Everyone will absolutely love these undetectably healthy allergen friendly brownies!</em></h2>

Paleo Sweet Potato Brownies {vegan option}

(about 14 ounces)

organic cacao powder

nut or coconut butter

flaxseed

coconut flour

maple syrup

tbsp coconut oil, melted

tbsp baking powder, can sub Paleo baking powder

tsp vanilla extract

cinnamon

tsp sea salt

Preheat oven to 375F and line an 8&#215;8 baking pan with parchment paper.

In a large food processor, puree mashed sweet potato.

Add in cacao powder, nut/coconut butter, coconut oil, flaxseed eggs, coconut/cassava flour, maple syrup, baking powder, cinnamon, vanilla extract, and sea salt. Blend until smooth.

Pour batter into baking pan and place in the oven.

Bake for 35-40 minutes, or until toothpick comes out clean.

WOW!!! These are my favorite brownies, hands down! I'm totally gonna make a brownie sundae with the sweet potato ice cream, because sweet potatoes = pure magic :)

Hi! I’m planning to bake these for my kids tonight. But due to the pandemic, can’t find the coconut butter or nut butter. What can I substitute it with? And can I use honey instead of maple syrup?

Healthy Vegan Brownies

banana, ripened

almond milk (or plant milk of choice)

vanilla

whole wheat pastry flour

cacao powder cocoa powder

baking soda (NOT BAKING POWDER)

salt

vegan chocolate chips (I like Enjoy Life mini chocolate chips)

Nuts: chopped walnuts, pecans,

To a large mixing bowl add the banana and mash until it&#8217;s fairly smooth. Some chunks are ok but you want a smooth consistency. Stir in the remaining wet ingredients and mix well.

Add the dry ingredients and mix until everything is well combined. The brownie batter might seem a little dry but it&#8217;s fine. Do not add more liquid!

Line an 8&#215;8 inch baking pan with parchment paper and spread the brownie mixture as evenly into the pan.

Bake for 10-12 minutes. To check and see if the brownies are done simply insert a toothpick into the center and if it comes out clean the brownies are finished baking. Remove the brownies from the oven and allow them to cool for at least 20 minutes.

Slice into 12 small pieces or 9 larger pieces.

Mmm, very good. Thank you for the healthy brownie recipe that didn't taste "healthy" :-).  My last banana was languishing in the fridge for a few days sweetening up. I saw your recipe and whipped it up adding chips and chopped walnuts. For salt I used Black Salt and it didn't hurt it a bit. Momma said make another batch as there is a Sweet Potato in the fridge too. Yum, thank you.

I usually love your recipes, Shane, so no offense, but this didn’t quite do it for me. It was really thin, about 1/2 inch thick brownies in my 8 x 8 pan. I would need 2 or 3 batches to get enough. They tasted good if you like chocolate banana brownies. I liked the flavor, but would probably try sweet potato &amp; see if it had a less pronounced added flavor to the chocolate.  I added chocolate chips &amp; walnuts, which was good. If I double or triple the recipe, I’d have to figure out the time, &amp; I wonder if the same temperature would work. Thanks for all your recipes!

Today I was finally able to make this recipe. FINALLY a healthy brownie that taste great!!! I will definitely be making it again for a special treat.

These brownies were delicious and well-received by the kids in the house. Tastes a little like a chocolately banana bread. So easy to make. Will be making again for sure!

These are wonderful! On a whim, I added a sprinkle of chocolate chips to the top as they came out of the oven, waited for them to soften, then spread them for a nice icing. I also added the walnuts and chips to the batter. While I could taste the hint of banana, it did not put me off at all. These went together so easily, they will definitely be a go to when that choco craving hits!

THESE BROWNIES ARE DANGEROUS!  We cannot stop eating them, as they are SO DELICIOUS.  I made a batch yesterday and my husband (who, generally, squiggles his nose and rolls his eyes when I announce it's a healthy "vegan" recipe) helped to devour the entire pan of yumminess yesterday.  So, I asked if he would like another batch of brownies made today and, if so, how I should change the recipe.  He said, "Don't change it at all.  They were perfect."  And they were!  I did add the 1/4 cup mini chocolate chips.  Today, we couldn't wait the 20 minutes for the brownies to cool before starting to treat ourselves, again.

Brownies are really good.  I was concerned that the batter was thin when I put it in the pan.  But after cooking for 10 they were perfect.  I will definitely make this again.

Shane - thank you!!  These are wonderful. I make them at least twice a month &amp; send you “hugs” every time!!  I grind oats in a blender and process the banana in my mini food processor to liquid. I add 1/2 cup plus chips &amp; 1/3 cup walnuts &amp; bake 9 minutes. When cooled cut into12 pieces &amp; wrap each in Saran Wrap &amp; store in fridge. They’re the perfect dessert size without being too much!!  Thanks again! Chris

This is my favorite brownie recipe! I have a new convection oven and this was the first recipe I baked in it (which was perfect).  Since I don't use the chocolate chips, I have to be especially careful not to overbake!

Fudgy Vegan Gluten-Free Low-Fat Brownies are made in the food processor with no bowl required! These are the most decadent, rich and fudgy brownies without the guilt!

Fudgy Vegan Low-Fat Brownies

+ 2 tablespoons (90 grams) unsweetened applesauce

baking powder

vanilla extract

tsp salt

flour

espresso powder

chocolate

scale.

Always use a scale

Preheat an oven to 350°F (177°C) and lightly spray an 8x8 metal square pan with nonstick spray. I found these to cook much better in a metal pan than a stoneware dish.

Add the beans, syrup, applesauce, baking powder, vanilla and salt to a food processor and blend for a minute. Scrape the top and sides and then add the cocoa powder and oat flour. Process for a minute or so. Scrape down the sides very well and process again for another 1-2 minutes. Walk away and let it run until completely smooth. It should be smooth and thick, like the consistency of a nut butter. Don't judge the result by the taste of the batter (if you try it) because it tastes slightly beany, but not at all once baked! Add the chocolate chips and give it a good stir around the bowl with a spoon to incorporate them, but don't blend them.

Spread the batter into the pan, making sure to scrape out ALL of the batter from the processor, including underneath the blade. I used a skinny rubber spatula to get it all out and spread the top of the batter flat and out to the corners of the pan. Dampen the spatula with water to help if necessary, as it will be thick and sticky. Sprinkle extra chocolate chips all over the top and make sure to gently press them into the batter, so they remain in tact while baking.

Bake for 25-30 minutes when they are slightly puffed up and the top is firm. I removed mine at 27 minutes. Do 25 minutes for a more fudgy brownie and closer to 30 for a more dry/firm brownie. I felt 27 mins was perfect. Fudgy, moist and firm. They will seem a bit undercooked at removal but will continue cooking and firm up as they cool, trust me. Let them cool at least 20 minutes before slicing them. If not avoiding fat intake, then serve with my Vanilla Cheesecake Ice Cream!

Once they are completely cooled, cover the pan tightly with foil and keep stored at room temperature or transfer to a sealed container. This will keep them moist for a couple of days.
