A healthier smash cake recipe, made without butter or refined sugars. This easy whole wheat banana cake is the perfect first birthday cake!

Healthier Smash Cake Recipe

butter and whole wheat flour

white whole wheat flour

baking powder

baking soda

cinnamon

salt

banana (about 3 ounces)

applesauce

milk (whole preferred)

maple syrup

vanilla extract

heavy whipping cream

blueberries

water

Preheat oven to 350 degrees F. Butter the cake pans and lightly dust with whole wheat flour, tapping out the excess. (I used two 4-inch pans. You can also make cupcakes - about 7.)

In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt. Set aside.

Place banana, applesauce, milk, and maple syrup in a blender and blend until smooth. Pour into a medium bowl or large liquid measuring cup. Whisk in the egg and vanilla.

Pour the wet ingredients into the bowl with the dry and mix with a rubber spatula or spoon until just combined. Be careful not to overmix; it's ok if there are a few bits of flour still visible in the batter.

Pour batter into the prepared cake pans. Pans should be just over half full with the batter. Bake for about 20-23 minutes, until a toothpick inserted into the center of the cake comes out clean. (Cupcakes will bake for about 14-16 minutes.)

Let cakes cool in the pans for 10 minutes. Then, gently run a knife around the edges and carefully transfer to wire racks to cool completely before frosting.

Make the Cake:

Using an electric mixer, beat the heavy whipping cream until it is the consistency of whipped cream. Frost cake as desired.

To frost a double layer cake, first add a spoonful of frosting to the top of the bottom layer. Place the second cake layer on top. Using an offset spatula, spread frosting over the top of the cake and then down the sides.

To Make White Whipped Cream Frosting:

Place frozen blueberries and water in a small saucepan. Heat over medium-low heat, stirring often, until blueberries soften and burst, about 8 minutes. Set aside to cool slightly.

Transfer blueberry mixture to a blender and blend until smooth, scraping down the sides of the blender as needed. Place in a bowl to cool completely.

Using an electric mixer, beat the heavy whipping cream until it is the consistency of whipped cream. Gently fold in the blueberry mixture. Frost cake as desired.

Preheat the oven to 350F and butter and flour a 6&#8243; springform pan*

In a large mixing bowl, sift together the flour, baking powder, baking soda and salt. Set aside.

Place the banana, strawberries and applesauce together in a blender and mix on high until completely pureed.

In another small bowl, whisk together 1 cup of the fruit puree, the milk, egg and vanilla extract. Add the wet ingredients to the dry ingredients and carefully stir with a large wooden spoon until just combined.

Pour the batter into the prepared pan, and bake for 25-30 minutes, or until a toothpick comes out clean.

Allow the cake to cool for 10 minutes in the pan before running a knife along the edge of the pan and removing to a wire rack to cool completely.

If wanting to create 2 layers, use a long piece of dental floss to cut the cake through the middle. Wrap the cooled cake in saran wrap until ready to place on a plate and frost.

Place a mixing bowl and beater in the fridge for at least 3-4 hours before you are about to prepare the whipped cream. Pour the whipped cream into the chilled bowl, and beat on high with an electric mixer until the cream is the consistency you prefer.

Frost the bottom layer of the cake first, then follow with the top layer. Keep refrigerated until ready to serve*

Good simple recipe. Healthy for my little one to enjoy. I made it twice. It is easy to throw together and surprisingly tasty for a cake with absolutely no sweetener! Obviously the riper the banana and strawberries the better ;)

Thanks for the easy recipe! My son's birthday is tomorrow I just made this - just wanted to come on and let you know that my consistency was really thick and gummy as well and I just added some applesauce and almond milk to make it a little bit less thick, seemed to work ok. Also my puree mix didn't quite make a full cup with the specified ingredients.  Haven't tasted the cakebut looks good and cooked well!

This was a fantastic cake! My baby is usually a difficult eater, but she spent a good 30 minutes tearing into this and actually consumed a good amount. I was happy to let her enjoy it without worrying about a sugar high. Thanks very much!

I made this as a test bake today and it’s fab! But want to do it for my boy’s 1st birthday and need to scale it up for a 6 inch pan and am in uk. Do you have measurements in grams at all or know what one cup is for you? I know they’re all different 😊

Thank you for this great healthy cake recipe! I made this on 5/23 for my daughter's 1st bday, it was really good! I'm a beginner baker, and took a few notes that I thought I'd share -
1) Fruit mixture only yielded 1/2c, perhaps size of the fruit I used, but after I blended this, I saw that the recipe called for an exact amount of 1C so I doubled the amount
2) I added maple syrup to the cake batter for a slightly more sweet taste
3) For the two layers, the floss worked well but I did have to use a knife to cut the cake at first, only about 1 to 2 inch cut
4) I buttered and floured the cake tin, and used parchment paper to be safe (beginner!), not sure if both methods are necessary
5) Whipped Cream frosting, I added maple syrup to taste, didn't use exact measurement, and some vanilla extract.
*The maple syrup I used was with agave so less sweet.

Just made a test cake with this recipe. While it turned out okay I find it to be very dense, almost bread like. I also found the salt taste to be prominent, mostly due to the lower sugar content. 
I think I’ll try adding an extra banana and slightly more apple sauce to help with the moisture. Otherwise it’s a simple option for a smash cake!

Preheat oven to 350°F and spray 3 (4-inch) mini springform pans with cooking spray. Set aside.

Add banana, eggs, vanilla, cinnamon, baking powder and salt into a high-powered blender or food processor. Process until mixture is smooth and well combined.

Add almond flour and pulse until mixture is just combined, scraping down the sides of the blender/processor if needed.

