Easy, healthy and delicious, these Weight Watchers friendly chicken fajitas were a big hit when I made them!

Easy Healthy Chicken Fajitas Recipe

chicken

fat-free Italian dressing

chili powder (or more to taste)

onions, sliced

green bell pepper,

red bell pepper,

In a large zipper-lock plastic bag, combine the sliced chicken, Italian dressing and chili powder. Squeeze out the air and seal the bag, turning and squeezing to coat the chicken. Refrigerate to marinate at least 30 minutes. (Marinate longer, perhaps overnight, to enhance flavor even more.)

Lightly coat a large skillet with non-stick spray and place over medium-high heat. Add the chicken and marinade and cook, stirring frequently, until the chicken is no longer pink in the center, 8 - 10 minutes. Transfer the chicken to a large bowl and cover it to keep warm.

Lightly coat the same skillet with more cooking spray. Add the onion and cook, stirring occasionally until beginning to soften, about 5 minutes. Add the green and red peppers and cook, stirring occasionally, until tender, about 7 minutes longer.

Add the cooked chicken back into the skill and stir to combine and heat through, about 2 more minutes.

Serve with tortillas, beans, or rice and your favorite garnishes such as salsa, shredded cheese, lime wedges and/or guacamole.

Sheet Pan Chili Lime Shrimp Fajitas

raw deveined shrimp, with

red pepper, sliced

green pepper, sliced

yellow pepper, sliced

onion, sliced (large)

olive oil

limes (1 juiced, 1 sliced for condiment)

garlic cloves,

chili powder

cumin, ground

red pepper

salt

ground pepper

Preheat oven to 450 degrees.

Line baking sheet with foil or parchment paper for easy clean up.

Mix olive oil, chili powder, crushed pepper, cumin, garlic, juice of 1 lime,  salt and pepper in small bowl or measuring cup.

Add sliced veggies and shrimp into large bowl and toss with olive oil mixture

Spread onto prepared baking sheet.

Bake for 8-10 minutes or until veggies are soft and starting to brown and shrimp is cooked through.

Serve with remaining lime slices.

Preheat oven to 400 degrees.

Combine shrimp, peppers, onions, oil, fajita seasoning mix, chili powder, and lime juice in a large bowl. Stir to combine and coat well in seasonings. Spread everything out on a large baking sheet pan so that it is in a single layer (items can be overlapping, just make sure everything isn't heaped in one big pile).

Bake for 10-15 minutes until shrimp is pink and tails begin to char slightly and peppers are tender.

Distribute shrimp and veggies between the tortillas along with avocado slices. Top with freshly shopped cilantro and serve with lime wedges for squeezing.

Keto Sheet Pan Chicken Fajitas

Organic Chicken Breasts

Seasoning onion

Lime

Purple Onion, sliced

Bell Peppers, de-seeded and sliced (any color)

Avocado Oil

Sea Salt & Pepper (to taste)

Lettuce for Wraps (optional)

Optional Toppings: Avocado, Fresh Cilantro, Salsa, Sour Cream, Cheese, etc.

Preheat oven to 375 degrees F.  Line a baking sheet with parchment paper or silicon mat.

Cut chicken into thin strips.  Add all seasonings to chicken (to taste) and toss to coat.  Add the juice from 1 lime to the chicken and toss again to mix.

Transfer chicken to baking sheet.  Add the sliced onion and bell pepper to baking sheet.  Add avocado oil plus sea salt and pepper over the vegetables and toss to coat.  Spread onion and bell pepper out even on the baking sheet.  Bake for 15-20 minutes or until chicken is fully cooked through.  Toss chicken halfway through cooking, if needed.

When ready to serve, add chicken fajita mixture to lettuce cups, wraps, or over the top of steamed cauliflower rice.  Add your favorite toppings and Enjoy!!
