Homemade Ramen with Bacon & Soft-Boiled Eggs

bacon, chopped

(1-inch) piece of fresh ginger, peeled and sliced

garlic cloves, sliced

lemongrass

Red pepper flakes,

chicken broth

white miso paste (or more to taste)

low-sodium soy sauce (or

balsamic vinegar

rice wine vinegar

sesame oil

ramen noodles (use fresh

spinach leaves

shallot, very thinly sliced

Soft-boiled eggs

scallions

Sriracha hot sauce (optional)

Place a pot over medium-high heat and add the bacon. Render until crispy. Remove the bacon and set aside (this will be used as a garnish).

To the drippings, add the ginger, garlic, and lemongrass and sauté for 1 minute. Add the red pepper flakes and stock and bring to a simmer, scraping up the brown bits on the bottom of the pan.

Simmer for 30 minutes and then strain out and discard the aromatics (garlic, ginger, and lemongrass). Stir in the miso paste, soy sauce, vinegars, and toasted sesame oil and keep warm until ready to serve.

Make the soft-boiled/poached eggs at this point but do not drain the water when finished. Instead, return the water to a simmer and cook the ramen noodles for 2-3 minutes or until tender. Drain, rinse, and set aside.

To serve, divide the baby spinach, shallot, and the cooked noodles between two bowls. Ladle the hot broth over the noodles and top each bowl with the crisped bacon, soft-boiled eggs, scallions, and hot sauce. Serve immediately.

Easy Homemade Bacon & Egg Ramen

Simple Spicy Miso Ramen w/ Roasted Chili Salmon (or tofu!) with bok choy, mushrooms and scallions. Vegan and Paleo adaptable! Swap out zucchini noodles or kelp noodles to keep it Paleo! Make in 30 minutes!

Spicy Miso Ramen with Chili Roasted Salmon and Bok Choy

soy sauce

sugar

garlic chili paste

miso paste

hondashi granules, more to taste

baby bok choy – sliced thin, legnthwise

scallions – white part

noodles

Garnishes: Scallions,

Preheat oven to broil or 400 F ( Broil is ideal if you have this)

Stir the soy sauce, honey, sesame oil and chili paste together in a small bowl. Brush the marinade over both sides of salmon and shitaakes and place on a parchment lined baking sheet.

Broil for 4-5  minutes or until salmon is cooked to your liking. Set aside.

Cook the noodles and make the broth. Bring the stock to a simmer in a medium pot. Add miso, hondashi and stir until combined. Add the bok choy and scallions, and wilt. Turn heat off or keep at a very low simmer. Taste, adjust heat, adding salt or chili paste if you like.

Divide the noodles among two bowls. Top with the salmon ( or tofu) and shitaakes. Arrange bok choy around the noodles and ladle the flavorful broth overtop.

Garnish with fresh scallions, soft boiled eggs, crispy shallots and chili threads.

Serve with chopsticks and a spoon. It&#8217;s ok to slurp. 😉

This was fantastic!  I substituted dried rice noodles I already had and added some kimchi to the broth. Other than that I followed the recipe exactly.

The salmon &amp; shiitake in this are amazing.  I sometimes alter the broth and serve with roasted veggies, but don't mess with the marinade!  Sometimes use portabellos instead of shiitake, too.  So, so good served with chili garlic sauce!

Almost Instant Red Curry Beef and Garlic Noodles

sesame or olive oil

butter

green onions, sliced

Thai red curry paste

shallot, chopped

beef

bell peppers, thinly sliced

broccoli florets

chili flakes

basil

egg rice noodles

tamari or soy sauce

honey

1. In a skillet, cook the oil and green onions over medium heat until very fragrant, 3-5 minutes. Lower the heat, stir in the butter, red curry paste, garlic, shallots, and chili flakes, cook 2 minutes.2. Add the beef and brown all over, 5 minutes. Pour over 2 tablespoons tamari and 1 teaspoon honey. Let the beef caramelize for 2 minutes. Mix in the egg and vegetables.3. Cook the noodles according to package directions, then drain and toss with the beef mix and 1/3 cup tamari. Cooker 2-3 minutes. Then remove from the heat. 4. Serve the noodles with additional green onions and basil. Top with peanuts.

Prepare ingredients

Rinse your Shirataki

Rinse your Shirataki under a warm water fully.

Roast shirataki

Roast the Shirataki noodles on medium heat in a pan or dutch oven.

Prepare your protein

Take a few pieces of fresh chicken and cook them in a pan as you would typically for other dishes.

Boil your veggies

Place all the veggies you plan to use into the boiling water and let it simmer for 1-2 minutes.

Rinse all under cold water

Once your veggies are softer, place them into a strainer and quickly run through with cold water. That will retain the color, and the veggies will stop cooking immediately.

Assemble

Ensure all ingredients (except avocado) are warm and your broth is boiling. Add the noodles into a ramen bowl first. Layer all other ingredients and add the chicken broth or soup stock as last.
