Gulab jamun are a popular classic Indian sweet made of milk solids and sugar. This post shares 2 gulab jamun recipes. one with milk powder and the other with khoya.

Gulab jamun recipe | How to make gulab jamun

milk powder

tbsp

all-purpose flour

tsp ghee (or oil)

tbsp ghee

tbsp milk ((use more as needed))

tbsp curd ((yogurt or ¾ tbsp lemon juice))

Baking soda (or 1/8 th tsp)

Ghee (or oil

tsp pistachios (chopped)

Sugar

water

green cardamom

rose water

Mix together water, sugar and crushed cardamoms in a pot.&nbsp;

Boil the syrup until it turns slightly sticky.

Turn off the stove before it goes to a 1 string consistency. 

If it reaches a 1 string consistency, then add 2 tbsp of water and mix.

Add rose water and mix. Set aside to keep it hot.

Preparation of sugar syrup

Fluff up the flour in the jar with a fork and then measure correctly.

Mix together flour, milk powder and soda in a bowl. Either sieve it or mix uniformly.

Add ghee to it.&nbsp; Mix well.&nbsp;

In a small bowl, mix together lemon juice or yogurt and 2 tbsp milk. 

Pour 1.5 tbsp of this to the flour mixture. 

Begin to bring the flour together to make a dough.

If the dough is too dry, add little more milk &amp; curd until you get a smooth dough. Do not add a lot. Use only as needed. 

The dough turns sticky. Grease your fingers and make a ball.

The dough must not be soggy. It must hold the shape well and should be smooth without any cracks.

Divide to 14 to 18 equal sized portions. Grease your hands and roll to smooth balls.

They must be smooth without any cracks or lines otherwise you will find many cracks on the gulab jamuns. Keep them covered.

Making gulab jamun balls

Heat up the pan with ghee or oil on a medium heat.&nbsp;

Also check if the syrup is hot. If it is not hot, heat it up a bit. It must be hot and not very hot.

To check the right temp, you can drop a small piece of dough in the oil.

It must rise slowly without changing its color.

If it rises rapidly then you will need to cool the oil a bit before frying.

When the ghee is just medium hot, add the balls.

Make sure the oil is not very hot else the gulab jamuns will brown without cooking well.

Fry the balls on a medium flame for 1 to 2 mins. Then regulate the flame to low flame &amp; fry until golden. Keep stirring gently to fry them uniformly.

Add them to the hot syrup. Allow them to rest for 3 hours and serve.&nbsp;

Garnish gulab jamun with chopped pistachios.

Khoya Gulab jamun recipe | How to make gulab jamun

Gulab Jamun is an Indian sweet. Gulab Jamun are soft delicious berry sized balls.

Gulab Jamun

tbsp butter

milk

tbsp plain flour

tbsp semolina

tsp baking powder

ghee or any other oil

Add 3 cups sugar and 3 cups water to a pot.

Add 4 cardamom pods into the pot.

Boil this until the syrup turns slightly sticky.

Sugar syrup put aside and close.

For making sugar syrup

Add 2 cups of milk powder, 2 tbsp plain flour and 1/2 tsp baking powder to a bowl and mix it. make sure the mixture is uniform.

Then add butter to that mixture and mix again everything.

Add semolina, 7-8 tbsp milk and make a soft dough.

Keep the dough for few minutes.

Devide the dough to equal protions and make smooth balls without any lines or cracks on them.

Add the balls gently and fry them on a medium heat for 1 or 2 minutes.

After 2 minutes of frying, reduce the flame to low and fry until golden.

When they turn golden, take them off the pan and drain them very well.

The sugar syrup heat again, it must be hot and not very hot.

Add the balls directly to the hot sugar syrup. Keep ith aside for 3-4 hours.

For making Gulab Jamun

This Gulab Jamun Cake is inspired by an Indian dessert with the same name. This cake is very moist and is flavoured with saffron, cardamom and rosewater. 

Gulab Jamun Cake

strands Saffron (broken)

g Milk

Lemon

250 g Butter (room temperature)

Eggs

250 g Self Raising Flour

tsp Baking Powder

tsp Cardamom Powder

Water

tsp Saffron Threads

tsp Rose Water (Adjust quantiyy according to taste)

Cinnamon Stick (Optional)

175 g Icing Sugar

Cardamom

Lemon (Juice)

Syrup

Combine the milk, saffron strands and lemon juice in a cup and set aside.

