Deliciously chunky vegan Harry Potter Christmas cookies - (almost) like Mrs Weasley used to make them!

This recipe is one of my favourites from childhood and also the first cookie recipe I ever tested out by myself. It originates from a recipe I found in the cover of my Harry Potter tapes and was named 'Mrs Weasley's Christmas cookies'. I've veganised the recipe since to still enjoy these delicious and addictive chocolate cookies nowadays.

Vegan Harry Potter Christmas Cookies

tbsp ground flaxseeds

water

shredded chocolate

ground hazelnuts (I get mine in bulk from Buywholefoodsonline)

self-raising flour

tsp baking powder

coconut sugar

soft vegan butter

Tbsp raw cacao powder

Combine 3 Tbsp flaxseed with 5 Tbsp water in a small bowl and set aside in the meantime.

Use the time to shred your chocolate (unless you&#8217;re using ready-made sprinkles) and combine it with the flour, baking powder, ground hazelnuts and cacao powder.

In a separate bowl whisk the soft vegan butter with the coconut sugar and flax &#8220;egg&#8221;, then gently pour this wet mix into the dry ingredients and combine.

Use 2 teaspoons to portion the cookies onto a non-stick baking parchment, leaving at least 1-1.5 inches in between the cookies as they can drastically expand during the baking process.

Don&#8217;t worry about the shape of the cookies too much, they will mostly flatten out during the baking time, but if you want to ensure you get neat cookies, simply roll each cookie dough portion in your hand to neaten it.

Bake in the middle of your oven for 12-15 minutes, then remove from the oven and let them cool down completely before removing them from the parchment.

280 g/ 10 oz/ 1 cup + 2 ½ tablespoons unsalted butter (See note 1)

315 g/ 11 oz/ 7/8 cup + 1 tablespoon golden syrup (See note 2)

110 g/ 3.8 oz/ 2 ¼ cups fresh breadcrumbs (See note 3)

Add the third tablespoon of water if necessary, sometimes I do add it, sometimes not, it depends on how exactly you weigh the flour and sometimes on the brand of the flour itself. The dough should hold together when you press a little bit of it between your fingers.

My pie dish has a diameter of 23 cm/ 9 inches, so I rolled the dough into a circle of about 26 cm/ 10 inches in diameter. It is loose-bottomed (like a springform), which makes things easier for me when removing the pie from the form. A regular dish works as well, but you will have to be more careful when taking the tart out of the form. Or use a ceramic pie dish, so you can cut and serve the tart directly from the dish.

If you want to decorate the treacle tart to resemble Harry Potter, cut out the glasses, the scar, and the mouth. You will have leftover pastry in this case. You can cut it into biscuits and bake them separately until golden. Or freeze the leftover pastry for making a small pie some other time.

Bake the tart for 10 minutes at 200 degrees/ 400 degrees Fahrenheit, then reduce the heat to 180 degrees Celsius/ 350 degrees Fahrenheit and continue baking for another 25 minutes until the crust is golden brown and the filling puffs up in the center. The filling should still be slightly jiggly.

Homemade Pumpkin Juice

vanilla bean (split (or 1/2 teaspoon vanilla extract))

Soak the apricots in the water for at least 4 hours or overnight in the fridge.

Add the apple juice, cinnamon stick, allspice, ginger and vanilla bean to a saucepan. Bring almost to boil, then turn heat to low and simmer for 10 minutes. Take off heat and let it cool a bit.

Add the apricots and the soaking water to a blender and blend until smooth.

Add the pumpkin puree and nutmeg and blend again.

Strain the apple juice mixture into the blender to make sure only the liquid comes through. Blend until smooth.

Put a fine mesh strainer over a pitcher and strain the pulp so that only the thick juice is in the pitcher.

I decided to make my own Pumpkin Juice recipe after visiting the Wizarding World at Universal Studions and I am thrilled with the results. There’s more to pumpkin juice than just juicing a pumpkin! (Hint - I think it's easier!)

My version simmers spices, fresh ginger, and vanilla bean – with apple juice to infuse it. Then it’s blended with soaked dried apricots, pumpkin puree, and a little nutmeg. Then you strain it and you get about 3 cups of homemade Pumpkin Juice.
