Homemade Haluski With Cabbage and Onion

Slice the onions and cut up the cabbage in the same fashion.

Melt butter in skillet. Add cut up onions and cabbage. Cook over medium heat for approximately 30 minutes, or until browned/caramelized. Add cooked dumplings. Toss well, serve hot.

Mix flour, eggs, salt and water. Beat well until you have a medium stiff dough.

Place dough on a plate and drop by spoonfuls into a pot of boiling salted water. Cook for 5-7 minutes.

Strain and rinse with cold water.

Place in pot with cabbage mixture. Mix well.

Prep

Dough

Place the flour and salt in a large bowl. Make a little well in the middle. Place whisked eggs, water, and melted butter into it. Using a fork, work the ingredients together to form the dough. Finish up combining the ingredients by hand until you get a smooth, even texture.

Shape

Divide the dough into eight even pieces. On a floured surface, roll each piece into a long string. Dice each string into small pieces.

Store

At this point, you can either freeze the raw dough for later use or move onto the next step to cook them.

Cook

Bring a pot of salted water to a boil. Toss in the raw dumplings and boil them until they float to the top.

Dice mushrooms and sauté them in a buttered skillet for about 5 minutes. Dice the onions and add them to the skillet, cooking them until softened. Season with salt and pepper.

Bacon

Stir in bacon pieces, sauté for 5 minutes.

Brown

Place dumplings into a nonstick skillet and add in sautéed mixture and butter. Cook until they turn golden brown.

The Best Pittsburgh Haluski - Fried Cabbage and Noodles in Butter

If you’re adding the kielbasa, to an Emile Henry 5.5 Quart Dutch Oven over medium heat, add the kielbasa and sauté until brown on both sides; remove and set aside. Go to Step 2 if not adding meat.

To the Emile Henry 5.5 Quart Dutch Oven over medium heat, add 3 Tablespoons of butter. When the butter has melted, add in the onions and sauté for 3 minutes, stirring often. Add in a third of the cabbage, stir, and add 1 teaspoon each of sea salt and black pepper. Stir and add one more third of the cabbage. Stir then add 2 Tablespoons of butter, mix that in then add the remaining third of the cabbage. Stir to combine, put the lid on, and reduce the heat to low.

Cook for 15-23 minutes or until the cabbage has softened and is no longer tough/toothsome; stir often.

While the cabbage is cooking, cook the egg noodles in salted water for one minute less than the package instructions. Drain and set aside.

When the cabbage has softened fully, stir it, add in the kielbasa (if you are adding it), stir then add in the cooked egg noodles. Add the remaining 3 Tablespoons of butter stirring it in. Allow to cook for about 5-6 minutes or until everything is incorporated, and the noodles are warmed all the way through. Taste and if needed, add the remaining 1/2 teaspoon each of sea salt and black pepper.

Serve. Some will add sour cream to the top – go with your preference.

Have you ever had Perogi made with cabbage filling?
A friend would go to  little Armenian Church on Sundays. It could have been during Lent. My Mom would give him a couple of dollars and a casserole dish. He would bring it back full of these wonderful homade Perogi. I was hooked for life!!!
Can't find cabbage filled anywhere though. Someday, I'll have time to make my own!
