This Slow Cooker Chicken Stew is a healthy, easy dinner made in less than 10 minutes of prep time! Paleo, Whole30 friendly and loaded protein/vegetables!

Slow Cooker Chicken Stew

1.5 lbs boneless chicken breasts

onion (chopped finely)

russet potatoes (cut in ½ inch pieces)

carrots (chopped finely)

celery (chopped finely)

tomato puree

tomato paste

salt

pepper

bay leaf

rosemary (chopped)

garlic powder

chicken broth

peas

Chop all veggies + cut raw chicken into cubes. In slow cooker insert, stir all ingredients together except peas.

Cook on low for 6 hours. When ready to serve, stir in peas until defrosted (omit if strict paleo or Whole30™)

Slow Cooker Instructions:

Chop all veggies + cut raw chicken into cubes.

In a large pot heat 1 tablespoon olive oil. Add chicken cubes in + sear for 1-2 minutes (does not have to cook through).

Add all onion, carrots + celery. Sauté for 5 minutes until fragrant and slightly soft.

Add all remaining ingredients. Stir to combine.

Cook on high heat for 30 minutes, stirring occasionally. Reduce heat so stew comes to a simmer + cook for additional 30 minutes.

When ready to serve, stir in peas until defrosted (omit if strict paleo or Whole30™)

This easy Dakdoritang features tender pieces of chicken, potatoes, and carrots braised in a spicy and savory chili sauce. Served over a bowl of rice, this Korean chicken stew is incredibly comforting yet so easy to make, and the best way to spice up your dinner rotation!

Easy Dakdoritang (Spicy Korean Chicken Stew)

(500 grams) potatoes

(100 grams) carrot

water (anchovy stock, dashi,

green onion and chili pepper (sliced)

sesame seeds (optional,

tbsp Gochugaru (Korean chili flakes) (or to taste)

soy sauce

garlic (minced)

tbsp honey (or sugar)

tbsp Gochujang (Korean chili paste)

tsp black pepper

[Optional] Bring a large pot of water to a boil. Parboil the chicken for 2 minutes, rinse under cold water, and pat dry. This process will remove the smell, excess oil, and impurities from the chicken.

Combine all sauce ingredients in a bowl. In a large pot over medium heat, add chicken and onion and pour the sauce on top. Toss well to coat and cook for 2 minutes.

Add water and stir to combine. Cover and boil for about 15 minutes, stirring occasionally. Stir in potatoes and carrots, cover, and cook for another 10 minutes.

Remove cover, add green onion and chili pepper, and cook for an additional 5 minutes, or until the stew is thickened to your liking.

Garnish with sesame seeds and fresh green onions if you prefer, and serve over a bowl of steamed rice. Enjoy!

The classic Italian 'hunter's stew' gets a healthy makeover, with low-fat chicken breasts, prosciutto and a rich herby tomato sauce

Lighter chicken cacciatore

olive oil

prosciutto, fat removed, chopped

onion,

garlic cloves, finely chopped

sage

rosemary

chicken breasts

dry white wine

can plum tomatoes

tomato purée

chestnut mushrooms, quartered

Heat the oil in a large non-stick frying pan. Tip in the prosciutto and fry for about 2 mins until crisp. Remove with a slotted spoon, letting any fat drain back into the pan, and set aside. Put the onion, garlic and herbs in the pan and fry for 3-4 mins.

Spread the onion out in the pan, then lay the chicken breasts on top. Season with pepper and fry for 5 mins over a medium heat, turning the chicken once, until starting to brown on both sides and the onion is caramelising on the bottom of the pan. Remove the chicken and set aside on a plate. Raise the heat, give it a quick stir and, when sizzling, pour in the wine and let it bubble for 2 mins to reduce slightly.

Lower the heat to medium, return the prosciutto to the pan, then stir in the tomatoes (breaking them up with your spoon), tomato purée and mushrooms. Spoon 4 tbsp of water into the empty tomato can, swirl it around, then pour it into the pan. Cover and simmer for 15-20 mins or until the sauce has thickened and reduced slightly, then return the chicken to the pan and cook, uncovered, for about 15 mins or until the chicken is cooked through. Season and scatter over the parsley to serve.

Chicken Stew (Instant Pot)

1.5 lbs Chicken, bone-in chicken thigh

lbs Chicken Sausage, 2-3 links

Cup French Lentils, dried lentils

Oz Tomato Sauce, tomatoes

Cup Sweet Potato, cubed, sweet potato or butternut squash

Cup White Onion, medium onion, small diced

tbsp Garlic, 2-3 cloves, minced

tbsp Ginger, 2 inch fresh ginger, grated, or 2 tsp ginger powder

tbsp Olive Oil

Salt

tbsp Fresh Herbs, parsley or mint

tbsp Lemon, juice, more for serving

tbsp

1.5 tbsp Paprika, sweet paprika

tsp Chili Powder, or cayenne, or hot paprika

 Heat Instant Pot on Saute setting until it reads "Hot". Add and heat 1.5 tbsp oil. Add chicken seasoned with 1 tsp of spice mix and pinch or 2 of salt. Cook until skin browns. Take out in a plate.

Add remaining oil, followed by onion and garlic. Saute until onions are soft and start to brown at edges. (4-5 minutes)


Add sausage (sliced), ginger, and remaining spice mix, 1/2 tsp salt. Saute for 1 minute. 

Add tomato sauce, lentils, squash (or sweet potato) and 2.5 cups of water.  Add 1/2 tsp more salt. Mix well. Return chicken to pot, and place on top. Place and lock lid of Instant Pot. Cook on manual - high pressure for 12 minutes.
 

Once timer is up. Switch off Instant Pot. Quick Release pressure. Open lid. Mix in lemon juice and chopped fresh herbs. Taste and adjust salt. Ladle into bowls, garnish with more herbs. Serve with side of Naan Bread or Rice, and more lemon wedges. Enjoy.

Hearty Chicken Stew (Paleo, Gluten Free)

chicken thighs

Sea salt and black pepper

ghee oil

mushrooms,

carrots,

celery sliced,

garlic,

1 Tablespoon tomato paste

2 1/2 Tablespoons tapioca flour

broth

thyme thyme

rosemary rosemary

1 bay leaf

potatoes

Yukon gold potatoes

white turnips,

zucchini,

Sea salt and black pepper to taste

thyme

Balsamic vinegar

Pat the chicken dry with paper towels and season all over with sea salt and black pepper.

In a large stock pot over medium/high heat, heat the oil. Add the chicken and sear until brown, 4 minutes on each side, adjusting the heat as necessary.

Add the mushrooms, turn down to medium low, cover and cook until the mushrooms release their liquid, stirring frequently, scraping the brown bits at the bottom of the pan, about 5 minutes.

Add the onions, carrots, and celery, stir and cook for 3-5 minutes.

Add in the garlic and cook until fragrant, about 1-2 minutes, careful not to burn.

Add tomato paste and tapioca flour and stir to coat the veggies.

Add the rosemary, thyme and bay leaves and season with salt and pepper. Bring to a boil, then lower the heat to a simmer at medium-low heat. Cover and simmer until, about 20 minutes to develop the flavors.

Add the potatoes, sweet and gold, and chicken and simmer 10 minutes more.

Then add in the turnips and zucchini and continue to simmer 5-10 more minutes, until potatoes and vegetable are just tender.

Discard bay leaves and garnish with fresh thyme or parsley and a splash of balsamic if desired before serving.

Store in a sealed container in the refrigerator for up to 3-4 days the taste is even better the next day. You can store it in the freezer for up to 1 month.
