These Peach Toasts with Basil and Feta are the perfect easy appetizer for summer! Toasted bread, juicy peaches, fresh basil and feta are delicious together in one bite!

Peach Basil & Feta Toast

whole grain baguette (, sliced)

extra virgin olive oil

peaches (, diced)

feta

basil leaves

Slice baguette into 1/2 inch pieces on the diagonal.

Preheat oven to 350 degrees. Place baguette slices on a baking sheet in a single layer. Brush each side with olive oil. Bake 7- 10 minutes, until lightly toasted. Remove and let cool.

Top the toasts evenly with the diced peaches, feta and basil. Serve immediately.

Toast 2 pieces of artisan bread

Cut avocado in half, remove pit, and scoop out avocado on a plate. Use a fork, press avocado till smooth, and spread avocado on toast.

Slice heirloom tomatoes in half, place on top of avocado.

Drizzle lemon infused EVOO over top.

Sprinkle with sriracha salt (or pink Himalayan salt) and crushed hemp seeds.

Place some micro greens on top.

Heat oil in a pan on the stove over medium heat. Add egg and cook until white is firm but yolk is still runny, about 5 minutes.

Use a fork to mash the avocado onto toasted bread. Top with cooked egg, salt, and pepper.
