Easy Buffalo Cauliflower is baked - not fried - and delivers all of the flavor of fried buffalo chicken wings in a lighter, but equally tasty appetizer or main dish!

Easy Buffalo Cauliflower

cauliflower,

salt

garlic powder

onion powder

smoked paprika

black pepper

milk

buffalo wing sauce

butter

honey

ranch or blue cheese dressing

Preheat oven to 450 degrees and grease a baking sheet.

Stir together salt, garlic powder, onion powder, smoked paprika, and black pepper. Stir in milk.

Dip cauliflower in the milk mixture, turning to coat completely, shake off excess and arrange in a single layer on prepared baking sheet.

Bake for 10 minutes, use a fork to turn over cauliflower pieces, and bake another 10 minutes.

While cauliflower is baking, combine buffalo wing sauce, butter, and honey in a medium sauce pan. Bring to a boil over medium heat, cook 2-3 minutes, then remove from heat.

Brush buffalo sauce all over the baked cauliflower, bake another 10 minutes (I like to broil it for the last 2-3 minutes).

Serve fresh with ranch or blue cheese dressing for dipping.

This easy Italian recipe for Roasted Cauliflower Parmesan is simple enough to make for a weeknight, low carb dinner but tastes special enough for a dinner party!

Roasted Cauliflower Parmesan

cauliflower florets ((1 medium cauliflower))

eggs, (lightly beaten)

breadcrumbs

all-purpose flour

Cooking spray

(28 ounce) can San Marzano tomatoes

Italian seasoning

olive oil

garlic

pepper

mozzarella

Parmesan cheese

Preheat oven to 400℉. Line a baking sheet with parchment paper and set aside.

Set up an area for breading the florets. You will need the cauliflower florets, a bowl with the beaten eggs, and a bowl with the seasoned breadcrumbs, Panko bread crumbs, flour, and salt combined in it, and the prepared baking sheet.

Dip each floret in the eggs, then in the breadcrumb mixture, and place it on the baking sheet. Repeat until all of the florets have been breaded. Lightly spray all of the florets with a coat of cooking spray.

Roast the cauliflower for 20-25 min until golden and crispy. Remove from oven and cool slightly.

While the cauliflower is cooking, make the tomato sauce. In a large bowl, combine the canned tomatoes (with juices), Italian seasoning, olive oil, garlic, salt, and pepper. Use a fork or clean hands to break apart the tomatoes into small pieces. For a smooth sauce, you can combine everything in a blender, if desired.

Prepare a 9x11’’ casserole dish by spraying with cooking spray. Reduce oven heat to 375℉.

Place half of the tomato mixture in the bottom of the baking dish, followed by ½ of the Parmesan, all of the cauliflower florets, then the mozzarella, the remaining ½ of the tomato mixture, and topped with remaining ½ of the Parmesan cheese. Bake for 20-25 minutes until the sauce is bubbling and the cheese has melted. Serve hot!

Baked Cauliflower Parmesan

Easy and healthy baked sweet &amp; sour cauliflower is a delicious twist on&nbsp;classic sweet &amp; sour chicken or pork and it's baked instead of fried. You won't miss meat in this lightened up classic!

Baked Sweet & Sour Cauliflower

cauliflower florets

vegetable oil

corn starch

rice (for serving)

green onions

sugar

apple cider vinegar ((may sub white vinegar))

soy sauce

onion salt

ketchup

cornstarch + 2 tablespoon cold water

Preheat oven to 425 degrees and grease a baking sheet. Combine cauliflower and oil in a large ziplock bag. Seal and shake to coat cauliflower in the oil. Open the bag, add corn starch, seal bag and toss to coat again.

Transfer coated cauliflower to greased pan. Bake for 15-20 minutes until cauliflower starts to brown on the bottoms. Switch oven to broil and cook on high for 3-4 minutes just until tops start to brown. (watch carefully so the cauliflower doesn't burn!)

While cauliflower is cooking, prepare the sauce: Add sugar, vinegar, soy sauce, garlic powder, onion salt, and ketchup to a medium sauce pan. Stir and bring to a boil. In a small bowl whisk together the 1 tablespoon corn starch and cold water until dissolved. Add to sauce pan and stir until thickened, then reduce to low heat.

In a large heat-safe bowl combine roasted cauliflower and sauce. Serve with steamed rice and top with sliced green onions.

This comforting cauliflower bake is cheesy yet light enough to be a healthy side dish and is ready in under 30 minutes. Serve it alongside some lean protein and you’ve got yourself a delicious, easy and wholesome meal! 

Cheesy Cauliflower Bake

cauliflower

tbsp non-fat Greek yogurt

light shredded cheese

yeast (optional)

tsp dijon mustard

tsp salt

tsp black pepper

panko crumbs

grated parmesan

Cut cauliflower into florets. Reserve the stem portion for another recipe.

Arrange cauliflower florets in a large baking dish in a single layer. Spray lightly with cooking spray, and roast for 10 minutes or until just tender.

Meanwhile, in a large mixing bowl, mix together yogurt, shredded cheese, garlic powder, nutritional yeast, dijon mustard, salt and pepper until combined.

Remove cauliflower from the oven. Drizzle sauce all over the cauliflower and toss until coated evenly.  Top with panko crumbs and grated parmesan and bake for another 10 minutes.

Remove from oven and serve immediately. Enjoy!
