This vegan tortilla soup is easy to make in about 20 minutes with simple, everyday ingredients. It might just be the Best Vegan Tortilla Soup there is! Top it with avocado, lime, cilantro and tortilla strips for a comforting, healthy and absolutely delicious meal.

The Best Vegan Tortilla Soup

olive oil

white onion, diced

garlic,

jalapeño,

28 oz can diced tomatoes (fire-roasted is even better!)

vegetable stock

6-8” inch corn tortilla

tbsp chili powder

garlic powder

19 oz can black beans,

cilantro, finely chopped

juice from 1 lime

salt and pepper

Saute the onion, garlic and jalapeño in the olive oil for 5 minutes, stirring until soft and fragrant.

Add the diced tomato, vegetable stock, tortilla, chili powder and garlic powder. Stir well and simmer over medium heat for 10 minutes.

Stir in the black beans, cilantro and lime and simmer a few more minutes.

Using an immersion blender or by placing most of the soup in a blender, blend just enough to ensure the tortilla has been blended completely into the soup. You want to leave it a little chunky.

Serve topped with avocado, cilantro, fresh lime and crispy tortilla strips.

My kids were extremely impressed by this recipe, so I have to rate it! It deserves all 5 stars. In order to play into my laziness, I used a big can of crushed tomatoes instead and that allowed me to skip the partial blending step...it worked great! Also, I have to recommend an addition of corn. It plays into the flavor profile really well and adds some visual
Interest.

Another winner!!! So delicious, my 10 year old devoured it, and she claimed she hated tortilla soup from a bad experience with her dad. I will definitely make this again!!!

Flavorful &amp; easy.  Tried making for my wife &amp; daughter who eat little or no meat and I ate most of it myself!

This soup is fantastic!  My family loves it and   it's become our weekly Saturday meal.

Taste was good. 
That said, be careful with the spice. My chili powder is more powerful that average and I think my jalapenos may have been on the spicy side (even though I used less than called for). Otherwise, good. I didn't have corn tortillas so I just used some old corn chips and put them in early enough that they could soften before blending. I also added some corn.

I have made it twice and it is AMAZING! I Thought the second time I made it, that it would let me down cause I was so hyped and remembered how good it was the first time...but no...it’s even better. Thanks for the recipe!!

Vegan Taco Soup

onion

jalapenos

garlic (minced)

tomato paste

Tablespoon chili powder

cumin

paprika

oregano

salt

cayenne pepper

Veggie Broth

can diced tomatoes

red kidney beans

lime juice

cilantro

corn

almond flour tortillas

taco seasoning*

MAKE THE TORTILLA STRIPS:  Preheat oven to 375.  Cut tortillas in half. Stack on top of each other and then cut into 1/4&quot; strips. Spread on heavy baking sheet. Drizzle with oil, sprinkle with taco seasoning. Toss and bake for 15 minutes, until crisp and golden.

Heat a dutch oven or soup pot over medium heat.  Swirl in 1 Tablespoon veggie broth (or water or olive oil), then saute onions and jalapenos until soft, about 5 minutes.

Mix in spices and garlic, and cooke, stirring constantly for 30 seconds.

Stir in tomato paste, veggie broth, tomato paste, kidney beans, lime juice and cilantro.  Bring to a boil, then turn down to a simmer and cook, uncovered, for 10 minutes.

Use an immersion blender to partially puree, to thicken soup up.

Add the corn and continue to cook for 3 minutes, until heated through.

GARNISH: chopped avocado, fresh cilantro, tortilla strips, sliced jalapeno, nutritional yeast, sliced olives, cashew cream...whatever you love!

Healthy Chicken Tortilla Soup

onion, chopped (about 1 small)

celery, sliced (about 4 medium stalks)

garlic cloves,

medium tomatoes, chopped (or 2 cans diced tomatoes)

water

chicken broth

carrots (about 3 medium)

oregano leaves

chili powder

cayenne pepper, add less

sea salt +

pepper + more to taste

garnish: chopped avocado, chopped fresh cilantro, crumbled Cotija cheese, Greek yogurt, crumbled tortilla chips

Heat oil in large saucepan over medium-high heat. Add chopped onion and celery; cook, stirring frequently, for about 5 minutes and until veggies are soft. Add garlic; cook, stirring frequently, for about 1 minute. Add tomatoes; cook, stirring frequently, for about 5 minutes and until tomatoes are soft. Set aside.

Add onion/tomato mixture with 2 cups water (only if not using canned tomatoes) to high-speed blender or food processor and blend until smooth.

Transfer blended mixture back to saucepan and add broth, chicken, carrots and seasonings. Bring to a boil. Reduce heat to medium-low; cook, stirring occasionally, for about 10 to 30 minutes, or until carrots are tender.

Top each serving with preferred toppings; such as lime juice, avocado, cilantro, cheese, Greek yogurt and/or tortilla chips

Such a tasty meal! 

I made a few altercations so it wasn’t too spicy and had a bit more substance. 

1. Didn’t use a full tsp of cumin or chili powder
2. Added zucchini in the blended portion and some small pieces with the carrots
3. Added white beans 
4. Added lime juice - this is just what it needed. 

My husband was looking for a low-cal chicken tortilla soup, and I decided we should try this one.  We liked it a lot -thick and hearty - but I felt like it was missing something. My taste buds told me to try lime juice. Sure enough, that brightened the flavors beautifully.

Now in coming back to copy down the recipe, I see you suggested lime juice. It really tipped the scales from good to great. Bravo!

One thing I did differently was replace the cayenne with a chipotle pepper, which I pureed with the tomatoes. Just a fun suggestion for people who might prefer its flavor to cayenne.

I've been making this soup recipe for years and I decided it was time I leave a comment. My whole family loves it, even my picky kids. We make it exactly as written and it has the best flavor. I also love that it's lower in calories and fat!

I just made this last night. It was delicious. I think the blending of the tomatoes and aromatics are what give it an edge. I am adding it to my keep pile.
