healthy christmas cookies

These holiday gingerbread cookies have less than half of the fat than most gingerbread cookies but the same great flavor and are super easy to make!

Gingerbread Cookies

unsalted butter (softened)

brown sugar

applesauce

dark molasses

all-purpose flour

tsp baking soda

ginger

cinnamon

tsp allspice

cloves

tbsp egg whites

lemon juice

sugar

cream of tartar

In a large mixing bowl, beat the butter, sugar and applesauce until smooth.

Add the egg and molasses, mix well.

In another large bowl, combine flour, baking soda and spices.

Add to sugar and molasses mixture, stirring well.

Divide the dough into two flat balls; cover with plastic wrap and chill in the refrigerator for at least 2 hours.

Preheat oven to 350°F.

Generously dust the surface of your working area with flour before rolling out the dough.

Work with one ball of dough at a time, keep the other refrigerated while you do so.

Roll the dough out to 1/4 or 1/8-inch thickness, sprinkle a little flour on top of the dough if it's a little sticky.

Cut the gingerbread with a cookie cutter shape of your choice.

Place cookies 1 or 2 inches apart on a silpat-lined baking sheet.

Bake 10-12 minutes.

For the cookies:

Mix the egg whites with lemon juice.

Combine with powdered sugar, mixing well. If the icing is too thin, add more powdered sugar, if it's too thick add a drop of lemon juice.

Add to a piping bag to decorate cookies when cookies are cooled.

For the icing:

Pistachio Cranberry Oatmeal Cookies

regular oats

all purpose flour

unsalted butter,

baking soda

baking powder

vanilla extract

salt

cranberries

pistachios

In a large bowl, mix oats, flour, baking powder, baking soda, cinnamon, and salt.

In a stand mixer, combine butter, vanilla, and brown sugar until creamy. Add in a egg. Mix until combined.

Slowly add in the oat flour mixture, mix in stand mixer until just combined.

Gently fold in the cranberries and pistachios.

Scoop 1 tablespoon of cookie batter on a baking sheet lined with silicone mat or parchment paper placing 2&#8243; apart.

Remove from oven and let cool on wire rack.

I love how festive these are with a bit of red and green peaking out! Such a delicious cookie!

Great recipe!  I just made them! Yummy!!! Although, I didn't have pistachio or cranberries - yes, unacceptable! I know, I know! Guilty! :) So, I used raisins and walnuts instead. They still came out great! This recipe is the keeper for sure! Thank you!

Outstanding results, fabulous cookie.  I added 1/2 cup of white chocolate chunks to the final mix and the results were fantastic. With or without the added white chocolate, this recipe is a winner, made me look like I know what I'm doing. Thanks!
