Hamburger Hash is a budget-friendly meal that is made from ground beef, diced onions and diced potatoes. Serve with some fried eggs!

OLD SCHOOL HAMBURGER HASH

lb Oven Ready Onion Medley Little Potatoes (cooked and diced (or leftover cooked potatoes))

lb beef

shallot (diced)

salted butter

salt and pepper (to taste)

If you aren't using leftover roasted or cooked potatoes, you'll need to prepare some. These Oven Ready/Grill Ready Little Potatoes couldn't be easier. They come in an aluminum baking tray and the seasonings are already provided.

In a large skillet over medium-high heat, brown and crumble the ground beef along with the diced shallot. Season well with salt and pepper.

Drain any excess grease, place 2 tablespoons of butter into the pan to melt.

Put cooked beef back into the pan, then add in the diced Little Potatoes. Turn the heat up and season the mixture with salt and pepper and stir.

Using the back of a spatula, press down on the hash mixture. This will help the the beef and potatoes to get a little crisp. Let it cook for a couple of minutes. Then flip it all over and do the same process again.

At this point, you can turn down the heat and crack a couple of eggs over top, place the lid on and allow them to cook for a couple of minutes. Or you can serve it, as is, on the side.

Hamburger Hash, with it one skillet prep, combines seasoned potatoes, veggies, &amp; hamburger topped with cheese for a simple toss together, yet filling meal!

Hamburger Hash

Medium Russet Potatoes,

Tablespoons Vegetable Oil

Cup Yellow Onion, (Chopped)

Red Bell Pepper, (Chopped)

2-3 Clove Garlic, (Minced)

Ounces Ground Beef,

Teaspoon Chili Powder

Cups Sharp Cheddar Cheese, (Grated)

Salt

Black Pepper

fresh parsley, (finely chopped)

Preheat broiler to high.

Peel the potatoes and cut them into small cubes. Place cubed potatoes in a bowl of cold water, swishing them around&nbsp;to remove starch. Drain in a colander and rinse. Spread potatoes out paper towels and pat dry.

Add oil to a cast iron skillet and heat over medium-high heat. Add the potatoes and cook, stirring as needed, until the potatoes are fork tender and browned on most sides.&nbsp;

Sprinkle potatoes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside.

Stir in the onions, red bell pepper and garlic to the skillet. Cook over medium heat, stirring until golden brown.

Stir in the beef, chili powder, and 1/2 teaspoon salt,&nbsp;1/4 teaspoon black pepper and cook, breaking up any clump, until brown, about 5 minutes. Drain any excess fat.

Add the potatoes back to the skillet and mix in. Sprinkle cheese evenly over&nbsp;the top of the skillet.&nbsp;

Place skillet under preheated broiler until cheese is melted, about 1 minute. Garnish with fresh parsley and serve.

Slow Cooker Cheesy Hamburger Hash

lbs lean ground beef

potatoes (pared and diced (see NOTES))

tomato sauce

10.75 oz can cream of mushroom soup

green bell pepper

red bell pepper

onion

beef broth/stock

cheddar cheese

Brown ground beef and drain any fat.

In a large bowl, mix the browned ground beef, potatoes, tomato sauce, soup, peppers, onion and beef stock.

Place in a 4-6 quart slow cooker.

Cook on low 6-8 hours, high 3-5 hours. (see NOTES)

Stir in cheese until melted and serve immediately.

This dish is pure comfort food! Beef, potatoes, cream of mushroom soup simmer together for a dish you will love.

cream of mushroom soup ((two 10.75 oz. cans) do not add water)

can corn, (drain well)

lbs. russet potatoes ((about 5 cups diced, cut into SMALL 1/2 inch cubes))

shredded sharp cheese, (divided)

Brown the beef and onion together in a large skillet over medium-high heat. Drain the fat.&nbsp;

Wash and dry the potatoes. Cut them into cubes, leave the skin on. Add the potatoes to the slow cooker. Pour over the meat and onion into the slow cooker. Add the soup, salt, pepper, garlic powder, corn and half of the cheese. Stir. Spread out the hash into a flat layer.&nbsp;

Cover and cook on LOW for 5 hours without opening the lid during the cooking time.

Add the remaining shredded cheese evenly over the hash. Cover and let the cheese melt for about 10 minutes.

Preheat the oven to 350 degrees.

Brown ground beef and onion, garlic,&nbsp;and seasoning.

Add in the canned tomatoes, and put into a casserole dish, cover. Bake at 350 degrees for 1 hour.

 Sprinkle on cheese during the last 10 minutes of baking.

Pound Ground Beef

Yellow Onion (diced)

Bag Frozen Diced Hashbrowns (32 oz bag)

Water

Garlic

Heat the vegetable oil in a large skillet or cast iron skillet over medium high heat.

Add in the ground beef and diced onions.  Sauté in the beef and break it up until the beef is browned and the onions are soft.

Add in the minced garlic and cook for 1 minute until the garlic is aromatic.

Stir in the diced hash brown potatoes, salt pepper and water.  Bring the mixture to a low boil.  Reduce the heat to medium, cover and cook for 10-12 minutes until the hashbrowns start to get soft.

Uncover and continue to cook over medium high heat for 10-12 more minutes until the water cooks off and the hashbrowns are browned.  Toss occasionally to prevent the mixture from burning.

Remove from heat, serve warm and enjoy!
