Healthier Chocolate Chip Cookies

coconut oil

unsalted butter (softened)

sugar

brown sugar (packed)

vanilla extract

almond flour

oat flour

white whole wheat flour

salt

baking soda

chocolate chips

Place coconut oil and butter in large mixing bowl, beating to combine. Add sugars, mixing well then ad egg and vanilla. Stir well then add almond meal, oat flour, all purpose flour, salt, baking soda and chocolate chips. Stir until just combined. Cover and refrigerate overnight or at least 3-4 hours

Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper or a split liner. Use a small cookie scoop and place dough 1 inch apart onto baking sheet. Bake for 10-12 minutes, until baked through. Remove and let cool on baking sheet for 10 minutes before transferring. Enjoy room temperature.

Banana Oat Cookies a great make-ahead breakfast that just happens to be gluten free.

Banana Oat Cookies

banana (peeled)

(100 grams) rolled oats (check they're gluten free if required)

tbsp honey

tbsp coconut oil (either soft or melted)

chocolate

Preheat your oven to 170c/325f

Place the banana in a medium sized bowl and mash it with a fork. Add the oats, honey and coconut oil and give everything a good stir until combined. Leave to rest on the counter top for 10 minutes, so that the oats can absorb the moisture from the other ingredients.

After 10 minutes, add in the chocolate chips (reserve a few to sprinkle on once the cookies are cooked) ands the salt. Stir to combine.

Take a tbsp. of the mixture in your hand, roll into a ball and then squash to flatten into a thick disk (approx. 1cm thick). Place on a baking tray and repeat until all your mixture is used up.

Place in the oven and cook for 15 minutes.

Take out of the oven, sprinkle with the reserved chocolate chips and leave to cool.

Easy and quick to make, these whole wheat chocolate chip cookies are the perfect treat for the whole family. Ready to enjoy in 20 minutes and made with simple ingredients, these cookies are wonderfully chewy and crunchy.

Whole Wheat Chocolate Chip Cookies

+ 2 tbsp whole wheat pastry flour ((see notes))

tsp baking soda

tsp salt

unsalted butter, (soften)

tbsp sugar

brown sugar

tsp vanilla extract

Prep: preheat the oven to 350°. Grease or line a baking sheet with a silicone mat.

Whisk Flour: in a medium bowl whisk together the flour, baking soda and salt. Set aside.

Mix: in a large bowl with a handheld blender or in a stand mixer with a paddle attachment, cream together the butter and sugar until combined.

Add Ingredients: add in the egg and vanilla extract.

Cream: starting on low and increasing your speed to high, cream together the ingredients until soft and fluffy, 1-2 minutes.

Add Ingredients: add in the flour mixture and gently blend together on low.

Add Chocolate Chips: Add in the chocolate chips and stir with a wooden spoon or spatula by hand.

Spoon onto Baking Sheet: using a cookie scoop or 2 spoons, scoop 1 tablespoon of cookie dough onto the baking sheet, leaving several inches between the dough.

Bake: place the baking sheet into the oven and bake for 8-10 minutes and until just golden brown. Take the baking sheet out of the oven and let the cookies continue to cook for 2-5 more minutes. If your cookies are too fluffy, simply take the hot baking sheet and drop it onto your stovetop or counter from 5-6 inches high. Do this 2-3 times and you will see your cookies flatten.

Eat: Let cool and serve.
