Light My Fire Flaming Habanero Hot Sauce Recipe

tsp liquid smoke

white vinegar

tbsp salt

tbsp black pepper

tbsp cumin

tsp coriander

tsp ground ginger

tsp allspice

Be sure to use rubber/latex gloves when handling habanero peppers. The seeds in the peppers contain a lot of the heat. You can use less peppers and seed all of the habaneros for a milder sauce.

Place the prepared peppers in a blender or food processor. Add the peaches, molasses, brown sugar, mustard, garlic, liquid smoke, vinegar and spices. Process until the mixture is liquid and smooth.

Pour the habanero sauce into a pan and over medium-high heat bring to a boil. Once it boils, lower the temperature so that the sauce simmers for 10 minutes.

Let cool and pour into clean jars. Refrigerate overnight before using. Store in refrigerator.

Spicy Habanero Hot Sauce

garlic ((smashed and peeled))

Tbsp lime juice

tsp sea salt

Tbsp Water

Add peppers, onion, garlic, lime juice, and salt to a small blender or food processor and blend until smooth. Add water as needed until creamy and smooth - about 1/4 cup (60ml // adjust amount if altering batch size).

Taste and adjust flavor as needed, adding more lime juice for acidity, salt for saltiness, habanero peppers for spice, or garlic for "zing."

Store covered in the refrigerator for about 7 days, oftentimes more. Freeze leftovers in an ice cube tray and store in the freezer for individual use up to 1 month.

Habanero Salsa

Roma tomatoes (or 4 tomatillos)

garlic

lime juice

tbsp orange juice

Roast the habaneros, garlic, and tomatoes. 

Add the habaneros, whole unpeeled garlic cloves, and tomatoes to a cast iron skillet. Cook until habaneros begin to char and brown, about 5 minutes, stirring as they char. These can also be broiled in the oven for 5-8 minutes, flipping always, until they are lightly charred. Let the habanero, tomatoes, and garlic cool. Using plastic gloves (habaneros are super spicy), remove the stems from the peppers and peel the garlic.

Blend with citrus juice and salt. 

Add to a blender or food processor along with the lime juice, orange juice, and salt. Blend until is smooth or leave it chunkier for more texture. Be very careful when opening the blender or food processor because the vapor will be spicy and can burn your eyes.
