the lime juice towards the end of the blending time. Taste for seasoning and adjust as needed.

Transfer to an air-tight container and store in the fridge for 5 days for maximum freshness.

In a bowl mix your avocados and holy guacamole,&amp;nbsp; Then add in the diced tomatoes.&amp;nbsp;&amp;nbsp;

Combine chicken, green onions, cilantro, garlic, and chili lime spice.&amp;nbsp;

Using hands mix until fully combined

Divide meat into 4 equal portions and form your patties.&amp;nbsp;

Spray cooking spray on a medium-high heat skillet.&amp;nbsp; Add patties and cook 3-4 mins on each side, or until fully cooked.&amp;nbsp;

Top with slices of pepper jack and cover pan with large lid to melt.&amp;nbsp;

Remove patties from pan and place on the bottom part of your bun of choice. Add your fresh made guac and put the top bun on.&amp;nbsp;
