healthy granola cookies

These low carb breakfast cookie make a nutritious grab and go breakfast. Packed with seeds and flavourful, they are great for meal prep and just 1.8g net carbs per cookie.

Keto Breakfast Cookies

coconut

sesame seeds

sunflower seeds

pumpkin seeds

ground flaxseed

almond butter (makes sure it's runny)

butter (melted)

granulated sweetener (or more, to taste)

egg (large)

cinnamon

tsp vanilla extract

tsp baking powder

Preheat the oven to 180C / 350F.

Grind all ingredients in a food processor until a sticky dough forms.

Line a baking tray with parchment paper. Roll the dough into 30g balls and press into cookies. Mine were 7 cm in diameter and 1 cm thick.

Press a fork on the tops to create a criss-cross pattern.

Bake for 10-12 minutes or until golden.

Let the cookies cool completely before touching / eating. They are very soft when fresh out of the oven, but firm up as they cool.

They came out perfectly delicious! I doubled the recipe and placed the dough on a cookie sheet. I pressed into a rectangle about 1 cm thick and then cut into 20 bars. My only adjustment was natural peanut butter in place of almond butter. I baked for 12 minutes until they were lightly golden.

We're heading out on a road trip this weekend and these treats will make a nice snack between stops. Thanks!

These cookies are easy and delicious.  I followed the recipe exactly, but I can imagine that they would be just as fantastic with different spices (cloves and cardamom?  Nutmeg and orange zest?) or nuts/seeds.I froze some to take on a girlfriends' weekend, I am thinking they will freeze and thaw beautifully.

I love this recipe! I didn't have sunflower seeds or almond butter so I used walnut and cashews and natural peanut butter. I also stirred a few sugar free dried cranberries into the dough before baking. Absolutely delicious.  What a versatile recipe... the only problem is I want to eat them all! Yum.