Divide batter evenly between the 3 springform pans and bake for 20 minutes or until the tops of the cakes are golden in color and an inserted toothpick comes out clean.

Remove cakes from the oven, let cool for 10-20 minutes before carefully removing from the pans.

Let layers cool completely before stacking and icing with frosting of choice. I've tested plain full-fat yogurt as well as coconut whipped topping. For toppings, I like the idea of naturally-colored sprinkles or fresh berries. Liv loves raspberries so that's probably what I'll put on her smash cake.

Baby's First Healthy Smash Cake

Wet ingredients:

overripe medium bananas, mashed

Preheat the oven to 350 degrees F. Line the bottom of three 4-inch round cake pans with parchment paper rounds. Spray parchment paper and the sides of the pan with nonstick cooking spray. YOU SHOULD USE PARCHMENT PAPER or the cake is likely to stick. Please do not forget!

In a large bowl, whisk together mashed bananas, eggs, peanut butter and vanilla extract until well combined.

Add dry ingredients to wet ingredients: almond flour, oat flour, baking soda and cinnamon together. Mix with a wooden spoon until well combined.

Divide batter evenly between pans and spread out with a spatula to smooth the tops. Bake for 15-20 minutes or until a tester comes out clean or with just a few crumbs attached. If you use 6-inch pans, it will likely take closer to 20 minutes for the cakes to bake. If you use any other pans, you need to watch carefully as changing pan sizes will change the baking times.

Allow cakes to cool completely before removing them from the pan; this is essential. Cakes can be made a day or two ahead and stored in the fridge if you’d like.

To frost the cake: make sure your cake layers are completely cooled, then I recommend doing a crumb coating so that the frosting lays nicely on the entire cake. To do so you&#39;ll simply frost the layers as you normally would, coat the outside of the cake with a very thin layer of frosting, and then place the cake in the fridge for 10-15 minutes before you finish frosting. This is so that the crumbs stick to this layer of frosting and not your main layer.

Made without any added sugar, this first birthday cake is super easy to make, healthy, and delicious!

Healthy First Birthday Smash Cake Without Sugar

(6 ounces) Whole milk Plain Greek Yogurt

(240 grams) mashed bananas, about 3 medium ((make sure to use very ripe ones))

eggs, beaten

raspberries or blueberries (optional)

coconut oil (optional, see note)

(200 grams) rolled oats

Preheat oven to 350° Fahrenheit. Grease or line cake pans with parchment paper.

Add oats to a food processor or blender and blend into a flour. You can also use oat flour if you have it. Combine with the rest of dry ingredients.

In a separate bowl, combine all the wet ingredients together.

Combine dry and wet ingredients and mix until everything&#39;s well incorporated.

Evenly distribute the batter into three 5 inch cake pans. Bake for 25-30 minutes, until inserted toothpick comes out clean.

Let the cakes cool slightly in the pan for about 5 minutes before transferring to a wire rack to cool completely.

In the meantime prepare the frosting of choice(see note).

Slice the rounded top off of each cake to create a flat surface. Add dollops of frosting to first layer of cake and spread evenly. Place the second layer on top and repeat. You can go a step further and frost the entire cake.

A healthy coconut and raspberry first birthday smash cake sweetened only with fruit.

Healthy First Birthday Cake

Medjool Dates, Pitted

(3- 4) Ripe Bananas

Eggs

milliliters (¼ cup) Coconut Oil, Melted ((plus extra for greasing tins))

(½ cup) Coconut Flour

tsp Cinnamon

½ tsp Baking Powder

(½ cup) Raspberries

(1 cup) Frozen Raspberries, defrosted

tbsp Chia Seeds

tbsp Warm Water

(14 ounces)Can Coconut Milk (, chilled in the refrigerator overnight)

Drops Vanilla Extract

Blend

Blend the dates in a food processor until broken down and clumped together to form a paste. Add the bananas and continue to blend until combined.

Preheat

Meanwhile, preheat the oven to 170C / 340F. Line and grease two 7-inch pans with some coconut oil.

Transfer the banana date mixture to a large mixing bowl together with the eggs and oil. Carefully mix until combined. In a separate bowl mix together the coconut flour, baking powder and cinnamon. Add to the wet ingredient and stir through. Wait for 10 mins to allow the coconut flour to expand.

Fold

Add the raspberries and gently stir through before pouring the mixture equally into the prepared cake pans.

Bake

Bake, in the centre of the oven, for approx. 45 mins or until the cakes are baked through. To test for doneness, insert a toothpick into the centre of the cake. If it comes out clean, it is done. Allow cakes to cool for 10 minutes before removing from the tin. Place on a wire rack and allow the cakes to completely cool before assembling and frosting.

Cake

Heat

Heat the berries and chia seeds in a small saucepan over medium-high heat. Stir until the berries are heated through and begin to break down and bubble. Taste the mixture, if you feel it is too tart then you can add a sweetener of choice (e.g. a touch of maple syrup.)

Cool

Remove from the heat and let cool, the jam will thicken as it cools. Transfer to a container and store in the refrigerator for at least one hour or until ready to assemble the cake.

Chia Jam

Scoop

Scoop out the thick coconut cream from the top of the coconut milk can. Add to a large mixing bowl, along with the vanilla.

Whip

Whisk until it resembles whipped cream. Store in the refrigerator until you are ready to assemble the cake.

Coconut Whipped Cream Frosting

Assemble

Place 1 cake layer on your cake stand or serving plate. Evenly cover the chia jam. Top with the 2nd layer and spread the coconut cream frosting over the top and sides. Decorate as you wish.
