Hasselback Chicken with Bacon, Cream Cheese, and Spinach is a delicious one-pan meal made in a casserole dish! The chicken is stuffed with Spinach Dip made with Parmesan, Mozzarella, and Cream Cheese.&nbsp; High in protein, low in carbs, gluten-free recipe.

Hasselback Chicken with Bacon, Cream Cheese, and Spinach

oz cream cheese (softened)

Mozzarella cheese

Parmesan cheese

garlic (minced)

spinach (chopped, thawed)

salt

chicken breasts

bacon (cooked, drained)

Preheat oven to 375 F.

Mix spinach dip ingredients together. Add salt to taste.

Slice the top of each chicken breast.  Make about 6 slits on top of each chicken breast, going 3/4 way down, without cutting it through.

Add chicken breasts to the casserole dish.

Fill the slits with the spinach dip.  You will only use half of the dip.

Slice cooked bacon horizontally into shorter slices.  Slide them into slits.  Or, just place them on top of chicken.  They will pop out anyway when cooking.

Cook at 375 F for 20-30 minutes until the chicken is cooked through.

Ingredients

Prepare all ingredients you will need for easier assembly.

Prepare the Chicken Breasts

Using a sharp knife, make 4-5 cutting slits into the chicken without cutting to the bottom of the chicken pieces.

Fill the Chicken Breasts

Fill each slit with one piece of tomato, mozzarella, and one bigger leaf of basil. Continue until you have filled all the chicken breasts prepared.

Baking Tray

At this point, heat the oven to 200 degrees C or 400 degrees F. Line a baking tray with parchment paper and gently place the chicken on top of the tray.

Olive Oil

Once your chicken breasts are spread nicely over the tray, sprinkle them generously with Extra Virgin Olive Oil.

Salt, Pepper, and Bake

As the last step, sprinkle salt and pepper. Place chicken in the oven and bake for approximately 25 minutes or until the chicken is cooked and reaches an internal temperature of 165 degrees f.
