healthy cauliflower soup

This creamy vegan cauliflower soup is so light and simple and although cauliflower is not one of our favorite veggies, we really enjoy this amazing recipe.

Creamy Vegan Cauliflower Soup

tbsp extra virgin olive oil

chopped onion

cauliflower,

vegetable broth (500 ml)

milk

tsp sea salt

black pepper

yeast (optional)

Heat the oil in a large pot and add the garlic and onion.

Cook over medium-high heat until golden brown.

Add the cauliflower, broth and milk and bring it to a boil. Then cook over medium-high heat for about 15 to 20 minutes or until the cauliflower is soft.

Add the salt, black pepper and nutritional yeast and blend using an immersion or a regular blender.

Serve with your favorite toppings. We added some peas, toasted almond slices, chopped chives and more ground black pepper.

A creamy and delicious kale and cauliflower soup that's perfect on a cold day but makes a nice, light meal any time of year. Completely plant-based and made in under 30 minutes with just 8 simple ingredients, this soup is sure to become a new go-to!

Kale and Cauliflower Soup

large white or yellow onion, diced (390 g)

garlic,

carrots (175 g, approx. 1.5 cups chopped)

parsley

thyme

vegetable stock

cauliflower

lightly packed, chopped, de-stemmed kale (120 g)

salt and pepper,

lemon juice

Saute the onions and garlic in 2 tbsp of broth or water in a large soup pot over medium heat until they start to soften and become fragrant, about 5 minutes.

Stir in the chopped carrots, dried parsley and ground thyme. Cook for few more minutes, adding another splash of stock if needed if the pan starts to dry out.

Stir in the vegetable broth and chopped cauliflower and bring to a light simmer. Simmer lightly, uncovered, until the cauliflower is tender, about 10-15 minutes.

Turn the heat off then carefully scoop about 1/2 of the soup into a blender, leaving some pieces of carrot and cauliflower behind. Blend until smooth and creamy (make sure you allow steam to escape when blending) and then pour the blended soup back into the pot and mix with the remaining soup.

Stir in the chopped kale. Let sit for 5-10 minutes before serving to allow kale to soften.

Serve right away with a squeeze of fresh lemon juice and sprinkle of chopped fresh parsley, if desired.

Love this recipe. Quick, simple, and utterly delicious! I will definitely be making this again. I threw some turmeric in there too and just a dash extra of parsley and ground thyme. I also didn't have enough cauliflower so I threw the whole rest of the head in there, stem and leaves included, and just made sure to blend those pieces. It came out so well and made plenty to save.

This was delicious! I made it tonight and changed out the carrots for celery, added a can of black beans and 1 cup of turkey and it was wonderful! Will definitely make this again!

Very good soup that was easy to prepare. I am not vegan do so added some parmesan rinds while cooking. The soup was a little bland so next time I will add turmeric and cumin to the pot.

I made this tonight and it was love at first taste! My husband loved it too. This is for sure going in our regular rotation.

Loved this recipe. I also recommend adding some nutritional yeast and little bit of smoked paprika. And if you enjoy spices then a little bit of cayenne pepper. I tried it today and it was delicious.

This is a great soup. Real comfort food. It is also quickly made and super healthy. I actually used my immersion blender on all of it and added some nutritional yeast. YUM!

Creamy Roasted Cauliflower Soup (healthy recipe!)

Head Cauliflower (–

TBS Olive Oil ((or Neutral Oil,

½ tsp Ground Cumin (- DIVIDED)

tsp Smoked Paprika (- DIVIDED)

tsp Chili Powder (- DIVIDED)

tsp Ground Black Pepper (- plus more to taste)

6-8 Slices Center-Cut Bacon (–

Yellow Onion (– small dice (about 1 1/2 cups))

Jalapeno (– stemmed, seeded and small dice (about 1/3 cup))

Garlic (– finely diced (about 1 TBS))

(15.5 oz.) Can Cannellini Beans (– rinsed & drained)

Cups Low-Sodium Chicken or Vegetable Stock

Optional Garnishes: Pico de Gallo

Preheat Oven

Preheat oven: Arrange oven rack to the center position and preheat the oven to 425-degrees Fahrenheit (or 400F convection). Next, line a large sheet pan with aluminum foil for easy clean up and set it aside.

Roast cauliflower

Season Cauliflower: Place the cauliflower florets into a large bowl and drizzle with the olive oil. Toss to coat the cauliflower in the oil. Next, sprinkle 1 teaspoon cumin, ¾ teaspoon paprika, ¾ teaspoon chili powder, ½ teaspoon salt, and 1/8 teaspoon pepper all over the cauliflower. Then toss well to thoroughly coat the cauliflower with the seasonings.Roast Cauliflower: Transfer the seasoned cauliflower florets to the prepared sheet pan. Place the pan in the oven and roast, turning the cauliflower over once during baking, for about 20-30 minutes or until the cauliflower is golden and caramelized. Remove from oven and set aside.

Meanwhile, Cook Bacon - Optional

Start the Soup - Using Bacon:  Add bacon to a Dutch oven or stock pot and place over medium heat on the stove top. (Tip: start the bacon in a cold pot). Cook, stirring occasionally, until cooked through and crispy, about 8-12 minutes. Turn off the heat and use a slotted spoon to remove the bacon to a paper towel-lined plate. Set the bacon aside. Blot or pour off all, except about 1 ½ tablespoon of bacon fat. -OR-Start the Soup - NO Bacon: If you don&#39;t want to use bacon, heat 1 1/2 tablespoons of neutral oil in the pot over medium heat until shimmering. Once the oil shimmers, go to next step (adding veggies).

Add Vegetables And Seasonings

Add vegetables: Return the heat to medium and add the onions and jalapeños. Season with ½ teaspoon cumin, ¼ teaspoon paprika, ¼ teaspoon chili powder, 1 teaspoon salt and 1/8 teaspoon of pepper. Sauté, stirring frequently, until the onion is soft and translucent, about 4-5 minutes. Add garlic and cook until fragrant, about 1 minute.

Add Roasted Cauliflower

Add cauliflower, beans, and stock: To the pot, add the roasted cauliflower, cannellini beans and stock. Give everything a good stir and then increase the heat under the pot to high to bring the soup to a boil. Once boiling, immediately reduce the heat to maintain a gentle simmer.Simmer Soup: Simmer the soup - UNCOVERED - for 10-12 minutes, or until the cauliflower is very tender.

Puree the Cauliflower Soup

Blend Soup: Turn the heat off underneath the pot. Then use an immersion blender to puree soup until smooth and very creamy. (Alternatively, you can transfer the soup in batches to a stand blender, puree, and transfer back to pot). Add half-and-half: Return the pot to the stove-top over LOW heat. Stir in the half and half and cook for 1-2 minutes, or until soup is hot throughout. Taste the healthy cauliflower soup and adjust the seasonings as you see fit.

Garnish and Serve Soup

Serve: Ladle soup into serving bowls. Sprinkle the reserved bacon over the soup and top with your favorite garnishes. Serve immediately and enjoy!
