Butter Halloumi Curry

(8.8 ounces) block of halloumi, sliced into chunks

quinoa

½ tsp salt ((for the quinoa))

olive oil

chickpeas

arugula ((rocket))

tsp sweet paprika

lime

oz halloumi cheese ((5 ounces = 150 grams))

Cook

Cook the quinoa according to packet instructions with a little salt. We find it best to use double the amount of water to quinoa, and cook until water has evaporated. Take off heat and cover with a tea towel for five minutes.

Quinoa:

In the meantime, drain and rinse the chickpeas. Give the arugula/rocket a quick wash and shake. Put them into a large bowl.

Mix the juice and zest of the lime with the olive oil. Add the sweet paprika.

Dressing and salad:

Chop

Chop the halloumi into bite-size pieces and fry for 2-3 minutes each side.

Combine and serve

When the quinoa is ready, combine it with the chickpeas and arugula/rocket. Stir through the lime-oil mix. Serve in bowls with the halloumi on top. Enjoy!

An easy vegetarian option for Christmas dinner! Whole baked halloumi with a cranberry, rosemary and garlic topping. It&#039;s simple to prepare, doesn&#039;t require much oven space, and slots into your holiday meal beautifully as a meatless protein centerpiece!

Christmas Halloumi

225 g block of halloumi (halved widthwise)

cranberry sauce

garlic (thinly sliced)

rosemary

butter

Preheat the oven to 200C / 390F.

Prepare your halloumi. Slice in half widthways and lay onto a lightly oiled baking tray. Cut a criss-cross pattern through the top, cutting about 1/3rd of the way down, and then brush with a little bit of olive oil.

Bake for 5-8 minutes, just until the halloumi starts to soften and the cuts open up.

Add about 3-4 garlic slices per slice, wedging it into the gaps.

Now spread cranberry sauce over the top, making sure to push some down into the gaps. Add the rosemary sprig on top, then place a little bit of butter directly over the rosemary.

Bake for a further 10-15 minutes, until the exposed parts of the halloumi are crisp.

Serve.

Cook the bulgur wheat following pack instructions. Meanwhile, in a non-stick pan, fry the halloumi in 2 tbsp oil for 3-4 mins on each side until golden and starting to crisp up.

Mix together the lime zest and juice, paprika and remaining olive oil, and stir this through the bulgur wheat using a fork. Toss in the chickpeas and rocket, and serve with the fried halloumi slices.
