Spinach, scallions, feta and eggs make a fabulous, light breakfast frittata or for a low carb lunch serve this frittata with a Greek salad on the side.

Spinach Feta Frittata

eggs

olive oil

red onion (finely chopped)

scallions (chopped)

oz frozen chopped spinach (thawed)

oz crumbled feta

Parmigiano-Reggiano (grated)

salt and pepper

Squeeze all water from spinach.

In a 9 inch non-stick sauté pan, heat olive oil over medium heat.

Add the onion and scallions and cook until soft, about 4 minutes.

Meanwhile in a medium bowl, beat the eggs.

Add salt, pepper, cheeses and spinach and mix well.

Pour the mixture into the skillet and cook until the bottom sets, about 5 minutes.

Hold a large plate over the pan and invert the frittata onto the plate, then slide it back into the pan.

Cook about 5 minutes longer. Serve hot.

This easy egg white frittata is ideal for healthy diets. Full of spinach and veggies, it&#039;s high protein, big on flavor, and low calorie.

Egg White Frittata

unsalted butter or coconut oil

red bell pepper (diced (or 1 cup chopped vegetables of choice))

green onions (finely chopped)

Italian seasoning

salt

spinach

cheddar (feta, or Parmesan cheese)

Hot sauce (optional, for serving)

avocado (optional for serving)

Preheat

Place a rack in the upper third of your oven and preheat the oven to broil.

Saute

Heat a small (8-inch) nonstick (it MUST be nonstick) and oven-safe skillet over medium heat. Add the butter. Once the butter is melted, add the red bell pepper. Saute until the pepper softens about 6 to 8 minutes.

Whisk

Meanwhile, whisk the egg whites in a bowl until they are lightly frothy.

Stir

To the skillet, add the Italian seasoning, salt, and green onion. Stir to combine. Let cook 30 seconds.

Add the spinach to the skillet a little at a time, stirring until it wilts and cooks down. This will take 1 to 2 minutes.

Cook

Slowly pour the egg whites into the skillet and let cook undisturbed, until the edges begin to cook through and appear more solid white.

With a rubber spatula, gently lift up the edges of the egg whites and tilt the pan so any uncooked whites run underneath the cooked eggs and are now touching the bottom of the skillet. Move your spatula all the way around, lifting the edges and tiling as you go. Let cook 1 more minute.

Sprinkle

Sprinkle the cheese on top, then transfer the skillet to the oven. Broil for 2 to 3 minutes (don't walk away!) until the egg whites are puffed and have cooked through. Slide onto a plate or cutting board. Cut into wedges and serve hot, with hot sauce and avocado as desired.

A delicious frittata loaded with chunks of sweet potato, broccoli and a generous sprinkle of cheese! This is perfect for meal prep and is so easy to make. Gluten free, and you can omit the cheese for dairy free.

Preheat the oven to 160C (320F) and grease a large baking dish.

Arrange the sweet potato, broccoli and leafy greens evenly in the baking dish.

Whisk together the eggs and oregano and season with salt and pepper.

Pour the egg mixture over the vegetables in the baking dish. Sprinkle over the pumpkin seeds if you are using them.

Bake for approximately 40 minutes or until the centre of the frittata feels firm to touch and the top has started to turn a light golden brown. The frittata will puff up a bit while baking but will settle down again once cooled.

Once cooled, slice any leftovers into pieces and store in the fridge. This will keep for up to 5 days.
