This Healthy Cabbage Soup is based off from the Weightloss Wonder Soup and is full of nothing but veggies for healthy vegetable soup that may even help you lose a few pounds!

Healthy Cabbage Soup

vegetable broth

carrots (, chopped)

parsnips (, chopped)

celery (, chopped)

tomato paste (, optional)

cabbage (,

garlic (, grated)

white onion (, chopped)

tomatoes

lemon juice

chili powder

Salt and Pepper (,

In a large stock pot or Dutch oven, bring the vegetable broth to a rapid boil and then add the carrots, parsnips and celery and optionally, the tomato paste.

Boil until soft, approximately 10 minutes.

Add the cabbage, tomatoes, cabbage, lemon juice and chili powder. Continue to cook over low heat until the cabbage just starts to soften, approximately 5 minutes.

Season to taste with salt and pepper. Serve.

An easy old fashioned cabbage soup recipe. Yummy and filling! With carrots, tomatoes, onion, white beans, cabbage, and complex flavors.

Cabbage Soup

olive oil

carrots

onion

salt

black pepper

smoked paprika

cumin

nutmeg

garlic (minced (about 1 tablespoon))

vegetable broth (divided)

15.5-ounce can white beans, rinsed and drained

bay leaf

rosemary

apple cider vinegar

honey

parsley (for serving)

In a Dutch oven or similar large, deep pot, heat the oil over medium. Add the carrots, onion, salt, and pepper. Cook, stirring occasionally, until the onions soften, turn translucent, and take on some color, about 7 to 9 minutes.

Cook

Add the smoked paprika, cumin, nutmeg, and garlic. Cook, stirring constantly, until very fragrant, about 30 seconds.

Boil

Add enough of the broth to cover the bottom of the pot. With a wooden spoon, scrape along the bottom to remove any stuck on bits. Add the remaining broth, diced tomatoes, beans, cabbage, bay leaf, rosemary, vinegar, and honey. Stir everything together, then bring to a boil.

Simmer

Reduce the heat, cover the pot, and let simmer until the cabbage is very tender, about 25 minutes. Discard the bay leaf. Taste and adjust the seasoning as desired. Serve hot with a sprinkle of fresh parsley.
