Healthy beef chow mein

wholemeal noodle nests (85 grams)

tsp rapeseed or sesame oil

lean fillet steak, fat

red onion (100 grams), finely chopped

ginger,

chestnut mushrooms, thickly sliced

garlic cloves, finely chopped

ready-to-eat beansprouts

tamari

brown rice vinegar

spring onions (65 grams), cut into diagonal lengths

Cook the noodles following pack instructions. Meanwhile, heat half the oil in a wok and stir-fry the beef over a high heat for 30 seconds until browned. Tip onto a plate, set aside, then add the remaining oil to the wok. Stir-fry the onion and ginger until softened. Add a drop of water to prevent burning, if needed and cook covered for 2-3 mins.

Stir in the mushrooms and garlic, and fry until they start to soften (around 3 mins), then add the beansprouts and cook for a minute or two more until piping hot.

Mix the tamari and vinegar together in a small bowl with 2 tbsp water. Add the drained noodles to the wok, toss well, then add the tamari mixture, spring onions and the beef. Stir-fry for a few minutes until heated through. Season with plenty of black pepper and serve.

green cabbage, thinly sliced

carrot,

sesame oil

garlic,

soy sauce

rice vinegar

oyster sauce

Prepare Cooking Vessel

Heat a large nonstick skillet or wok over medium-high heat and add sesame oil.

Brown Beef

Add ground beef to the hot oil and cook, breaking it apart with a spatula, until thoroughly browned. Drain excess fat if present.

Incorporate Aromatics

Add minced garlic and grated ginger to the beef. Stir constantly and cook for 1 minute until fragrant.

Cook Vegetables

Add sliced cabbage and julienned carrot. Stir-fry for 4 to 5 minutes, stirring frequently, until the cabbage is slightly softened yet retains some crunch.

Introduce Sauces

Stir in low-sodium soy sauce, rice vinegar, and oyster sauce. Mix thoroughly to integrate flavors.

Thicken Sauce

Pour in cornstarch slurry. Stir continuously for 1 to 2 minutes, allowing the sauce to thicken and evenly coat the contents.

Adjust Seasoning

Taste and adjust seasoning as needed. Add crushed red pepper flakes for additional heat if desired.

Finish and Garnish

Remove from heat. Garnish with sliced green onions.

Serve

Serve immediately on its own, or spoon over steamed jasmine or brown rice for a heartier meal.
