This easy Taco Soup recipe is one of my favorite dinner solutions when I want something healthy, quick, and tasty.  I&#x27;ve also included instructions for making it in the crockpot or instant pot.

Taco Soup

beef

garlic garlic

chili powder

cumin

salt

oregano leaves

can crushed tomatoes (undrained)

can diced green chiles

kidney beans (rinsed and drained)

can black beans (, rinsed and drained)

corn (, drained)

low-sodium beef broth

tortilla chips

sour cream

shredded cheese

green onion (, chopped)

avocado (, chopped)

hot sauce

cilantro

Heat a Dutch oven or soup pot over medium heat. Brown the meat and drain any grease, if needed. Add remaining ingredients and stir to combine. Bring to a boil, then reduce heat and simmer for 20 minutes before serving. Garnish with desired toppings.

For the Slow Cooker Instructions: After browning the meat, place all the ingredients into a slow cooker and cook on low for about 4-6 hours.

20 Minute Taco Soup

14-oz block firm tofu (400 g,

Rotel tomatoes (425 g)

tomato (425 g)

corn (425 g)

15-oz can pinto or black beans (425 g)

kidney beans (425 g)

1-oz packet Hidden Valley Ranch Dressing mix (28 g)

1-oz packet taco seasoning (28 g)

Cook Protein: In a large saute pan, cook meat/tofu until browned, drain fat if necessary, and add taco seasoning, stirring to coat.

Mix Everything: Mix all cans (don't drain them) and Ranch seasoning in a large pot. Add in cooked, seasoned meat.&nbsp;Let sit on medium heat for about 5 minutes, stirring occasionally, until soup is hot.

Serve: Top with shredded cheese, sour cream/plain Greek yogurt, and crushed tortilla chips.

This healthy chicken taco soup gives you all the flavor of a taco in a quick and easy soup! Chicken breast, fresh veggies, and warming spices all come together to make a filling meal.

Chicken Taco Soup

avocado or coconut oil

yellow onion, diced

red bell pepper, diced

green bell pepper, diced

oz low-sodium chicken broth

sour cream yogurt,

lime wedges,

Heat a large pot over medium-high heat. Once hot, add in the avocado or coconut oil. Next, add the diced peppers, onion, and minced garlic to the pot. Saute for 3-4 minutes until the onions start to become translucent.

Add the chicken breast, canned tomatoes, black beans, canned green chilies, spices, lime juice, and chicken broth to the pot. Stir until well combined. Bring the soup to a rolling boil and then reduce the heat to a simmer. Allow the soup to simmer for 15-20 minutes or until the chicken is fully cooked.

Remove the chicken breast from the soup and transfer to a plate. Use two forks to shred the chicken.

Add the shredded chicken back to the soup along with the corn and stir until well combined. Let simmer for 2-3 minutes until the corn is heated through.

Serve the soup with all your favorite toppings and enjoy!

I made this with our Thanksgiving leftover turkey! So easy and SO delicious! Hubby told me I could make it every night and he would be happy 😆

Yum! This was so delicious. Lime juice and fresh cilantro really brought it home for me. I couldn't resist and topped with sour cream, fresh avocado and tortilla strips.

This is so easy and delicious! I have made it many times. Recently I substituted the can of diced green chili with can of chipotle peppers because it’s what I had in hand. It worked beautifully in this soup!

I made this in my Dutch oven and it was very good! Nice flavors. I will say it’s very spicy. Maybe I’ll just had one can green chili’s next time!

This is sooooo delicious and super easy too! I topped mine with avocado, cilantro, and sour cream. I’m on day two of leftovers, but I think I could eat this for days and days. Thanks for another amazing recipe!
