Herby carrot fritters

Flour

½ tsp Baking powder

tsp Cumin

½ tsp Ground coriander

½ tsp Turmeric

Chilli flakes

½ tsp Garam masala

Spring onions, chopped small

Tbsp Grated ginger

½ Lemons, zested

Tbsp Cold water

Salt and black pepper

Lemon

In a large bowl combine the flour, baking powder, cumin, coriander, turmeric, garam masala, chilli flakes, carrot, spring onion, ginger, zest, egg, water, salt and pepper. Let the mixture sit for 10 minutes.

Heat the oil in a frying pan. Place heaped tablespoons of the mixture into the pan, cooking for 3 or 4 minutes before flipping and cooking the other side for 2 minutes. Continue until all the mixture is finished. Keep warm in the oven if need be.

Combine yoghurt, coriander and lemon juice in a bowl. Serve fritters with a dollop of yoghurt sauce.

This one-pot meal, developed for our #cook90 initiative, is herby, sweet, and garlicky all at once. To add more green, throw in a handful of arugula and spinach at the end; for more garlic, pair it with garlic toast.

Shrimp with Herby White Beans and Tomatoes

white beans, rinsed, drained

shrimp, peeled, deveined (about 16 medium)

A classic, healthy breakfast recipe that's guaranteed to keep you full until lunchtime.

Herby cheese and tomato omelette

tomatoes, sliced

parsley,

olive oil

eggs

parmesan

spring onion, finely sliced

cooking spray oil

1 In a small bowl, toss the tomatoes with most of the parsley and the olive oil, then set aside.

2 Put the eggs, parmesan and spring onion in another small bowl and beat together with a fork. Season well with ground black pepper.

3 Spray a non-stick frying pan with a little oil and put over a medium heat. When hot, pour in the egg mixture and swirl so it coats the bottom of the pan. As the edges cook, pull them into the centre of the pan with a wooden spoon so the uncooked egg runs into the gaps. Repeat until all the egg is almost cooked and the bottom is golden, then gently flip over and cook for around 1 min on the other side.

4 When the omelette is cooked but still a little soft in the middle, slide it on to a plate. Spoon the tomatoes over one half of the omelette, then fold the other half over. Serve sprinkled with black pepper and the rest of the parsley.
