This crunchy Asian Cabbage Salad is colorful, healthy and delicious! Made with raw cabbage, carrots and almonds, topped with an easy ginger peanut dressing.

Asian Cabbage Salad

almonds

green cabbage (finely sliced (about 3 cups)*)

cabbage

red bell pepper

carrots (about 2 medium)

frozen shelled edamame (thawed)

cilantro

rice vinegar

honey

soy sauce

peanut butter

ginger

Preheat the oven to 350 degrees F. Spread the nuts in a single layer on an ungreased rimmed baking sheet. Toast for 4 to 6 minutes, until fragrant and crisp. Toss once halfway through and do not walk away during the last few minutes of cooking (TRUST ME). Immediately remove to a small bowl or plate (or if your salad is ready to go, you can add them directly to the serving bowl).

In a large bowl, place the green and red cabbage, bell pepper, carrots, edamame, and cilantro.

In a medium mixing bowl or large liquid measuring cup, whisk together the dressing ingredients: rice vinegar, honey, soy sauce, peanut butter, and ginger. Pour enough over the salad to moisten it. Toss to coat. Assess the amount of dressing and add more as desired. Add the almonds and give the salad a final, light toss. If time allows, let marinade for 30 minutes prior to serving. Enjoy!

Mediterranean Cabbage Salad (No Mayo Coleslaw)

Dijon mustard

garlic cloves,

limes, juiced

extra virgin olive oil

sumac

salt and pepper

red pepper flakes, optional

green cabbage

red cabbage

carrots

green onions, trimmed, chopped (both white and green parts)

red bell pepper,

radishes,

parsley

dill

kosher salt

Make the mustard vinaigrette. In a small bowl, whisk together the Dijon mustard, lime juice, garlic, olive oil, and spices.

Make the salad. In a large mixing bowl, combine the cabbage, carrots, onions, red bell pepper, radishes, parsley and dill. Season with salt. Add the sumac. Add the toasted almonds. Toss gently to combine.

Pour the vinaigrette all over and toss to combine.

If you have the time, give the salad 30 minutes to 1 hour for the flavors to meld.

No Mayo Cabbage Salad

This healthy cabbage salad is packed with so many colorful vegetables and dressed with oil and vinegar instead of a mayo, like in a typical cabbage slaw.

Healthy Cabbage Salad

cabbage,

carrot,

cucumbers,

radishes, julienned

celery stalks, thinly sliced

apple, julienned

herbs (green onions, dill, parsley), minced

olive oil

apple cider vinegar

sugar, optional (or honey instead)

salt, pepper,

Prep all the vegetables. Slice the cabbage, grate the carrot, julienne the cucumbers, bell pepper and radishes. Thinly slice the celery.

If you're prepping the salad in advance, cut up the apple right before serving, or submerge the apple sliced in water + lemon juice.

Mix everything together until evenly combined. Season with salt, pepper and sugar.

Add the fresh herbs, oil and vinegar. Mix to combine. 

Refrigerate. Serve cold or at room temperature.

Best salad I have done for my BBQ with Če apčiči ,. Just maringotka an other Lot to také away on holidays. The one ingredient I changed I used maple syrup instead honey. Great recepies.
