400 g de viande hachée

jaune d'oeuf

Hacher l'oignon et l'ail.
Les faire revenir dans le beurre jusqu'à ce qu'ils soient tendres.

Ajouter les tomates coupées en dés, la viande hachée, la farine, du sel, du poivre et les herbes de Provence. 

Quand tout est cuit, couper le feu et ajouter le jaune d'oeuf et un peu de parmesan. Bien mélanger.

Préchauffer le four à 200°C (thermostat 6-7). 
Etaler au fond du plat à gratin. Préparer la purée. L'étaler au dessus de la viande. Saupoudrer de fromage râpé et faire gratiner.

PARMENTIER DE SAUMON DE NORVEGE

500 g de pomme de terre cuites à l’eau

200 ml de crème fraîche

400 g de saumon frais en petits dés

échalotes émincées

Ecrasez les pommes de terre cuites à l’eau avec la crème fraîche, le sel et le poivre. 

Déposez une couche de saumon en dés, les échalotes, salez et poivrez. Recouvrez avec la purée de pommes de terre et faites cuire au four 35 mn à 210°C

Shepherd's pie is a traditional British dish, made from lamb or mutton and mashed potatoes that is similar to French hachis parmentier.

carrots (, finely diced)

celery (, very finely diced)

garlic (, crushed)

tomato paste

ketchup

red wine

Baking dish

Cook the potatoes with their skin in a large pot filled with slightly salted boiling water.

Once cooked, drain and peel.

Purée them with a potato masher.

Meanwhile, in a small saucepan, heat the milk until boiling.

Gradually add the milk to the mashed potatoes and whisk everything.

Stir in the butter while whisking.

Season with nutmeg, pepper and salt.

In a large Dutch oven, heat 3 tablespoons of butter and brown the onion over medium heat for 2 minutes, stirring regularly.

Add the garlic and sauté for 1 minute.

Add the carrots and celery. Mix well.

Add the thyme, tomato paste, ketchup and flour. Season with salt and pepper. Mix well.

Cook on low-medium heat for 5 minutes, stirring regularly.

In a large skillet, heat the remaining butter and cook the meat for 10 minutes over medium heat, stirring very little so that the juice does not evaporate.

Add the meat in the vegetable stew and add the red wine gradually. Mix well.

Add the Worcestershire sauce and all the juice of the meat. Mix well.

Cook for 1 minute.

Pour all the mixture into a baking dish, spreading evenly and refrigerate for 1 hour.

Filling

Preheat the oven to 400 F (200˚C).

Remove the dish from the refrigerator and gently cover the meat with the mashed potatoes.

Spread evenly and, using a knife, make regular shapes on the top.

Bake for 35 minutes.

Let stand 10 minutes before serving.

g de foie de veau ou d'agneau

pommes de terre pour faire une purée

belles tomates

cuillère à café d'ail haché

Poivre doux

Poivre noir

Sel et huile d'olive

Mettez le dans une marmite ou un faitout, ajoutez 2 cuillères à soupe d'huile d'olive, l'ail, le poivre doux le poivre noir et le sel.

Portez à feu doux environ 10 minutes en remuant de temps à autre.

Réduisez la tomate en purée, ajoutez la à la marmite avec 1/2 verre d'eau.

Laissez mijotez quelque 20 minutes. La sauce doit être épaisse à la fin de la cuisson.

Dans un cercle dressez la purée en premier puis mettez 2 à 3 cuillères à soupe de foie par dessus.
