Here's How To Make Perfect Baked Sweet Potatoes

One of my most popular Thanksgiving recipes will be a hit on your holiday table for sure! This Roasted Turkey Breast is so juicy and flavorful with the perfect crispy skin. It is the best turkey recipe for small gatherings this holiday season.

50 Healthy Thanksgiving Recipes: Roasted Turkey Breast

Roughly 5 lbs turkey breast

tbsp salted butter (softened)

garlic

tbsp rosemary (dried)

tsp smoked paprika

salt

black pepper (to taste)

water

Preheat oven to 450 degrees F.

Prep turkey breast by rinsing and then patting dry. Place breast into a large baking tray with a rack.

If needed, use a paring knife or shears to trim away any fat from the turkey breast.

In a small bowl, combine softened butter, garlic, rosemary, smoked paprika, salt and pepper with a fork.

Rub the turkey breast with the seasoned butter using your hands or a brush. I recommend starting at the bottom (at the bone). Make sure to rub under the skin, if possible.

Place the turkey breast side up in the roasting pan making sure to add water to the bottom.

Bake uncovered for 20 minutes on the bottom oven rack.

Then, cover loosely with foil and bake for another 70-80 minutes or until the internal temperature in the deepest part of meat reaches 150 – 155 degrees F. Check with a meat thermometer.

Remove from the oven and let rest for 20 minutes.

Using a sharp knife, slice against the grain.

Serve warm with mashed potatoes and gravy.

Paleo Pumpkin Pie

almond flour

tsp baking soda

cinnamon

tsp salt

tbsp coconut sugar

coconut oil melted.

pumpkin puree

coconut sugar

eggs

coconut cream

Tbsp arrowroot starch (sub cornstarch)

tsp ginger

tsp nutmeg

clove

Heat oven to 350F. Prepare + grease an 8-inch pie dish* see note for larger pie dish.* 

For the crust, mix together almond flour, baking soda, cinnamon and salt in a large bowl.

In a small bowl, whisk egg, coconut sugar and coconut oil.

Add wet ingredients to dry and mix until completely combined and ball shape forms.

Start making the pie filling by adding all ingredients to a food processor. Alternatively whisk by hand or use a blender.

Bake for 45-55 minutes, if edges start to brown, cover them with foil.

Take out of oven once center has cooked &#8211; it will set more as it cools.

Let cool completely before serving (I do this in the fridge so it firms up).

Healthy Mashed Sweet Potatoes

Lbs Sweet potatoes, (cut into 1 inch thick slices)

tsp Cinnamon

tsp Ground ginger

tsp Ground nutmeg

tsp Ground Thyme

Tbsp Butter ((DF works too!))

Cup Unsweetened almond milk milk

Place the potatoes in a large pot with generously salted, COLD water (about 1 tsp of salt in the water) and cover at least an inch.

Bring to a boil. Once boiling, cover and reduce the temperature slightly to maintain a low boil. Cook until the potatoes can be pierced easily with a fork with almost no resistance, about 20-25 minutes. Drain well and place back into the pot. Use a paper towel to blot off excess water.

Mash the potatoes using a potato masher or potato ricer

Stir in the cinnamon, ginger, nutmeg and thyme.

Melt the butter with the milk in a small pan and then pour into the potatoes. Season to taste with the salt
