This hashbrown breakfast casserole recipe is delicious and easy to put together! It doubles as a vegetarian dinner and leftovers save well.

Hearty Hashbrown Breakfast Casserole

(2 cups) shredded cheddar cheese

Preheat the oven to 375 degrees Fahrenheit. Grease a 9&#8243; x 13&#8243; casserole dish.

Finely dice the bell pepper. Thinly slice the green onions.

Add the frozen hash browns, chopped pepper and green onion, and shredded cheese to the casserole pan and mix to combine. Sprinkle with the chili powder, garlic powder, cumin and 1 1/4 teaspoons kosher salt over the veggie mix and stir to combine.

In large bowl, whisk the eggs. Then whisk in the milk, sour cream and the remaining 1/2 teaspoon kosher salt until fully combined (small dots of sour cream are ok). Pour the egg mixture over vegetables, then gently tap it down with a whisk to get everything evenly distributed.

Bake 50 to 55 minutes until eggs are set (insert a knife and check to make sure it is cooked through). Rest 5 minutes before slicing into pieces and serving. Leftovers save well: refrigerate for up to 5 days and serve them cold, room temperature, or warmed.

Easy Sausage Hashbrown Breakfast Casserole

hashbrowns (defrosted (this is usually half a bag))

breakfast sausage (browned)

cheddar cheese (shredded)

milk (or cream)

salt

Preheat

Preheat oven to 350 degrees and brown sausage. 

Layer defrosted hash browns in greased 7x11 or 9x9 casserole dish.

Layer

Layer the browned sausage over the hashbrowns.

Sprinkle cheese over top the sausage and hashbrowns

Prepare Eggs

Mix together the eggs with seasonings and milk and pour over the layers of hashbrowns, sausage, and cheese.

Bake

Bake for 40-45 minutes or until eggs are set.

Hashbrown Breakfast Casserole

Nothing satisfies like this Easy Hashbrown Breakfast Casserole! It&#x27;s loaded with eggs, ham, cheese, and of course, shredded potatoes, all seasoned perfectly and baked to savory, comforting perfection. This makes a fantastic Christmas morning or weekend breakfast and can even be made ahead so there is less prep in the morning.

Easy Hashbrown Breakfast Casserole

shredded hashbrowns

salted butter, (melted)

kosher salt, (divided)

black pepper, (divided)

evaporated milk

onion powder

smoked paprika

Pepper Jack cheese, (shredded)

sharp cheddar cheese, (shredded)

green onions, (chopped)

Preheat the oven to 400 degrees F. Spray a 9x13-inch baking dish with cooking spray.

Dump the frozen hashbrowns into the baking dish. Drizzle with the melted butter and season with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss, then spread in an even layer.

Bake for 25 to 30 minutes until the hashbrowns are lightly browned on top and softened. While the hashbrowns are baking, combine the eggs, evaporated milk, seasoned salt, remaining 1/2 teaspoon kosher salt, remaining 1/2 teaspoon pepper, onion powder, and smoked paprika in a large bowl. Beat well and set aside.

Remove the hashbrowns from the oven and reduce the oven temperature to 350 degrees F or turn it off if using the overnight approach.

Sprinkle the ham and shredded cheese over the potatoes, tossing a bit to combine. Pour the seasoned egg mixture evenly over the potatoes, making sure to get some around the edges of the pan. At this point, the casserole can be baked immediately or refrigerated overnight and baked in the morning.

Make sure to preheat the oven to 350 degrees F if using the overnight approach. Bake for 40-45 minutes until the edges start to brown slightly and the center is just set and doesn't jiggle. Check on the casserole at the 25-30 minute point to see if it is browning too much and cover with foil, if needed.

Garnish with the chopped green onions, then cut into large squares and serve hot.

Hashbrown Casserole Recipe

cheddar cheese (grated)

cream of chicken soup (or 1 (10-ounce) can, storebought)

sour cream

butter (melted)

onions

Stone House Seasoning

Ritz crackers

Prep. Preheat the oven to 400º F. Lightly butter a 9x13 baking dish or spray with nonstick cooking spray.

Mix. Stir together the thawed diced or shredded potatoes, half of the cheddar cheese, cream of chicken soup, sour cream, melted butter, onion, and Stone House Seasoning in a large mixing bowl. Spread into the prepared baking dish.

Bake. Bake until the potatoes are fork tender, about 30 minutes and then top the hashbrown casserole with the remaining cheddar cheese. Return the hashbrown casserole to the oven until the cheese has melted.

Serve warm.

Stir together the the Corn Flakes, Ritz Cracker, or Panko with the melted butter until well coated. Spread on top of the casserole and bake as directed.

For the Optional Topping:

It was great, much better (moist) than Cracker Barrell's.  Will be making again, just needed to add baking time.  I went with the ritz cracker and butter topping and it was perfect!

Luv this. My family likes chopped hash browns instead of shredded hash browns in this dish

I have frozen them a few times and I did NOT like the outcome. The taste was okay, but the consistency was off. I think it was the sour cream. 
I am a retired FACS (Home Ec) and have made huge batches of this recipe for school events. Easy to make ahead of time.