Buttermilk

Preheat oven to 160 C/180 C fan/Gas Mark 4.

Grease bundt tin (I used the Bake Easy Spray) or grease and line a 20cm round tin.

Meanwhile, combine the sugar and butter in stand mixer and mix on medium high for 7 - 8 minutes.

Add eggs one by one, making sure each egg is fully incorporated before adding the next one.

Stir in flour, baking powder and cardamom and mix through for 1 minute.

Now add the buttermilk and mix until just combined.

Bake in preheated oven for 35 minutes or until a skewer inserted into the middle comes out clean.

Leave to cool for 10 minutes before inverting out of the tin.

Cake

Now make the Syrup. Combine all the ingredients for a syrup in a pot. Simmer over medium heat for  7 - 8 minutes. Then set aside.

Combine the ingredients for the icing sugar in a bowl and whisk with a fork to combine. You may need to add a little extra syrup if it&#039;s a bit dry.

Icing Sugar

Poke cake with skewer all over.

Pour over the syrup whilst still warm.

Allow cake to cool completely before adding icing.

Decorate with rose petals, pistachios, almonds. (Optional).

Assembly

Gulab Jamun Recipe

Tbsp All Purpose Flour/Maida

Tbsp Ghee

Cups Water

Cardamom pods, crushed

8-9 Saffron strands, broken

Rose water essence

For best results, weigh the milk powder. We do tend to put more or less in our measuring cup and so the texture gets affected. I weighed the milk too 62g plus i added a Tablespoon more to the Cup. I didn&#39;t have to add any extra milk.

Sift together the Milk powder, All purpose flour and baking powder. Sifting really helps to make smooth crack free balls. Do not skip. After Sifting, mix it thoroughly so that the baking powder can get distributed evenly.

Mix the Milk. Add all at once and mix with a spoon or a spatula. Do not knead with fingers. It should be a Sticky dough. Cover airtight and Allow to rest at least 10-15 mins.

After 15 Mins, Add ghee. Mix well. Make smooth balls by greasing your hands with ghee or oil. I used a measuring Tablespoon to scoop out equal quantities. Makes around 10-11 balls. Cover with a kitchen towel to avoid them drying out. Fry them immediately in hot oil or ghee.

For Sugar Syrup, Mix Sugar and Water in a pot. Heat it till the Sugar dissolves and bring to a boil. Once boils, add cardamom pods and saffron strands. Simmer it on low heat for another 5-6 mins. Do not wait for any strong consistency to form. Add the rose water essence at the end and keep covered in a warm place.

FOR DOUGH
1 Cup | 115g Milk powder (measure in gms recommended)
1/2 Tsp Baking powder
2 Tbsp All Purpose Flour/Maida
1/4 Cup | 62g plus 1 Tbsp Full fat Milk, room temp
1 Tbsp Ghee

3 Cups of Ghee or Oil to Fry (I used 2 Cups Ghee and 1 Cup Oil)

FOR SUGAR SYRUP
2 Cups | 400g Sugar
2 Cups Water
3 Cardamom pods, crushed 
8-9 Saffron strands, broken 
Few drops of Rose water essence 

𝗠𝗘𝗧𝗛𝗢𝗗
1. For best results, weigh the milk powder. We do tend to put more or less in our measuring cup and so the texture gets affected. I weighed the milk too 62g plus i added a Tablespoon more to the Cup. I didn't have to add any extra milk.

5. Fry them immediately in hot oil or ghee on Low Heat till Golden brown. Frying in Ghee will make a lot of difference in the taste. I used 2 Cups Ghee and 1 Cup Sunflower OIl and still had a great rich taste. Please Do not skip the Ghee. After frying, Drop them in the warm sugar syrup. Soak overnight or atleast 5-6 hrs.

 6. For Sugar Syrup, Mix Sugar and Water in a pot. Heat it till the Sugar dissolves and bring to a boil. Once boils, add cardamom pods and saffron strands. Simmer it on low heat for another 5-6 mins. Do not wait for any string consistency to form. Add the rose water essence at the end and keep covered in a warm place.
