Avocado Breakfast Bowls

With a handful of fresh ingredients, these Mediterranean Breakfast Bowls with eggs, hummus and veggies are delicious and filling--the perfect way to start your day! Use this recipe as a guide, but feel free to use what vegetable you have on hand and experiment with different seasonings you love! Use plain hummus or another flavored hummus of your choice.

Mediterranean Savory Breakfast Bowls

white button mushrooms ((halved))

extra virgin olive oil

cherry tomatoes

Cook the eggs to your liking. I went with soft boiled eggs, but scrambled, sunny-side up or any way you like them will work. (Boiled eggs can be cooked in advance and refrigerated for later use).

Heat 2 tablespoons olive oil in a large skillet. Add the mushrooms. Season with salt and cook on both sides until browned (about 7 minutes)

Add the cherry tomatoes, spinach, garlic. Season with another pinch of salt. Cook briefly, 2 to 3 minutes, till warmed through and the spinach wilts.

Assemble the bowls. Divide the mushroom, spinach and tomato mixture among 4 bowls. Add the eggs and hummus next. Drizzle a bit of extra virgin olive oil over the hummus, if you like.

Add seasonings of your choice (I used a little Aleppo Pepper and za’atar, about 1 teaspoon each).

15-Minute Mediterranean Breakfast Bowls

This savory breakfast bowl makes a healthy, balanced option for a plant-based breakfast. It contains healthy fats, complex carbohydrates and protein to cover all your macronutrients and it's full of flavour and nutrition. Try making it ahead of time for healthy breakfasts all week.

Savory Vegan Breakfast Bowl

serving medium or firm tofu, crumbled

turmeric

salt and pepper

dash or soy sauce

water

mushrooms

In a small dish, mix up the tofu scramble ingredients then set aside. If you&#8217;re only making one serving, I&#8217;d recommend mixing it up in a dish before cooking. If you&#8217;re making a whole package of tofu, you can add everything right into the pan as it&#8217;s easier to mix.

Next, cook the kale, mushrooms and onions. To make them, add them to a skillet over medium-high heat with either a splash of water or 1/2 tsp olive or avocado oil. Cook for 5-8 minutes until tender and browned. Don&#8217;t stir too often in order to let them brown. Once they&#8217;re cooked, scoop into a bowl.

In the same pan, add the tofu mixture and cook for 5 minutes until heated through and starting to brown. Alternatively, you can just add the tofu scramble mixture to the kale and mushrooms as they cook and serve it all mixed up.

To assemble the breakfast bowls, add the tofu scramble to the bowl with the kale mixture then add brown rice, avocado and salsa. Serve right away or pack up for meal prep.

I'm trying to eat more veggies for breakfast so this was perfect! I prep a big batch of tofu scramble and brown rice, and chop the veggies on the weekend so it's super quick to make during the week.
