Healthy and versatile bowls that come together under a generous drizzle of addictingly creamy vegan chipotle tahini sauce.

Chipotle Tahini Bowls

olive oil

water

tahini

1-2 chipotles in adobo sauce

garlic

juice of 1 orange (about 1/4 cup)

salt

Roasted sweet potatoes (see notes for my favorite method!)

Soft-boiled eggs (see notes for my favorite method!)

Kale

Quinoa

Avocado

Anything else you want!

Pulse all sauce ingredients in a food processor until smooth. Season to taste.

Cook / prepare your bowl ingredients. My favorite combination is kale, roasted sweet potato, avocado, quinoa, and soft boiled egg. But I&#8217;ve also included chicken, roasted broccoli, etc.

These look so pretty! I am not a fan of soft boiled (or hard boiled) eggs, but you've got my attention with the rest of the bowl. And I love how excited you get about your sauces. I really felt that hair flip.

Healing Bowls with Turmeric Sweet Potatoes, Poached Eggs, and Lemon Dressing

vegetable broth

lemon juice

parsley leaves

pistachios or other nuts

TURMERIC MASHED SWEET POTATOES: Heat the sweet potatoes with olive oil in a skillet over medium high heat. Add the turmeric and toss to coat. Add the garlic and vegetable broth. Simmer until the potatoes are soft and the liquid is almost all absorbed. Transfer to a small bowl and mash. Season with salt and pepper and/or a touch of cream if you want to be lush about it.

DRESSING: Pulse all ingredients in a blender or food processor. Season to taste.

BOWLS: Toss the greens with a little dressing. You can also stir a little dressing into the sweet potatoes &#8211; that&#8217;s yummy. Serve each bowl with the mashed sweet potatoes, brown rice, greens, and a scrambled or poached or fried egg. Top with more dressing and a handful of pistachios.

Healing Bowls with Turmeric Sweet Potatoes

This easy Buddha Bowl recipe is made with whole grains, roasted vegetables, avocado, tomato, spinach, feta, and falafel. It&#039;s topped with delicious Jalapeño Ranch dressing. This meal is healthy, flavorful, and easy to adapt to your liking!

Buddha bowl

½ cups Quinoa (, or brown rice, couscous

spinach ((or arugula))

potatoes

Salt and pepper

avocado (, peeled,

roma tomato (, chopped)

Falafel (, grilled chicken,

Feta cheese

chopped Nuts – walnuts (, pecans, almonds, pine nuts, pistachios etc)

plain Greek yogurt

white vinegar

jalapeño pepper (, ribs and seeds removed)

parsley

dill

onion powder

salt (,

Preheat oven to 425 degrees F. Add sweet potatoes to a sheet pan and drizzle with a little olive oil, salt and pepper. Roast.for 20-25 minutes, until tender, tossing once while cooking.

Cook quinoa according to package instructions.

Layer bowls with cooked quinoa, arugula, sweet potato, tomato, avocado, falafel or chicken, feta and nuts. Top with dressing.

I don't normally leave comments on recipes- but wow this sauce is amazing!! I'm already trying to think of ways I can use this sauce in other recipes, it's just that good!

OK so I made this dish for the first time tonight, for some reason I put the whole can of peppers into the sauce and holy moly! It was soooooo hot, it was even too hot for my husband who loves spicy food and is from Indonesia 😅 luckily I had some sour cream in the fridge that we added in and once my mouth cooled down the flavors and textures were amazing! I'll have to make it again, but worth a bit less sauce next time! Thanks for the recipe.

I halved the oil (1/4 cup) and it was delicious! I didn't miss it at all. Love this recipe.
