healthy meatless sandwich

Make this vegan pulled pork and put it into a sandwich in 30 minutes! It uses jackfruit crisped in a pan for a simple, easy incredible flavor.

Best Vegan Pulled Pork Sandwich

½ cups chopped sweet or yellow onion

oil oil

jackfruit (, 14 ounce cans, rinsed and shredded (see note))

paprika (, can also use smoked paprika)

chili powder

garlic powder

sea salt (, see note)

barbecue sauce (,

Buns of choice (, gluten-free if needed)

Coleslaw

Vinegar slaw

Sweet potato fries

barbecue sauce

Sauté

Sauté onion and oil, or broth if oil free, until onion is soft. About 5minutes.

Crisp

Add the jackfruit, spices and salt and saute over medium high heat until browned and crisp on the edges. This takes between 10-15 minutes depending on your stove. You want it crisp to get the right texture. If you stop early it will be soft and mushy.

Add the barbecue sauce and mix until reduced a bit and sticky.

Serve

Remove from heat, and serve with slaw and fries for the ultimate result!
