Best Healthy Coleslaw Ever (no mayo!)

For the slaw:

purple cabbage, shredded (about 3 cups shredded cabbage)

carrots

cilantro

jalapeño,

green onion (green part only)

pepitas

almonds

For the dressing:

extra virgin olive oil

apple cider vinegar

garlic, finely minced

cayenne pepper, optional

salt

black pepper

Add all the ingredients for the slaw except for the almonds and pepitas to a large bowl.

In a small bowl, whisk together all the ingredients for the dressing. Pour all over the slaw and toss well to combine. Taste and adjust seasonings as necessary. Cover and place in fridge for at least an hour to allow flavors to marinate together.

Before serving, sprinkle with toasted sliced almonds and pepitas; toss again and serve.

Greek Yogurt Coleslaw Recipe

green cabbage (sliced thinly)

red cabbage (sliced thinly)

carrots (3-4 large carrots)

scallions (thinly sliced)

Parsley

plain Greek yogurt (both full fat and no fat would work)

lemon juice

honey (optional)

dijon mustard

celery seed

kosher salt

Place green cabbage, red cabbage, and carrot in a bowl. Add in the chopped scallions. Set aside.

To prepare the coleslaw:

Mix together yogurt, lemon juice, vinegar, honey, dijon mustard, celery seed, and salt and pepper in a bowl and give it a good whisk. Give it a taste and add more seasoning if necessary.

To make the dressing:

Pour the dressing over the vegetables. Give it a toss. Garnish with chopped parsley.

You can serve it immediately or cover it with stretch film and place in the fridge for up to 3 hours.

To assemble:

Greek Yogurt Coleslaw

This vegan coleslaw is easy to make from scratch and features a simple homemade dressing with that classic, cool and creamy blend of tang and sweetness. It&#039;s the perfect side dish for BBQs, potlucks, and weekly meal prep!

Vegan Coleslaw From Scratch (No Mayo)

green cabbage (about 10 oz. or half of a medium size head)

red cabbage (about 5 oz.)

carrot

raw cashews (see Notes for subs)

water

Tablespoons sugar

Tblespoons apple cider vinegar

white vinegar

fine sea salt

onion powder

garlic powder

black pepper (to taste)

Blend

Make the dressing: In a blender combine all dressing ingredients except celery seed and black pepper. Blend on high until smooth, scraping down the sides of the blender as needed. Taste and adjust the acids, sugar, and salt, if desired. Note that the dressing should taste very bold at this point and will mellow as it sits. Add the celery seed and black pepper, and stir to combine.

Toss

Combine the shredded cabbage and carrot in a large mixing bowl. Toss with half of the dressing, then add more dressing until it&#39;s as creamy as you like.

Chill

If you have time, refrigerate the coleslaw for 30 minutes before serving (or up to 4 hours). Store leftover slaw in an airtight container in the fridge for up to 3-4 days.

So yummy!  Thanks for this recipe.  Made it today with cashews, and will try the sunflower seed variation another time.  With cashews being so pricey, it's helpful to have a choice.
